HONEY LIME CHICKEN
Everyone in the family enjoys the delightful flavors of this tart, sweet chicken. I usually round out the meal and rice, salad and dessert.

- Sprinkle chicken with garlic salt. In a large skillet, brown chicken in oil over medium-high heat. Drain pineapple, reserving juice. Add 1/4 cup juice to skillet; reserve remaining juice. Cover and simmer for 6-8 minutes or until chicken juices run clear. Remove to a serving platter; keep warm. In a small bowl, combine honey, lime juice, soy sauce, cornstarch and reserved pineapple juice; pour into skillet. Bring to a boil over medium heat, stirring for 1-2 minutes. Add pineapple; heat through. Pour over chicken; sprinkle with lime peel. Serve immediately.

HONEY-LIME ROAST CHICKEN

- Strip the thyme leaves from the stems; combine the leaves and stems with the lime juice, garlic, jalapenos, olive oil, honey and 1 teaspoon salt in a large bowl. Add the chicken and turn to coat. Cover and marinate 30 minutes to 1 hour at room temperature.
- Position a rack in the upper third of the oven; preheat to 425 degrees F. Put the chicken, skin-side up, on a foil-lined rimmed baking sheet and tuck the wing tips underneath. Pour the marinade on top, season with salt and dot with the butter.
- Roast the chicken, basting with the pan juices halfway through, until the skin is amber and a thermometer inserted into the thigh registers 160 degrees F, about 45 minutes. Transfer to a platter and top with the pan juices.

- Drain pineapple, reserve 2 tablespoons juice. Rub chicken with garlic, sprinkle with salt. Broil or gill chicken until cooked. Combine reserved pineapple juice, honey, lime juice, soy sauce and cornstarch in saucepan. Cook, stirring, until thickened. Add pineapple to sauce. Cook until heated.
- To Serve Immediately:.
- Spoon sauce and pineapple over chicken, sprinkle with lime peel. Serve with rice.
- To Freeze: Place Chicken and all sauce in a gallon zippy, label and freeze.
- To Serve: Thaw. Cook up rice about 4 servings. Place rice in a baking dish. Pour chicken and sauce over rice. Arrange Pineapple to look pretty. Bake covered for about 30 min until all warm.

- Combine flour and cayenne pepper in a large resealable plastic bag. Add a few chicken strips at a time and shake to coat.
- Melt butter in a large, nonstick skillet over medium heat. Add chicken and cook until browned on all sides, 4 to 6 minutes.
- Combine lime juice, honey, brown sugar, and Worcestershire sauce in a bowl; pour over the chicken. Continue to cook until juices run clear and the sauce is thickened, 3 to 5 more minutes.

- Heat oven to 400ºF.
- Mix dressing and honey until blended. Pour half over chicken in shallow dish. Refrigerate 15 min.
- Place chicken in single layer on foil-lined rimmed baking pan. Bake 30 to 35 min. or until done (165°F), turning and brushing with remaining dressing mixture every 10 min.
- Meanwhile, cook bacon in medium skillet until crisp. Remove bacon from skillet with slotted spoon, reserving 1 Tbsp. drippings in skillet. Drain bacon on paper towels. Add rice and peppers to reserved drippings in skillet; cook and stir on medium heat 3 min. Add water; bring to boil. Cover; simmer 20 min., stirring in peas to the rice mixture for the last 5 min. Stir in bacon and onions. Serve chicken over rice mixture.
