LINGUINE WITH LEMON SAUCE

The beauty of this recipe lies in its simplicity. All you need is pasta, a lemon, a knob of butter, a generous pour of heavy cream and a hunk of the best Parmesan you can get your hands on.

Linguine With Lemon Sauce image

Steps:

  • Bring a pot of salted water to boil.
  • Heat the butter in a skillet and add the lemon zest.
  • Drop the linguine into the boiling water. Cook pasta according to package directions. Drain.
  • Add the cream to the butter and lemon zest mixture. Add the pasta and lemon juice and stir until just heated through. Add the Parmesan and toss. Serve with additional Parmesan and lemon zest on the side.

Steps:

  • Cook orzo in salted water about 12 minutes, to al dente. Drain orzo well. Do not run under cold water. You want the cooked pasta to remain hot. Transfer pasta to a serving bowl. Drizzle orzo with a tablespoon of extra virgin olive oil and season with salt and pepper. Add lemon zest and parsley and toss to combine the flavors with the pasta.

1/2 pound orzo
Coarse salt
1 tablespoon extra-virgin olive oil, eyeball it
2 large lemons, zested
Black pepper
1/4 cup finely chopped flat leaf parsley, a couple of handfuls

Parsley Salad with Toasted Almonds and Lemon image

Steps:

  • Make the dressing right in the serving bowl: Combine the lemon juice, mustard, honey, pepper, salt and garlic in a large bowl and whisk to combine. Slowly add the olive oil, whisking until emulsified.
  • Reheat the rice until steaming. (I just microwave it for a few minutes.)
  • Add the parsley to the dressing and toss to combine. Add the rice, almonds, onions and lemon zest, and toss well.
  • Serve, garnished with a couple dashes of hot paprika if desired.

3 1/2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1 teaspoon honey
1/2 teaspoon black pepper
1/4 to 1/2 teaspoon fine sea salt
1 clove garlic, grated
1/4 cup olive oil
1 cup cold, cooked rice, such as basmati
5 cups roughly chopped Italian parsley, with tender stems
1 cup whole almonds, toasted and roughly chopped
1/2 cup finely diced sweet onion, such as Vidalia

Sometimes, mid-cooking, I like to jettison my plan and make a new, better plan. The trick is knowing when it's better. I'm not saying I randomly hobble myself, cruelty-cooking-show style, it's just that it's exciting to change it up sometimes. And it surprises the family. Historically, some of the best jettison dinners at my house have started out as regular old pasta night and ended up as gather-around-the-skillet-with-bowls-and-bread night. This was one of those.

Steamed Clams with Almond and Parsley Butter and No Linguine image

Steps:

  • Finely chop the almonds either by crushing with a rolling pin and chopping with a knife, or in a food processor. In a medium bowl, stir the almonds, butter, and parsley together until smooth. Don't add salt-the clams will do that. Set aside while you cook the clams.
  • Heat a large skillet to medium and add the oil, then the garlic and crushed red pepper flakes. Swirl the pan and, before the garlic browns at all, add the clams and wine. Cover the skillet and cook, stirring occasionally, until all the clams have opened. If a few won't open, that's okay; let them keep their deep secrets. Add the almond and parsley butter and stir so that it melts and mixes with the clam broth. Serve hot with spoons, bread, and napkins.
  • Variation
  • Do it the way I originally planned and pluck some, or all, of the cooked clams from their shells, return to the skillet, and toss with hot boiled linguine.

Pasta in Almond Garlic Sauce image

Steps:

  • Purée blanched almonds and garlic with water and 1/4 teaspoon salt in a blender until smooth.
  • Cook cavatappi in a pasta pot of boiling salted water (3 tablespoons salt for 6 quarts water) until almost al dente. Reserve 3 cups pasta-cooking water and drain pasta.
  • Meanwhile, heat oil and 1 tablespoon butter in a 12-inch heavy skillet (preferably straight-sided) over medium heat until foam subsides. Add almond purée and simmer, whisking occasionally, until thickened, about 3 minutes. Add 2 1/2 cups reserved cooking water, 1/4 teaspoon salt, and 1/2 teaspoon pepper and simmer, whisking occasionally, until slightly thickened, 3 to 4 minutes. Whisk in remaining 2 tablespoons butter until melted. Add pasta and peas and cook, stirring occasionally, until pasta is al dente (sauce will be thin), 2 to 3 minutes. Add cheese and lemon juice and stir until combined well. Remove from heat and stir in half of basil and mint and salt and pepper to taste. Serve pasta in bowls topped with chopped almonds, remaining herbs, and additional cheese.

  • In a small pan, heat olive oil and 2 tablespoons minced garlic over low heat until simmering. Simmer about 5 minutes or until garlic is well-browned but not burnt. Remove from heat, add crushed red pepper, and set aside.
  • Fill a large pot with water and bring to a boil. (While waiting, get a start on prepping the other ingredients in the next step.) Cook the pasta just to al dente (it will continue cooking a little bit more when mixed with the other ingredients). BEFORE draining the pasta, use a glass measuring cup to reserve 1/2 cup of the starchy boiling water and set it aside. Drain the pasta. If you're still preparing the other ingredients, then drizzle a little olive oil over the pasta to keep it from sticking together.
  • As soon as you set the water on to boil, prepare the remaining ingredients--that is, zest the lemons, squeeze for juice, and grate the parmesan cheese. Set everything to the side.
