ITALIAN-STYLE PEPPERONI AND SPINACH SOUP WITH MEATBALLS
This is actually a meal on it's own, if you love pasta sauce and meatballs, you will love this soup! use your own favorite meatball recipe or use my recipe #69173. This soup will increase in flavor if left overnight in the fridge, so it is best if prepared a day ahead, all ingredient amounts may be adjusted to taste, serve this delicious soup with garlic bread, crusty buns or crostini :)

Steps:
- Shape the ground beef into tiny meatballs using you favorite recipe.
- Heat oil in a large pot over medium-high heat; brown the meatballs with pepperoni until browned (the meatballs do not have to cook completely) remove to a bowl.
- Add in sliced mushrooms, onion, garlic, green bell pepper, chili flakes, basil and oregano; sauté for about 3-4 minutes.
- Add in the tomato paste and cook, stirring for 1 minute.
- Add in the undiluted soup, crushed tomatoes, chicken broth and chopped spinach, then add in the meatballs and pepperoni back to the pot; bring to a boil, season with seasoned salt, lots black pepper and sugar (if using).
- Reduce heat and simmer covered for about 2 hours or less (uncover and simmer the last 30 minutes of cooking, the soup will thicken more if simmer uncovered for a longer time!).
- Add in the cooked spaghetti.
- Ladle into bowls and top with grated Parmesan cheese, serve with garlic bread or crostini on the side.

- Stir water, tomatoes, beef broth, and Italian seasoning together in a large pot; bring to a boil. Add meatballs, Italian-blend vegetables, and pasta to the pot. Return broth to a boil, reduce heat to medium-low, and cook until the meatballs are heated through and the pasta is tender, about 10 minutes. Ladle soup into bowls and garnish with Parmesan cheese.

PARTY ITALIAN WEDDING SOUP
A large batch of traditional Italian Wedding soup. This soup offers plenty of meat, carbohydrates and veggies. Perfect with Italian bread. For the pasta, I use acini di pepe, but you could use any small shape you desire, like shells or orzo.

- In a large pot over medium heat, combine the chicken broth, spinach, onions, carrots and celery. Mix well and allow to simmer.
- In a separate large bowl, combine the ground beef, bread crumbs and egg and mix well. Form mixture into 1/2 inch diameter meatballs and carefully drop them into the soup.
- Put chunks of chicken breast into the soup and reduce heat to low. Allow the soup to simmer for 1 hour. Add the pasta 30 minutes before serving and season with salt and pepper to taste.

- In a large bowl, beat the eggs.
- Add the rest of the ingredients, blend with hands until combined.
- Shape into 1 inch balls.
- Brown in a skillet with just enough of the olive oil so that meat balls do not stick to the bottom of the pan.
- In 5-quart Dutch oven, over medium high heat, bring spaghetti sauce to a simmer.

- Heat oil in a large soup pot over medium heat on the stovetop. Add carrots, celery and onion and cook, stirring, until onion is softened, about 5 minutes. Add tomato paste, if using and cook, stirring, for 30 seconds. Add chicken broth and bring mixture to a boil, then reduce heat and simmer for about 15 minutes, or until carrots are tender (taste to be sure). Discard bay leaf.
- Pour in can of tomatoes. Add Italian seasoning, Parmesan rind, if using, and a bit of salt and freshly ground pepper. Stir to combine. Add meatballs. Continue simmering soup another 15 minutes, to allow the flavours to come together.
- Add pasta and simmer a further 15 minutes, or until pasta is cooked. Taste for seasoning and add additional salt, pepper and/or Italian seasoning, as needed. Remove from heat and stir in baby spinach until wilted.

- In a large mixing bowl, add 1 1/2 pounds of ground meat (beef, chicken, or turkey). Add minced garlic (2 cloves), 1 raw egg (whisked), 1/2 cup Parmesan cheese, 1/3 cup bread crumbs, 2 tsp dry oregano, and 1/2 tsp sweet paprika. Season with kosher salt and black pepper. Add a good drizzle of extra virgin olive oil and mix to combine.
- Turn your oven broiler on. Take about 1 1/2 tablespoons of the meat mixture and form a meatball. Set it on a lightly oiled baking sheet. Continue forming the mixture into meatballs (whatever size meatball you started with, stick to it). Line all the meatballs up on the sheet pan. Broil for about 8 minutes or until the meatballs are browned (they will have a chance to cook some more later in the soup)
- Grab a large pot. Heat a couple tablespoons extra virgin olive oil. Now add chopped onion, carrots, celery and garlic. Cook for 5 minutes or so until softened, stirring regularly.Add 5 to 6 cups broth (if you like your soup more chunky, start with 5 cups), canned tomatoes (28 ounces of peeled tomatoes with their juices). Season with about 1 tsp dried oregano, 1/ tsp sweet paprika, kosher salt and black pepper to your taste. Cook for about 10 minutes over medium/medium-high heat, then add in the broiled meatballs and 3/4 cup of any small pasta you have such as ditalini, small shells or elbow pasta. Cook for another 10 minutes or until the pasta is cooked. Garnish with parsley.
- Transfer the meatball soup to serving bowls. You can add a sprinkle of grated Parmesan cheese on top. And if you enjoy spicy food, a sprinkle of crushed red pepper flakes. Enjoy!
