THYME ROASTED SWEET POTATOES
Sweet potatoes at their easiest! The potatoes slices need to be in single layer against the pan, not on top of one another. Great for a dinner party! Herbes de Provence with thyme or rosemary sprigs can be used instead of just thyme leaves. Serve warm or at room temperature with sprigs for garnish.

- Preheat oven to 450 degrees F (230 degrees C).
- Combine sweet potatoes, thyme, olive oil, garlic, salt, and red pepper flakes in a bowl until evenly coated. Arrange coated sweet potato slices in a single layer on a rimmed baking sheet or 9x13-inch baking dish.
- Place baking sheet on the top rack of preheated oven; roast until sweet potatoes are tender and slightly browned, about 40 minutes.

THYME-ROASTED SWEET POTATOES

- Cut potatoes into circle slices.
- Single layer of potatoes, drops of soy sauce, sprinkle of brown sugar, herbs.
- And another layer on top of the first until there are no more potatoes.
- Oil around the edges -- really not more than a teaspoon or two.
- Covered in plastic wrap.
- Microwave 10 minutes.
- Check for doneness.
- Sometimes thicker potatoes take 15 minutes.

JAPANESE SOY GLAZED SWEET POTATO
This is a really tasty dish which we like as part of a Japanese meal- usually we'll serve with a tofu miso soup, steamed short grain rice and a salad made with Recipe #362130. I'm not sure how many serves but would serve 4 in this style meal. To make it faster, I often microwave the potato for 5 minutes first and leave out the water when baking. This way it's done in about 30 minutes.

Steps:
- Preheat oven to 400°.
- Combine first 6 ingredients; stir well with a whisk. Arrange potatoes in a single layer in a 13 x 9-inch baking dish.
- Pour soy sauce mixture over potatoes. Cover and bake at 400° for 50 minutes or until tender.
- Baste with the soy sauce mixture. Uncover, and bake an additional 10 minutes or until liquid is absorbed.
- Sprinkle with sesame seeds and shredded nori, toss and serve.
