- Place parsley, rosemary, thyme, garlic, lemon, salt, and pepper in a food processor. Blend until finely chopped. With machine running, add olive oil.
- Loosen skin from the hens. Put 1 tablespoon of herb mixture under skin of each hen, smoothing to cover breasts. Place the birds on a large rimmed baking sheet, cover with plastic wrap, and refrigerate overnight.
- Remove hens from refrigerator and bring to room temperature (about 1 hour). Preheat oven to 400 degrees.
- Place hens on a clean rimmed baking sheet (it's okay if they touch). Brush butter over surface of hens and sprinkle generously with salt and pepper. Roast in oven, rotating pan once until golden brown and cooked through (meat thermometer should read 165 degrees when placed in the thigh), about 50 minutes.
- Remove from oven and let stand at least 15 minutes before placing on individual plates. No carving necessary!

- Preheat the oven to 375 degrees F. Line a baking sheet with foil and put a baking rack on top.
- Mix together the grill seasoning, dressing, and chopped herbs in a small bowl. Reserve 2 tablespoons. Generously rub the hens inside and out with the herb and dressing mixture. Stuff each hen with a sprig of each herb and a piece of lemon.
- In a large bowl, combine the carrots, onions and potatoes with the reserved 2 tablespoons of dressing mixture, a generous pinch of salt and pepper. Put the vegetables in a large roasting pan and arrange the hens on top. Roast them until the juices run clear and an instant-read thermometer registers 180 degrees F when inserted into the thickest part of the thigh, about 50 to 55 minutes. Remove the pan from the oven, cover with foil and let the hens rest for 5 minutes before serving. Transfer the hens to a large serving tray with the roasted vegetables.
ROASTED CITRUS-HERB GAME HEN

- Place an oven rack in the lower 1/3 of the oven. Preheat the oven to 450 degrees F.
- Rinse the game hens and pat dry with paper towels. In a small bowl, mix together the olive oil, shallots, orange zest, lemon zest, thyme, mint, 1 teaspoon salt and 1 teaspoon pepper. Rub 2 tablespoons of the zest mixture over the skins of the game hens. Place the remainder of the zest mixture under the skin and into the cavities of the hens. Using kitchen twine, truss the legs together. Place the hens in a shallow 9 by 13-inch baking dish. Add the chicken stock, Marsala wine, lemon juice, orange juice, and cranberries. Roast for 30 to 35 minutes, or until the leg juices run clear. Remove the game hens and set aside. Place the flour in a small saucepan. Whisk in the pan juices. Bring the juices to a boil over medium heat. Reduce the heat and simmer for 8 to 10 minutes until slightly thickened. Whisk in the butter and season, to taste, with salt and pepper.
- To serve, remove the kitchen twine and place the hens on 2 serving plates. Drizzle with the citrus-herb sauce.
ROASTED ORANGE-HERB GAME HEN

- Preheat oven to 450°F. Mix first 3 ingredients in small bowl. Slide fingertips under skin of hen halves to loosen. Spread 1/4 of herb mixture under skin of each hen half. Rub skin with butter; sprinkle with salt and pepper. Place hen halves in shallow roasting pan.
- Roast hen halves until golden and cooked through, adding broth after 10 minutes and basting twice throughout cooking time, about 30 minutes.

- Preheat oven to 375°F.
- Rinse hen with cold water & pat dry. Season with salt & pepper inside & out.
- Stuff cavity with garlic, rosemary, thyme, & ½ bay leaf. Place some of the shallots, carrots, & celery in cavity.
- Scatter rest of veggies on bottom of roasting pan. Place hen on top of veggies.
- Squeeze juice from ½ lemon over hen and add a pice (about ¼ of a lemon) to the cavity. Roast in oven 45 minutes until hens are golden brown & crisp. Juices should run clear when thigh is pierced with a sharp knife.
- Transfer to serving platter and let sit for 5 minutes. Remove skin & cut in half.

- Preheat the oven to 400°. In a small bowl, combine the chopped thyme, chopped rosemary and parsley. Stir in 1 tablespoon of the olive oil and season with salt and pepper.
- Using your fingers, gently loosen the skin over the breasts and thighs of the game hens. Stuff 1 heaping tablespoon of the herb mixture under the skin of each bird, pushing the skin around to help distribute the herbs evenly. Season the cavities with salt, then stuff each with 2 thyme sprigs, 1 rosemary sprig half, 1 onion quarter and 2 smashed garlic cloves. Tie the legs of the hens together with kitchen string. Season the outside of the hens with salt and pepper.
- In a very large ovenproof skillet, cook the butter over high heat until browned, 2 minutes. Swirl in the remaining 2 tablespoons of olive oil. Add the hens to the skillet, breast down, and cook until golden brown, 5 minutes. Turn the birds and continue to cook until golden brown all over, 15 minutes longer.
- Transfer the hens to the oven and roast, breast up, for 1 hour, or until the juices run clear when a thigh is pierced. Remove the strings. Let the hens rest for 5 minutes. Transfer to a platter and serve.
