SMOKED SAUSAGE CASSEROLE
This was one of the first recipes I ever learned. It's easy and great for introducing kids or young adults to cooking. The best part is - it tastes great too! My family loves when I make this dish and the ease in which it's prepared is still appreciated all these years after it was first mastered.

JOLEAN'S CHEESE POTATO & SMOKED SAUSAGE CASSEROLE
This was another one of our favorites in the 70's Very inexpensive and very easy to make. Just recently found this recipe hand-written by my Mom, and the warm feelings flood back to me, because this was a true favorite in our house. Little did I know that she was on such a tight budget, yet made things like this that we all loved!! NOTE: The meat that was used in this recipe always varied, according to whatever we had available at the time.

Steps:
- Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
- Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
- Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.).
- Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
- Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
- NOTE: You can substitute: 1/2 lb. hot dogs, sliced into 1/2-inch slices OR 1/2 lb. ham diced into 1/2-inch dices OR 12 oz. can of Spam diced into 1/2-inch dices, instead of the smoked sausage.

GRILLED SAUSAGE AND PEPPER FOIL PACKETS

Steps:
- 1. Preheat a grill over medium-high heat. Lay two 18-inch-long sheets of heavy duty aluminum foil on a flat surface.
- 2. Cut a long slit in each sausage about two-thirds of the way through and flatten gently so it opens like a book. Divide the sausages between the 2 pieces of foil. Toss the peppers and onions with the oil, oregano, 1 teaspoon salt and 1/2 teaspoon pepper and put on top of the sausages.
- 3. Bringing the short sides of the foil together, fold the seams together twice and then tuck the ends in and up to seal. Put the foil packets on the grill and grill, 17 to 20 minutes. Open the foil, being careful of steam; the sausages will be charred and have grill marks on the bottom and the vegetables will be tender. If not, just throw the packets back on the grill, unsealed, for a few more minutes until done.
- 4. Divide among 4 plates and serve with crusty bread or garlic bread.
GRILLED SAUSAGE AND PEPPERS SANDWICHES
A grill basket makes easy work of preparing these satisfying sausage sandwiches. A little sweetness from balsamic vinegar and a dose of heat from the serrano pepper take the flavors to the next level. We brush the buns with herbed oil before stuffing them to the brim and digging in.

Steps:
- Prepare a grill for medium-high heat.
- Mix the balsamic vinegar, garlic, 1/2 teaspoon Italian seasoning, 1/2 teaspoon salt and a few grinds of black pepper in a large bowl. Whisking constantly, slowly drizzle in 2 tablespoons olive oil until emulsified. Add the red pepper, green pepper, serrano pepper, onion, 1/2 teaspoon salt and a few grinds of black pepper and toss until well combined.
- Place the basket on a baking sheet and transfer the peppers and onions to the center, letting any extra marinade drip off. Place 3 links of sausage on either side of the veggies. Close and secure the basket.
- Place the grill basket on the grill and cook, flipping once, until the vegetables and sausages start to brown and caramelize and an instant read thermometer inserted into a sausage measures 160 degrees F, 10 to 12 minutes.
- Meanwhile, mix the remaining 3 tablespoons oil, remaining 1 teaspoon Italian seasoning, 1/4 teaspoon salt and a few grinds of black pepper in a small bowl. Open the hoagie rolls and brush the insides with the herb oil. Grill until toasted, about 1 minute.
- Remove to a platter and place 2 overlapping slices provolone on each roll (do not allow cheese to hang over the sides). Return the rolls to the grill, cover, and cook until the cheese is melted, about 1 minute. Remove to a platter.
- Remove the peppers and onions from the basket and slice thinly. Cut each link of sausage in half on a deep bias and place in a hoagie roll. Divide the peppers and onions among the rolls and spoon 2 tablespoons warm marinara on top. Serve the hoagies with the remaining marinara on the side for dipping.
GRILLED SAUSAGE CASSEROLE
This is so easy to throw together and put on the grill or in the oven and forget about it. We use the grill as much as possible during the summer so the house doesn't get any hotter than necessary - This is the latest of many last minute, have to make dinner and didn't plan ahead - AGAIN, meals. I serve this with rice or pasta.

Steps:
- This is soooo simple.
- Start the grill!
- While you are warming your coals or starting your gas grill, lightly coat the bottom of a metal 9x13 cake pan with shortening or pam to keep the potatoes from sticking.
- Scrub potatoes (or peel if you don't like the skin on your potatoes), clean zucchini, egg plant.
- Cut potatoes into bite size pieces and toss into bottom of pan.
- Cut the zucchini and eggplant just larger than bite size pieces and toss onto potatoes, next, cut the smoked sausage and brats into bite size pieces toss onto veggies-- (see, isn't this easy?).
- Sprinkle salt and pepper, parsley, and garlic powder on top of the pile, it will probably be stacked over the top of of the pan, don't worry-- Cover the pan with aluminum foil, poke a couple of holes in the top for ventilation.
- Toss on the grill for 20-30 minutes, until the potatoes are done.
- I usually make rice or pasta with it.

- Bisquick Breakfast Casserole. The trick to making a good breakfast casserole is to ensure it contains everything you need to start your day off right – protein, carbs, veggies, and dairy.
- Italian Sausage and Rice Casserole. This one-pot stovetop casserole is an excellent option if you’re in the mood for something with lots of veggies and plenty of flavor.
- Sausage and Potato Casserole. Sausage and potato casserole takes a bit of time to make, primarily because you have to bake it so long to get the potatoes tender.
- Italian Sausage and Pepper Bake. Here’s another veggie-heavy sausage casserole that the whole family will love. Thanks to the garlic, oregano, tomatoes with basil, and red pepper flakes, it has a distinctly Italian flair.
- Dublin Coddle. Tender, garlicky potatoes, thick, juicy sausages, salty bacon, and a cup of stout beer: It’s hard to find anything not to like about the Dublin coddle.
- Lasagna. I have a few different lasagna recipes that I use in rotation. This one is my go-to when I want something extra cheesy and easy to make. You’ll only need seven ingredients (and three of them are cheeses).
- Italian Sausage Breakfast Casserole. If you’re looking for another option for breakfast, you shouldn’t overlook this Italian sausage breakfast casserole.
- Italian Sausage Pasta Bake. The Italian sausage pasta bake is one of the best options if you’re looking for something that smells as good as it tastes.
- Hash Brown Sausage Casserole. Hash brown casserole has always been a breakfast (and sometimes a dinnertime) favorite in my house. Most of the time, though, it’s even better with a pound of sausage and extra veggies.
- Tater Tot Sausage Breakfast Casserole. If you’re looking for a hash brown casserole with fewer veggies and more cheese, use this recipe instead. It cuts out the bell peppers and onions and adds a half-cup of mozzarella to the cheddar.
