GLAZED HONEY & MUSTARD SAUSAGES
Easy buffet fare; glazed honey & mustard sausages

- Preheat the oven to 200C/Gas 6/fan oven 180C. Pour the oil into a large roasting tin and heat in the oven for 3-4 minutes. Tip the sausages into the roasting tin and toss to lightly coat in the oil. Roast for 20-25 minutes or until browned and cooked through.
- Drain the sausages well on kitchen paper, then tip them into a clean roasting tin. Blend the honey and mustard together in a small bowl, pour over the sausages and stir and shake them so they become coated. Return to the oven for 5 minutes, turning them over halfway. Serve hot or warm, with cocktail sticks and little pots of ketchup and mustard for dipping.
- Prepare ahead: you can roast the sausages the day before, cool them on kitchen paper and then just keep them in a plastic container in the fridge overnight. Toss in the honey and mustard mix and reheat for 10-12 minutes in the oven before serving.
- Stagger the cooking: heat half the sausages through in half the honey and mustard mix just before your guests arrive, then do the other half just as this first batch runs out.

- KIDS the writing in bold is for you. GROWN-UPS the rest is for you. Cut the sausages with scissors. Heat oven to 220C/200C fan/gas 6. If the sausages are linked, get your child to use a pair of scissors to cut them into single sausages.
- Count the sausages. Place 2 sausages in each hole of a 12-hole muffin tin and go through all the maths this involves - two times table, counting up in twos etc. Drizzle each set of sausages with a little oil. Children from about seven upwards can now place the tin in the oven for 20 mins until the sausages have browned, getting a grown-up to turn the sausages halfway through.
- Crack some eggs. Over a small bowl, get the child to hold the egg in one hand, then tap it with a cutlery knife until it just cracks. Then get them to put down the knife and open the egg into the small bowl. You can now check for any bits of shell before tipping it into a larger bowl. Repeat with all the eggs - this should keep them busy.
- Make a batter. Get the child to measure 150ml flour in a measuring jug and tip into a bowl with the mustard powder. Make a well in the centre and beat in the eggs. Measure the milk.
- Pour in the milk. Gradually pour the milk into the batter - get the child to whisk well between each addition - until you have a mix that is the consistency of double cream. Season. Pour the batter back into the jug.
- Sizzle the batter. Remove the sausages from the oven and place on a heatproof surface. Very carefully, and making sure that they don't touch the hot tin, get the child to pour the batter over the sausages and throw a sprig of rosemary into each hole. Only get children aged seven upwards to do this. A grown-up needs to place them back in the oven.
- Cook in the oven. Leave the batter to cook for 15 mins undisturbed. But if your oven has a clear glass door, let the kids watch the batter rise. Remove the tin from the oven. Leave to cool for a few mins, then serve with gravy, mash and vegetables.

- To make the batter, beat the milk and eggs in a mixing bowl, then whisk in the flour with a good pinch of salt. Set aside (see Make Ahead).
- Heat the oven to 230°C/fan210°C/gas 8. Heat 2 tbsp of the sunflower oil in a large frying pan over a medium-low heat. Fry the sausages gently for 10 minutes, turning occasionally. Add the mustards and the honey for the final 2 minutes and cook, stirring, until the sausages are golden and sticky.
- Meanwhile, spoon 1 tbsp each of the remaining sunflower oil into 6 x 18cm pie tins. Put on a big baking sheet, then transfer to the oven to heat. When the oil smokes, remove the tray from the oven and put it on the hob over a medium-high heat to keep the oil hot. Pour the batter into the tins to halfway – it may sizzle and spit, so be careful. Divide the sausages among the tins, then bake on the sheet for 20 minutes until the toads are puffed and golden. Serve with cheesy mash.
