LAMB CURRY WITH PEAS

For this curry, cubes of lamb become meltingly tender and richly flavored after a long, slow braise with spices like cinnamon, cardamon and turmeric. Thick Yukon Gold potatoes and frozen peas add some additional texture, while a half cup of whole-milk yogurt adds a refreshing creaminess. Recipe developed by Food Network Kitchen.

Lamb Curry with Peas image

Steps:

  • Season the lamb with salt and pepper. Heat 2 tablespoons vegetable oil in a large Dutch oven over high heat. Add the lamb in a single layer and brown, turning once, 3 to 4 minutes per side. Remove to a plate. Reduce the heat to medium high and add the remaining 2 tablespoons vegetable oil to the pot along with the cardamom pods, cinnamon stick and clove. Cook, stirring, until the whole spices are toasted, about 20 seconds.
  • Add the onions, season with 1/2 teaspoon salt and cook, stirring occasionally, until soft and browned, 8 to 10 minutes. Add the ginger and garlic and cook, stirring, until golden, about 2 minutes. Add the coriander, cumin, chili powder and turmeric; cook, stirring and scraping the pan, until the ground spices are toasted, about 30 seconds.
  • Add the tomatoes to the pot and cook, stirring, until they break down, 4 to 5 minutes. Add the lamb and any juices from the plate. Stir in 1 3/4 cups water and bring to a boil. Reduce the heat to medium low, cover and simmer until the lamb is almost cooked through and the sauce has thickened slightly, 1 hour 15 minutes.
  • Tuck the potatoes among the lamb pieces, submerging them in the liquid; season with 1/2 teaspoon salt. Cover and simmer until the potatoes are cooked through, 18 to 20 minutes. Uncover and simmer, turning the potatoes occasionally, until the curry is thickened, 8 to 10 minutes. Stir in the peas and heat through.
  • Remove the curry from the heat and stir in the yogurt. Thin with water, if necessary; season with salt. Serve with rice and top with mint.

GRILLED LAMB KEBABS WITH SMOKY PEACHES

Taking a cue from the hot-weather regions of the world, John Willoughby and Chris Schlesinger go heavy with the seasoning here, but the key is when that happens. Instead of a marinade, or a spice rub, they grill the lamb and season it after with garlic, basil, vinegar and Tabasco sauce. It's a great way to add big flavor without spending all day in the kitchen.

Grilled Lamb Kebabs With Smoky Peaches image

Steps:

  • Build a fire in your grill; when the coals are all covered with gray ash and the temperature is medium-hot (you can hold your hand 5 inches above the grill for 3 to 4 seconds), you are ready to cook. (For a gas grill, turn all burners to high, lower cover, and heat for 15 minutes, then turn burners to medium-high.)
  • Mix the yogurt and mint together in a small bowl and set aside.
  • Trim the lamb of most but not all fat and cut it into 32 large chunks, about 1 inch square. Add them to a large bowl with the olive oil, curry powder, salt and pepper, and toss well to coat, then thread onto 4 skewers.
  • Put the skewers on the grill directly over the coals. Also put the peaches on the grill, cut side down, and cook until just slightly charred and softened, about 6 minutes. Take off the grill and cut into large wedges (about 6 per peach).
  • At the same time, cook the lamb, turning to expose all 4 sides to the direct heat of the coals, until done to your liking, about 2 to 3 minutes per side (8 to 12 minutes total) for medium rare. (To check for doneness, cut into one of the chunks and check to see if it is cooked to your liking - remove from the heat when it is slightly less done than you want it to be when you eat it.)
  • Put the peaches and lamb into a large bowl. Add the garlic, basil, vinegar and Tabasco, toss to coat, season with more salt and pepper if needed, and serve (over rice if you wish), accompanied by the yogurt and mint.

BRAISED AND BROWNED LAMB WITH PEACHES

A logical combination and glorious once you taste it, with the sweet juice of the peaches deftly cutting through the richness of the lamb without being piercing. A hint of cinnamon (or an even smaller one of allspice-maybe an eighth of a teaspoon) gives the dish a great aroma as it cooks and a slightly mysterious flavor at the table. A pinch of cayenne or other red pepper makes a nice addition. Whereas most braises begin with browning, this one ends with it, like the Braised and Grilled Lamb Shanks on page 188\. This method reduces both spattering and time-since the lamb's liquid is mostly gone by the end of cooking, it doesn't go flying from the hot fat, and the meat browns faster. And the peaches, browning lightly in the same cooking liquid, contribute some of their juices to the pan while becoming meltingly tender.

Pork with Peaches image

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C/gas 7).
  • Score the skin of the pork through the fat, the incisions should be about 1 centimeter apart. Turn over. Make a pocket for the stuffing by cutting an incision at an angle, about 3 inches (7.5 centimeters) deep in the center of the streaky part of the loin, working away from the eye meat. Starting slightly in from the side of the meat, slowly slice along the loin not quite to the end, this will ensure your stuffing won't fall out.
  • Chop half the thyme with 1 clove of garlic and scrunch together with the butter, 1 tin of peaches, and a good pinch of salt and pepper. Push the butter into the pocket and pat back into shape. Lay the pancetta, bacon or Parma ham over the pork, leaving the skin side uncovered, and tie up firmly with 3 to 4 pieces of string.
  • Place skin-side up in a roasting tray with the remaining peaches, the garlic cloves, thyme, and half of the white wine. Roast for around 1 hour until the skin is crisp and golden.
  • When ready, remove the pork and peaches to a plate and leave to rest for 15 minutes whilst you finish the sauce. To do this, remove most of the fat from the roasting tray, then place the tray over a high heat. Squash the cooked garlic and add 1 tablespoon of flour. Stir and add the rest of the wine with a glass of water or stock. Simmer and leave to reduce for a few minutes. Strain and add any extra juices from the rested pork. Check the seasoning and consistency and serve drizzled over the sliced pork.

Steps:

  • Prepare peaches (dip peaches into boiled water, then into ice-cold water--skins will slip off; then halve and twist to remove the pit).
  • Make a syrup with the sugar & water in a large sauce-pan; stir mixture until it boils.
  • To the boiling syrup, add peach halves and extract.
  • When fruit is cooked (5-7 min), remove pan from heat, drain (reserve); cool fruits and spoon carefully into prepared jars.
  • Half fill jars with reserved syrup, run a butter knife down the jar to remove air bubbles; fill jars to the top with BRANDY.
  • Seal jars with lids, shake gently to mix syrup and brandy.
  • Store in a cool dark place--use within six months.
  • I've also added a pinch of cinnamon and cloves with VERY good results.

Steps:

  • Dry lamb with paper towels and sprinkle generously with salt and pepper. Heat 2 tablespoons oil in a Dutch oven or other large, heavy-bottomed pot over medium-high heat until hot but not smoking. Add the lamb in batches, making sure the pan is not crowded, and brown well. Remove lamb cubes to a platter as they are browned.
  • Pour off fat or, if necessary, add oil so you have about 2 tablespoons total. Add onions and cook, stirring occasionally, until nicely browned, 10 to 12 minutes. Add tomato paste and cook, stirring frequently, for another 2 minutes.
  • Put meat and any accumulated juices back into the pan and add enough chicken stock to cover meat. Bring to a boil, then skim any film off the top, reduce heat to medium-low so the liquid is at a slow simmer, cover and cook until lamb is tender, 1 1/2 to 2 hours.
  • Meanwhile, heat 1 tablespoon oil in a sauté pan over medium-high heat until hot but not smoking. Add peach quarters and cook, stirring occasionally, until lightly browned, about 5 minutes.
  • Add peaches to stew along with verjuice, and continue to cook, covered, until the peaches are very soft but not disintegrated, about 20 minutes. Add mint, adjust seasoning as necessary, and serve.

  • Finely slice the red onions and crush the garlic. mince up the anchovies.
  • Combine with the chickpeas, lamb shanks, tin tomatoes, chili and rosemary in a slow-cooker or casserole dish.
