JALAPENO POTATOES

Wonderful cheesy flavor with a slight kick from the jalapenos. The pimiento and jalapenos add a nice color contrast to the pale orange sauce. Use your discretion with the amount of jalapenos. You can also sub 1/8 to 1/4 cup chopped hot mixed peppers. It's best to use a waxy-type potato so they will keep their shape.

Jalapeno Potatoes image

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish.
  • Bring a large pot of water to a boil; cook the potatoes in the boiling water until just tender, 15 to 18 minutes. Drain and allow to cool to the touch before peeling and slicing thin. Place the sliced potatoes in a large bowl.
  • Pour the milk into a saucepan over medium heat; gradually whisk the flour, salt, pepper, and garlic powder into the warming milk until smooth. Continue heating and stirring until the liquid is boiling and thickened. Add the Cheddar cheese and jalapeno peppers; cook and stir until the cheese is completely melted. Pour the sauce over the potatoes. Scatter the pimentos over the mixture; pour into the prepared dish.
  • Bake until the potatoes are completely tender, about 30 minutes.

Jalapeno Potatoes image

Steps:

  • Place the potatoes in a large pot and cover with water by at least 1 inch.
  • Add the salt.
  • Cook the potatoes over moderate heat until they are tender (about 25 minutes).
  • Drain the potatoes, allow to cool.
  • When potatoes have cooled enough to handle, slice them very thin.
  • Preaheat the oven to 350°F.
  • Grease a large baking dish (9x13).
  • Warm the butter and oil in a sacuepan over medium heat.
  • When the butter has melted, add the bell pepper, onions and garlic, and saute them until they are softened.
  • Stir in the pimientos, the jalapenos, and the jalapeno liquid.
  • Sprinkle the flour over the vegetables; mix it in well.
  • Pour the milk in gradually, stirring to avoid lumps.
  • Simmer briefly until the mixture is thickened.
  • Remove the pan from the heat, add the grated cheese, mix well.
  • Alternate layers of potatoes and sauce in the baking dish, ending with some of the sauce.
  • Cover the dish tightly, and bake for 50-60 minutes, until the potatoes are soft and much of the sauce has been absorbed.
  • Serve the potates hot.

Steps:

  • Put the potatoes in a large pot and add enough water to cover them by an inch. Season with salt. Bring to a boil over high heat and cook until the potatoes are fork-tender, about 15 minutes.
  • Drain the potatoes and return them to the pot, then mash briefly with a potato masher, so that there is a mix of mashed and chunky potatoes.
  • Meanwhile, heat a nonstick skillet over a medium heat until hot, then add the bacon and cook, turning every so often, until crisp, about 8 minutes.
  • Drain the bacon on a paper towel-lined plate, then chop.
  • Tip the potatoes into a large bowl. Add the salt, cheese, mayonnaise, jalapenos and jalapeno brine, mustard, pepper, eggs, scallions and gherkins. Fold everything together.
  • Serve the potato salad warm, or cover and refrigerate until chilled, at least 1 hour or up to overnight.

Steps:

  • Preheat the oven to 350 degrees F. Grease an 8-inch square baking dish with unsalted butter.
  • Peel the potatoes and cut them into 1/8-inch-thick slices using a mandoline or sharp knife.
  • Add the sliced potatoes, heavy cream, whole milk, 2 tablespoons butter, garlic, thyme, 1 1/2 teaspoons salt, 1/2 teaspoon pepper and the nutmeg to a medium saucepan. Since I sometimes have to cook for just me, I've been on a search for recipes that make enough for just one or two people. So when I came across this one in the TOH 2002 Annual Recipes that was sent in to them by Edith Jennings of Prarie City, Iowa, I knew I had to try it.The time for peeling the potatoes has been included in the prep time. I guess if you wanted to speed up the time it takes to prepare this recipe, you could slightly cook the potatoes in the microwave or on the stove top. The addition of the French Fried Onions was my idea. Sumitted to " ZAAR " on October 21, 2009.

Scalloped Potatoes for Two image

Steps:

  • Place potatoes in a greased 1 quart baking dish, set aside.
  • In a small pan, melt margarine and then add flour cook until the flour taste disappears ( About 3 to 4 minutes ).
  • Add the milk a little at a time, bring to a boil then reduce heat and stir until slightly thickened.
  • Add cheese,salt, pepper, and worcestershire sauce and stir until cheese is melted.
  • Cool sauce slightly, pour over potatoes.
  • Cover potatoes and bake for 25 minutes at 375 degrees, remove cover and top with french fried onion, and paprika.
  • Bake for another 20 minutes or until potatoes are fork tender.
  • Let " rest " for 10 minutes, so sauce will thicken.

Steps:

  • Take one whole chilli and using a small sharp knife make an incision along the length without cutting all the way through. Open up the cavity and using the end of a teaspoon scrape out and discard the seeds and the membrane. It's very good idea to wear gloves when you're preparing chillies in this way, and make sure you wash your hands thoroughly afterwards. Repeat with all the other chillies.
  • Mix the cream cheese with the mozzarella, season with salt and pepper then use it to fill the chillies. Push them gently to close them up and wipe off any excess.
  • Put the flour, egg and breadcrumbs in separate shallow bowls or dishes and roll the stuffed chillies first in the flour then egg then breadcrumbs then repeat so they get a good double coating.
  • Heat the oil in a large saucepan until it reaches 160C. Carefully lower the chillies into the oil using a slotted spoon and deep fry in batches for around 2-3 mins or until deep golden brown. Transfer to a plate lined with kitchen paper to soak up the excess oil.
  • Once the chillies are fried season them with pepper and salt and spread out on a plate or board so everyone can help themselves. Great with beer and a movie.
