HAWAIIAN PORK
This is a richly flavored version of sweet and sour pork. From the Sunset Stir Fry Cookbook. Great served with steamed rice.

Steps:
- Sweet-Sour Sauce: Stir together cider vinegar brown sugar, catsup; 1/4 cup cornstarch, unsweetened pineapple juice; and soy sauce. Set aside.
- Dip pork cubes in beaten egg, drain briefly, and roll in cornstarch to coat lightly; shake off excess.
- Place a wok or frying pan over high heat; when wok is hot,add 2 tablespoons of the oil. When oil is hot, add half the pork; stir-fry until evenly browned (5 to 7 minutes). Lift pork from wok and set aside. Repeat to brown remaining meat, adding more oil as needed.
- Add remaining oil (about 2 tablespoons) to wok. Add bell peppers and onion; stir-fry until vegetables are tender crisp to bite (about 2 minutes). Add pea pods; then stir sauce and add. Stir until sauce boils and thickens; return pork to wok and stir until heated through.

- Sprinkle pork chops with salt and pepper. Heat 2 teaspoons oil in a large nonstick skillet over medium heat. Cook pork chops until lightly browned, 3-4 minutes on each side. - Combine stem lettuce and pinch of salt in another bowl.
- Combine water and cornstarch in a small bowl; stir into a smooth paste.
- Transfer half of the cornstarch paste into a larger bowl. Add pork, rice wine, and 1/4 teaspoon salt. Mix well and let marinate, about 5 minutes.
- Whisk remaining cornstarch paste, chicken stock, soy sauce, black vinegar, and sugar in another bowl to make sauce.
- Heat oil in a wok or large skillet over high heat. Add pork with marinade; cook and stir until browned, 3 to 4 minutes. - Mix the sliced pork, 1 tablespoon hoisin sauce, and 1 tablespoon cornstarch together in a bowl. Set aside. Combine the remaining 2 tablespoons hoisin sauce, chicken broth, and 1 tablespoon cornstarch with rice vinegar, sugar, and cayenne pepper in small bowl. Set aside.
- Heat the sesame oil in a skillet over medium-high heat. Stir in the pork; cook and stir until the pork begins to brown, about 5 minutes. Add the garlic and ginger; cook and stir until fragrant. - PREPARE SWEET AND SOUR SAUCE- SET ASIDE.
- Dip pork cubes in beaten egg, drain briefly, and roll in cornstarch to coat lightly.

- Place a wok over high heat.
- When wok is hot, add 2 tablespoons of the oil.
- When oil is hot, add half the pork.
- Stir fry until evenly browned about 5 to 7 minutes.

- Serve with hot cooked rice.
- Pass soy sauce if desired.
HAWAIIAN KAILUA PORK
Ohhhh... you have not lived until you've had Kailua Pork with Rice. Succulent, smoky flavor. Heavenly! This was given to me by my friend Andrea when she made it a year or so ago for a group of us and I begged her for the recipe. She grew up in Hawaii with her sisters and this is one recipe that they brought with them. Every ingredient is essential, don't skip them. I'm guessing at the servings but 5 lbs is a lot of meat.

- Preheat oven to 350 degrees.
- Line a 9 x 13 pan with one layer heavy duty aluminum foil or two sheets regular foil.
- Place half the spinach on the bottom where the roast will sit.
- Rub the roast with the salt (sea salt is the best flavor for your pork).
- Place on spinach bed then pour the whole bottle of liquid smoke over it.
- Layer the rest of the spinach on the top and roll the foil up around the pork to cover it entirely like a package.
- (the spinach should be surrounding it and the foil should make it so none of the juices spill out.) Bake in the oven for 5 hours.
- When done it will fall apart and it is shredded easily with a couple of forks.
- Excellent with sticky rice.

- Mix water, pineapple juice, brown sugar, tamari, garlic, ginger paste, and onion powder together in a resealable zip-top bag. Reserve 1/2 cup marinade, add tapioca flour to reserved marinade and set aside. Cut beef into 1-inch pieces; add to the marinade in the bag, seal the bag, and refrigerate for 45 minutes.
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil; add red pepper flakes and sirloin pieces, discarding marinade. Saute until browned, 5 to 7 minutes.
- Place bell peppers, onion, and carrots in a steamer bucket. Place bucket on top of meat. Hit Cancel.
- Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 3 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Carefully remove vegetable bucket. Set aside.
- Switch to Saute function and add noodles. Pour in the reserved marinade with tapioca; stir until sauce is thickened. Add in vegetables. Toss to combine. Serve immediately in bowls; top with everything bagel seasoning and garnish with green onion.
