  • Preheat oven to 425 degrees F (220 degrees C).
  • Pour the hash browns into a lightly greased 9x13 inch baking dish. In a large bowl, combine the cheese, sour cream and soup.
  • In a large skillet over medium heat, combine the onion with 1 stick butter and saute for 5 minutes. Add this to the soup mixture and spread this over the potatoes in the dish.
  • Next, arrange the crushed corn flakes over all in the dish. Melt the remaining stick of butter and pour this evenly over the corn flakes.
  • Bake at 425 degrees F (220 degrees C) for 1 hour.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 1/2 quart casserole dish.
  • Place whole potatoes in their skins into a large pot of boiling water; cook for 25 to 30 minutes. Remove potatoes, and discard water. When cool enough to handle, peel potatoes, and grate into a medium bowl.
  • Melt 1/4 cup butter in a large skillet over medium heat. Stir in soup; cook until soup begins to bubble. Remove from stove, and mix in sour cream, green onion, and cheese. Stir in potatoes. Pour mixture into casserole dish.
  • In a resealable bag, shake together the cornflake crumbs and 2 tablespoons melted butter. Sprinkle over top of casserole.
  • Bake in a preheated oven 45 minutes.

Steps:

  • Place the potatoes in a large saucepan with water to cover by 1 inch. Add a generous pinch of salt and cook for 15 minutes, or until tender. Potatoes cook quickly. Test often for tenderness and don't overcook them. Alternatively, cook the potatoes in a pressure cooker for 5 minutes, releasing the pressure immediately to prevent overcooking. Drain the potatoes and arrange them in a 6- by 9- by 2-inch casserole dish.
  • In a large skillet, add a little oil to coat the pan. Combine the beef and onion and cook together over medium heat until the beef is browned and the onion softened, about 10 minutes. Drain excess fat.
  • Preheat the oven to 350 degrees F.
  • Melt the butter in a medium saucepan and whisk in the flour to make a roux. Cook over medium heat, whisking constantly, until the mixture bubbles and the flour turns light brown in color. Gradually whisk in the milk and continue to stir while cooking over medium heat. When the mixture thickens, season with salt and pepper, then stir in the cheese and browned beef and onions.
  • Pour the ground beef mixture over the potatoes and bake the casserole for 20 minutes, until heated through and bubbling. Sprinkle the breadcrumbs on top of the casserole and bake until the crumbs are toasted, about 5 minutes longer.

  • Preheat the oven to 400 degrees F. Grease a 2-quart baking dish with cooking spray.
  • Peel the potatoes and cut them into 1-inch cubes. Place the potatoes and salt in a pressure cooker with water to cover and bring to a boil. Reduce the heat and simmer the potatoes until very tender, about 5 minutes.   • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a medium baking dish.

When I posted my 1st recipe, Blue Mill Tavern Loosemeat Sandwiches, last March, I never expected the response it got (36 reviews!). It's extremely gratifying to know by just sharing a recipe I've been able to give joy to others. Thanks to all of you who have written me and those who've posted a review. It's heartening to know so many of you are trying new things. I've been cooking all my life-I live to cook and cook to live. I feel like I've found some kindred spirits here. Here's another family favorite via my SIL in northern Minnesota. It's been enjoyed by dozens of hungry eaters at my table. If you're looking for low-fat, low-carb, keep on looking cuz this isn't it. This is sinfully delicious, to be savored, not regretted. Consider yourselves forewarned:-) It goes especially well with BBQ ribs, baked ham, dutch oven chicken and is terrific with fresh fried walleyed pike but you try it with whatever you like.
