SAUSAGE STROMBOLI

- In a large bowl, dissolve yeast and sugar in water; let stand for 5 minutes. Add the oil, 1/8 teaspoon salt and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 5 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Meanwhile, in a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Add the tomato sauce, green pepper, garlic, Italian seasoning, pepper and remaining salt; set aside. Punch dough down. , On a large greased baking sheet, roll dough into an 18x12-in. oval. Spread sausage mixture lengthwise down the center., Combine the sour cream and cream cheese; spread over sausage mixture. Sprinkle with cheeses. Fold one long side of dough over filling. Fold other long side over the top; pinch seam and ends to seal. With a sharp knife, cut slits in top of dough. Cover and let rise until doubled, about 30 minutes., Brush top with egg white; sprinkle with fennel seed. Bake at 400° for 25-30 minutes or until lightly browned. let stand for 10 minutes before slicing.

STROMBOLI BITES
Savory, salty, spicy and cheesy: these little stromboli bites are perfect for any party. Fill store-bought pizza dough with Italian meats, pepperoncini, olives and cheese and then roll 'em up like tiny burritos.

- Preheat the oven to 400 degrees F. Line a baking sheet with parchment. Reserve 2/3 cup of the marinara for dipping.
- Lightly flour a work surface. Roll the pizza dough out to a 12-by-15-inch rectangle. Cut the rectangle into fifteen 3-by-4-inch rectangles. Spread 1 teaspoon of the remaining marinara over each little rectangle, leaving a 1-inch unsauced border.
- Cover the sauce with 3 to 4 slices of pepperoni, and then 3 to 4 pieces of salami, neatly layering them. Top the meat with about 1 teaspoon each black olives and pepperoncini. Sprinkle 1 heaping tablespoon mozzarella on top of each.
- Roll each rectangle up like a burrito: Fold a long edge of each rectangle snugly over the filling, tuck in the sides and roll up tightly. Pinch the seams to seal. Put the stromboli seam-side down on the prepared baking sheet. Sprinkle the tops with Parmesan. Bake until golden brown,15 to 20 minutes.
- Meanwhile, microwave the reserved 2/3 cup marinara in a microwave-safe bowl until warm. Serve with the stromboli bites for dipping.
SAUSAGE STROMBOLI
This is a quick and easy recipe. It kind of has a pizza flavor to it, but even better! I reduced the fat by using 50% less fat pork sausage, fat free sour cream, and low fat cheeses.

Steps:
- Cook sausage over medium heat until no longer pink, drain.
- Return to pan and add tomato sauce, green pepper, garlic, & Italian seasoning.
- Spread mixture onto unrolled French loaf on a greased baking sheet.
- Combine sour cream & cream cheese and spread over sausage mixture.
- Sprinkle with cheeses.
- Fold one long side of dough over filling, then fold the other side over dough.
- Pinch seam & ends to seal.
- Cut slits in the top so it cooks through.
- Bake at 375 for 20-25 minutes.

ITALIAN SAUSAGE STROMBOLI APPETIZERS
Straight from the Johnsonville kitchen to mine and yours! A great little appetizer for the upcoming Super Bowl! Though I have not made these yet, I have made similar and have always enjoyed Johnsonville products, so I am posting this is good faith that they are good! Will be making them soon to test the recipe! :D In the meantime, if you happen to make them before me, let me know how they are! Steps:
- In a skillet, brown sausage until no longer pink; drain. On a lightly floured surface, roll bread dough to a 16-in. x 12-in. rectangle. Transfer dough to a greased baking sheet. Combine cream cheese and garlic, spread lengthwise over center third of dough. Top with the sausage, peppers, olives and cheese. Fold dough over filling, pinching seam to seal. Make slits across top of dough every 2 inches. Brush lightly with water and sprinkle with poppy seeds. Bake at 400ºF for 20-25 minutes or until golden brown. Let stand 10 minutes before slicing. Note: I've found that the best way to thaw frozen bread dough loaves, is to wrap them frozen with plastic wrap and refridgerate overnight. The next morning they are perfectly thawed but not risen.
