- Heat the olive oil in a large stockpot over medium-high heat; cook the sausage, onions, bell pepper, and garlic in the hot oil until the onion is tender, 5 to 7 minutes. Add the water, cabbage, carrots, diced tomatoes, tomato paste, beef bouillon cubes, seasoned salt, thyme, and cayenne pepper to the stockpot and bring to a boil. Reduce heat to medium-low, place a cover on the stockpot, and cook the soup at a simmer for 45 minutes. Stir the zucchini and beans into the soup; cook another 10 minutes.
- Bring a large pot with lightly salted water to a rolling boil. Cook the egg noodles in boiling water until cooked yet firm to the bite, about 5 minutes. Drain and stir into the soup. Ladle the soup into bowls, and top with Parmesan cheese to serve.

- Slice the sausages into half-inch rounds. (Sausage can be cut more easily if partially frozen.) In a large saute pan over medium-high heat, brown the sausage well. Remove with a slotted spoon, and drain by shaking the pieces in a large brown paper bag.
- In a large soup kettle (six quarts or larger), combine sausage, consomme, carrots, onion, beets with juice, tomatoes with juice, tomato paste, cabbage, garlic and cider vinegar. Break up tomatoes with a knife or spoon. Add water to just cover. Bring to a boil, reduce heat to low and simmer for two hours.
- Add the kidney beans to the soup pot, and simmer for an additional hour. Serve garnished with a spoonful of sour cream and a sprinkling of parsley.

- In a stockpot or Dutch oven, brown sausage with garlic. Stir in broth, tomatoes and carrots, and season with salt and pepper. Reduce heat, cover, and simmer 15 minutes.

- Heat the olive oil over medium heat in a large pot. Add the sausage and brown it using a spatula to break it up into bite-sized pieces. Once the sausage is browned add the onions, garlic, sage, oregano, and salt and stir. Let it all cook for about five minutes or so. Pour the wine into the pot and, using a spatula, scrape up the browned bits off the bottom of the pot. Simmer the wine until it mostly evaporates, stirring frequently.
- Add the carrots, chopped spinach, tomato sauce and chicken stock and stir it all together. Raised the heat and bring the pot to a strong simmer. Simmer the soup for 30 minutes or until the carrots are fork tender. Skim the fat from the surface of the soup and discard. Stir in the apple cider vinegar.

- Begin by gathering and prepping all of your ingredients according to the ingredients list above to have organized and ready for use.
- To prepare the soup, place a large soup pot over medium-high heat, and once hot, add in the slices of beef smoked sausage (you won't need added oil, as the sausage will release its own fat). Sear the slices for a few minutes until fairly browned, flipping them as needed.
- Next, add the diced onion to the pot, along with the Italian seasoning, a couple of good pinches of black pepper and the white pepper, and saute with the sausage until softened and golden; then, stir in the garlic and saute just until fragrant.
