- Preheat oven to 400°. Core pears from bottom, leaving stems intact. Place in a greased 11x7-in. baking dish. Sprinkle with cardamom, sugar, cinnamon and cloves. In a small saucepan, combine water and honey; bring to a boil for 3 minutes. Pour over pears., Bake, uncovered, until tender, 45-55 minutes, basting every 15 minutes. Serve warm with whipped cream.

ROASTED PEAR SALAD
Oven-roasted pears take the ho-hum out of this green salad created by our Test Kitchen staff. They tossed together a good-for-you medley of mellow pear slices, crispy greens, nuts and dried cranberries. The creamy dressing carries yet more pear flavor sweetened with just a touch of honey.

- In a small bowl, toss pears with 1 teaspoon oil. Place in a 15x10x1-in. baking pan coated with cooking spray. Bake at 400° for 10 minutes. Turn pears over; bake 5-7 minutes longer or until golden and tender., When cool enough to handle, peel pears. Thinly slice two pear halves lengthwise and set aside. Place remaining pear halves in a blender. Add the vinegar, water, honey, salt and white pepper; cover and process until smooth. While processing, gradually add the remaining oil in a steady stream., In a large bowl, toss the salad greens, watercress, hazelnuts and cranberries. Arrange reserved pear slices on top; drizzle with dressing.

HONEY ROASTED PEAR WITH PUMPKIN AND CRANBERRIES
Warm, comforting autumn flavours are very prominent in the side dish, which is so sweet you would think it was dessert!

Steps:
- Combine honey with the three spices; blend well.
- Lay the pear on a foil-lined baking sheet and drizzle the spiced honey overtop.
- Roast the pear in a preheated 350* oven for about 10-15 minutes or until softened and caramelized.
- Stir the roasted pear into the pumpkin; stir in brown sugar.
- Stir in the cranberries.
- Cover and keep in a 200* degree oven for 30-45 minutes until heated through (and flavours have melded).
- Stir and serve (also really tasty the next day, when the flavours have REALLY melded!).
- Enjoy!

- For the brandy ice cream:.
- Stir together the ice cream and the brandy until well blended. Freeze until serving time.
- Preheat oven to 350 degrees.
- For the pears:.
- Halve, peel and core pears. Immediately sprinkle with lemon juice to prevent browning. In a large, rimmed baking pan, mix the remaining lemon juice with the butter, honey and vanilla. Stir in the orange and lemon zest, and the spices. With a small, sharp knife, score the rounded part of each pear half diagonally in one direction, then the other, to form a diamond pattern. Place pears cut side down in baking pan. Spoon honey mixture over pears.
- Bake pears 40-45 minutes, basting them with pan juices every 10 minutes or so, until the are very soft when pierced. Place one pear half on each plate and place scoops of ice cream around them. Garnish with the lemon and orange slices.

- Heat 2 tbls. of the ho0ney in a large skillet over low heat until it begins to reduce and caramelize, about 10 minutes. Then add the pears, flat side down. Cook until golden brown around the edges, about 15 minutes. Remove the pan from the heat. Place the pears in a roasting pan flat side up. Scatter 3 sprigs of thyme(or other herbs) on top. Roast in a preheated 350*F. oven until tender, about 25 minutes.
- Heat the remaining honey and thyme sprigs in a saucepan over low heat. Slowly whisk in the butter and salt. Drizzle theh honey butter mixture over the pears. Serve hot or warm. Enjoy!

HONEY-ROASTED PEAR SALAD WITH THYME AND VERJUS DRESSING
An elegant and sophisticated salad that makes good use of verjus (verjuice) in the dressing. I use a local blue cheese, such as Roquefort in this salad; however, please do use a local blue cheese of your choice - any creamy or robust blue cheese will marry well with the pears and tart dressing. Verjuice, or verjus, is the juice of unripe grapes. This staple of French provincial cooking, a key ingredient in Dijon mustard, has the tartness of lemon juice and the acidity of vinegar, but the harshness of neither. Its delicate flavour is ideal for everything from stocks to sweet syrups - as long as you know what you're doing. Verjus was also a common ingredient used in English cooking throughout the Middle Ages. I try to make a batch of verjus every year with the green grapes from my non-dessert grape vine - as I love cooking with it. This recipe came from an old copy of Bon Appetit magazine from 2005. Prep time includes the time it takes the pears to cool.

- Whisk all ingredients in small bowl to blend. Season dressing to taste with salt and pepper.
- For the pears and salad:.
- Preheat oven to 200°C/400°F Scatter thyme sprigs on a baking sheet. Place pear halves, cut side down, on work surface. Starting 1/2 inch from stem and leaving pear half intact, cut each lengthwise into scant 1/3- to 1/2-inch-wide slices. Press pear gently to fan slices; place on top of the thyme sprigs. - Preheat the oven to 200°C. Simmer the honey, juices, rinds, vanilla bean and seeds in a small saucepan over a medium heat until reduced to a light syrup (8-10 minutes).
