Steps:

  • Mix together 1st amount of brown sugar, flour, baking powder, raisins or chocolate chips, nuts and milk in a greased casserole.
  • Mix 2nd amount of brown sugar, cinnamon, vanilla, and salt.
  • Spread over batter and dot with butter.
  • Pour boiling water gently over top.
  • Bake at 350F for 45 minutes or microwave for 9 minutes.

JIFFY PUDDING

If you're not counting calories, this is for you. It's rich, sweet, and easy to make and my favourite recipe. Serve it hot with ice cream, warm or cold, you decide. When you put it together you will think there is something wrong with the recipe but trust me, it works just fine. The recipe says to use a bundt pan but I found that a large casserole dish works better, as the bundt pan isn't large enough.

Steps:

  • Cake:.
  • Preheat oven to 350 degrees (F). In a large bowl, beat sugar, butter, eggs, and jam together. Sift flour in mixture with milk. Mix baking soda and vinegar together and add to flour mixture. Pour in bunt cake pan and bake for 30 minutes.
  • Sauce:
  • Combine sauce ingredients in a heavy saucepan and boil very slowly for a few minutes. Pour over baked pudding. Return to oven and bake for another 15 minutes, then ready to eat.
  • Serve with vanilla icecream.

We always make this at Thanksgiving! This is NOT the "souffle" type corn pudding that most people make. I am a CORN fanatic, so I love this recipe. Is great for Thanksgiving, but is easy enough to make for an everyday meal.
