HORSERADISH SAUCE
This sauce is wonderful with London Broil or Prime Rib. It is also very good with Roast Beef. We use it on beef sandwiches like a spread.

- Put the beets into a food processor or blender and shred thoroughly. Drain the beets, reserving the liquid for later use. Place the beets in a medium bowl, and add the horseradish. Mix in the honey, and add vinegar to taste.
- Notes: This is a kind of Polish wasabe sauce. Depending on your preference it can be made explosively hot or quite mild by varying the amount of horseradish involved. Brown sugar can be substituted for honey, but it's not quite as traditional. It's a perfect sauce for Hrudka, and was usually blessed in the same Easter Basket as the hrudka.
HORSERADISH CRèME FRAîCHE SAUCE
This creamy, luscious sauce gets its bite from the combination of mustard and horseradish. Dollop it on steaks and chops, fish, chicken, roasted vegetables (especially broccoli and cauliflower) or a hot baked potato. If you can't get crème fraîche, sour cream is a fine substitute. - Place washed beets in the medium pot and cover with enough water cover the top of the beets. Add 1 tbsp vinegar and 3/4 tsp salt to the water and boil about 1 hour, or until beets are easily pierced with a knife.
- Cool cooked beets to room temperature. Use gloves to remove skin from beets. Finely grate beets using fine grater.
- Once beets are grated, add 1/4 tsp sugar, 1/2 tsp vinegar and 1/8 tsp salt and mix. Than add 1/4 cup of horseradish or to taste. You can also add more salt, vinegar or sugar to taste.
