ITALIAN MEAT LOAF SANDWICHES
You'll only need leftover meat loaf and five ingredients to make these yummy sandwiches that are easy to prepare on a griddle. You can even cook the sandwiches in a panini grill or countertop indoor grill. Feel free to use leftover homemade meat loaf, purchase meat loaf from the deli or purchase cooked meat loaf in the convenience packaged food section in the meat department.

- Butter one side of each slice of bread. Place six slices on a griddle, buttered side down. Layer with the cheese, pizza sauce, giardiniera, meat loaf and remaining bread, buttered side up. Cook over medium heat until golden brown, turning once.

- In a medium bowl, mix the ground beef, bread, onions, parsley, eggs, cheese, and garlic.
- Add salt and pepper to taste; If the mixture is dry, add ½ cup of cold water and mix well. Form into about 12 meatballs.
- Place the meatballs in a sauté pan with the olive oil and fry over medium to high heat until brown, about 10 to 15 minutes.

SAVORY ITALIAN MEATBALLS OR MEATLOAF
You'll have enough juicy meatballs for everyone, and they will keep coming back for more. Make the meatloaf instead and your guests will be in awe of your culinary skills.

- Wash your hands.
- Form your ground beef into a tube on a large cutting board. Cut a slice down the middle of the tube forming a pocket along it's length.
- Remove the Italian Sausage (optional) from casing and place it into the pocket, then sprinkle all other ingredients over it (except the Spaghetti Sauce).
- Knead your ground beef tube with your hands until all ingredients are mixed thoroughly.
- Form your meatballs rolling them with the palms of your hands.
- If you are making meatloaf instead of meatballs, form your meatloaf tightly and bake it on a broiler pan (so the grease will drain through the holes) at 350 degrees for 30-45 minutes. During the last 10 minutes of cooking, pour your favorite Spaghetti Sauce over your meatloaf. When the meatloaf is done, it is ready to serve.
- Place your meatballs on tin foil in a large roasting pan. Roast at 350 degrees for about 35 minutes. This recipe makes about 50 meatballs. You may need to use 2 roasting pans depending on your pan size. Remove from oven when done.
- Pour your sauce (I always use Paul Newman's Sockarooni Sauce) into a crockpot until it is about 1/2 full. Add your meatballs and cover with a bit more sauce. Freeze any extra meatballs or set them aside in your fridge for a second serving later.
- Set your crockpot on high. Your meatballs will be ready to serve in about 1 hour.
- Try to keep the crowd back once word spreads about the juicy Italian flavor. Whatver else is happening at your party, a line will always be formed in front of your meatballs.

FRIED MEATBALL SANDWICHES WITH GIARDINIERA
Jeff's Homemade Hot Giardiniera adds heat and zip to this meaty sandwich. You can substitute store-bought giardiniera.

- For the meatballs: Preheat the oven to broil.
- In a large mixing bowl, whisk together the eggs, Romano, parsley, garlic, and some salt and pepper until it is all incorporated.
- Add in the ground meats and breadcrumbs and, using your God-given hands, get after it and mix away. Do not overwork the meat or it will turn "meat-loafy." You want it loose and supple.
- Using your hands again, make 4 loose patties to match the size of your bread. (The mixture will form at least 10 patties, depending on how big your buns are. But I like to make some patties for sandwiches and then roll the rest to make meatballs, which I then freeze so I have meatballs at the ready.)
- Heat some oil in a large cast-iron pan (or use a griddle pan) over medium heat. In batches, fry the patties until golden brown, 4 to 5 minutes per side.
- For the sandwich build: Place the buns split-side up on a rimmed baking sheet. Add 1 slice of provolone to each side of the buns and broil in the oven until the cheese is brown and bubbly, 1 to 2 minutes, but keep watch!
- Add the patties to the bottom buns, spoon over some marinara, top with some red pepper strips and pile on some giardiniera. Then close the sandwiches and eat the hell out of them.
- Serve with more marinara sauce on the side.
ITALIAN MEATBALL MEATLOAF SANDWICHES

- Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
- Place the meat in a mixing bowl and sprinkle with salt and pepper. Trim the crusts off the bread and place in a small bowl, cover with milk and soak to soften. Squeeze the milk from the bread and crumble as you add it to the meat. Then add the eggs, cheese, parsley, grated onion and garlic, and mix to combine. Form into a loaf about 4 inches high and put on the baking sheet. Spray with olive oil.
- Mix the ketchup with the balsamic drizzle and Worcestershire. Season with pepper. Spread about 1/3 cup of the ketchup mixture over the top of the meatloaf. Bake until cooked through, about 1 hour.
- To reheat, slice the meatloaf 1 1/2 inches thick and put in a pot of warmed chicken stock. Serve the meatloaf hot or cold on thick-sliced Italian white bread with the remaining ketchup mixture and the lettuce, tomato, onions, mozzarella and basil.
CHEF JOHN'S ITALIAN MEATBALLS
Homemade meatballs are a very easy to make, and since we skip the very messy step of pan-frying these before they hit the sauce, it becomes downright simple. Here I use a standard half-beef/half-pork mixture. You can substitute water or beef broth for the milk, if preferred.

- Cover a baking sheet with foil and spray lightly with cooking spray.
- Soak bread crumbs in milk in a small bowl for 20 minutes.
- Heat olive oil in a skillet over medium heat. Cook and stir onions in hot oil until translucent, about 20 minutes.
- Mix beef and pork together in a large bowl. Stir onions, bread crumb mixture, eggs, parsley, garlic, salt, black pepper, red pepper flakes, Italian herb seasoning, and Parmesan cheese into meat mixture with a rubber spatula until combined. Cover and refrigerate for about one hour.

- 1. In large bowl stir together egg and 1/3 cup of the marinara sauce. Stir in KELLOGG'S CORN FLAKE Crumbs, parsley, Italian seasoning, fennel and salt. Add beef and sausage. Mix well. Shape mixture into 40 meatballs, each about 1 1/4-inch. Place on rack of broiler pan coated with nonstick cooking spray.2. - Preheat oven to 400 degrees F (205 degrees C).
- Mix together onions, bread crumbs, Parmesan cheese and ground beef. Roll into 1 inch diameter balls, and place in a baking pan. Bake for 15 to 20 minutes, or until beef is no longer pink. Reduce the oven temperature to 350 degrees F (175 degrees C).
- Arrange the bread cubes in a single layer in an ungreased 9x13 inch baking dish. Mix together the cream cheese, mayonnaise, Italian seasoning and black pepper until smooth. Spread this mixture over each bread cube. Sprinkle with 1/2 cup of the grated mozzarella cheese.
- In a large bowl, mix together spaghetti sauce, water, and garlic. Gently stir in meatballs. Pour over the bread and cheese mixture in the baking pan. Sprinkle the remaining mozzarella cheese evenly over the top.
- Bake at 350 degrees F (175 degrees C) for 30 minutes, or until heated through.
