COWBOY CORNBREAD

I first made this as a teenager and everyone I've made it for loves it. It's very easy and absolutely delicious! You can top it with chili as well. It is also good the next day.

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add onion; cook until soft, 5 to 10 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine cornbread mix, milk, and eggs in a large bowl. Stir in creamed corn.
  • Spread beef-onion mixture in the bottom of a baking dish. Spread Cheddar cheese on top. Pour cornbread batter over cheese.
  • Bake in the preheated oven until golden brown and a toothpick inserted into the center comes out clean, 17 to 22 minutes. Spread butter over the top. Let cool for 5 minutes before cutting.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a 10-inch cast iron skillet over medium heat; cook onion until soft, about 5 minutes. Stir in ground beef and cook until browned, about 5 minutes more. Drain grease.
  • Add kidney beans, tomato sauce, corn, chili seasoning, salt, sugars, garlic powder, and Worcestershire sauce. Cook and stir until thoroughly heated, 5 to 10 minutes. Remove from heat and smooth out the top.
  • Combine cornbread mix, milk, and egg together in a bowl. Mix until a slightly lumpy batter forms. Drop big spoonfuls of the cornbread mixture over the chili; smooth out to the edges of the skillet.
  • Bake in the preheated oven until top starts to brown, about 15 minutes. Sprinkle Cheddar cheese on top and continue baking until cheese is melted, about 5 minutes more. Let casserole rest for 5 minutes before serving.

My dad used to make this and it was GREAT!!! My husband and daughter enjoy this and its a pretty popular recipe in our house. This recipe can easily be doubled for potluck dinners or big get togethers. Be sure not to cook the cornbread before you put the mixture on top!!!

  • Chop bell pepper and set aside.
  • Fry ground beef in skillet until cooked add bell pepper.
  • Cook for 5 minutes and drain excess grease.

Steps:

  • Preheat your oven to 400 F.
  • Mix cornbread mix, 1 egg, and 1/3 cup of milk. The batter will be slightly lumpy. Let the mixture rest while you heat up your skillet. (If you don't have a skillet, let the batter rest for 3-4 minutes before baking.).
  • Melt 3 tbs of butter in your skillet.
  • Once your skillet is nice and hot pour the cornbread batter directly in your skillet. The batter should sizzle a little. Smooth the mixture.
  • Place skillet in oven and bake for ten minutes. Cornbread should be baked, but not golden brown on top.
  • While the bread bakes cook, saute your chopped onion and bell pepper in 2 tbs of butter until soft.
  • Add ground beef, serano pepper, jalapeno pepper, and garlic to pan.
  • Once ground beef is browned add you seasoning packet and about of 1/4 cup of water. Simmer until sauce has thickened.
  • Pull cornbread out of oven. Pour meat mixture on top of your cornbread and then sprinkle cheese on top. Place back in oven for about 10 minutes or until the cheese is bubbly.
  • Serve while hot and with a dollop of sour cream.
