SWEET RED PEPPER PIZZA SAUCE
I have tried several very good pizza sauces from this site. Came up with this idea, tried out on several college students and received an "A".

Steps:
- Bring all ingredients together in saucepan.
- Bring to a boil.
- Lower heat and simmer 15-20 minutes, stir frequently.
- This can be doubled or tripled and frozen.
- *Make red pepper paste as follows:.
- 3 large red peppers, cut in half, cored and deseeded.
- Press halves flat (don't worry if they split). Place on cookie sheet, skin side up and roast at 450F until skin is blackened.
- Remove from oven and place in paper bag and close. Set aside while preparing rest of sauce.
- Remove cooled peppers from bag and rub charred skin off with clean tea towel. Don't be concerned is some is left on.
- Cut into chunks.
- Place in blender or food processor and pulse until broken down.
- Add drizzles of extra virgin olive oil until smooth paste.
- Add splash of balsamic vinegar and pinch of kosher salt.
- Blend and add 1/3 cup to rest of ingredients.

TASTY PIZZA SEASONING
A delicious seasoning to top your pizza with prior to baking or after. The recipe calls for crushed red pepper, but I leave it out because my girlfriend is sensitive to spicy things. So I add it to my slices after serving for that extra flavor and kick. The seasoning is delicious either way you make it.

Steps:
- Mix all the spices together in a small to mid size container or seasoning container and shake it up to blend all the ingredients.
- If you can't get ground rosemary use a mortar and pestle to grind the leaves or or finely chop them. A clean coffee grinder would also do the trick.

KITTENCAL'S PIZZA SAUCE
This is a full-flavored rich pizza sauce that I have been making for over 20 years, the longer you simmer this sauce the thicker and richer it will be --- this sauce freezes very well and even tastes better if made a day ahead and left in the fridge overnight to blend flavors --- also see my recipe#232188

Steps:
- In a saucepan, heat the olive oil; saute the onions, Italian seasoning and oregano for about 2-3 minutes, stirring until soft but not brown.
- Add in garlic and saute for 2 minutes, stirring constantly.
- Add in the tomato paste; stir and cook 1 minute.
- Add in the remaining ingredients; cook and simmer on low heat for 1/2 to 3/4 hours, stirring occasionally, adding more salt if needed (the longer you cook this sauce the thicker and richer it will be!).
- Cool slightly and use immediately or refrigerate up to 5 days or you may freeze.
- *NOTE* freeze in plastic containers after cooled, I find that this sauce tastes even better if left in the fridge overnight to blend the flavors before using or freezing.

- TOMATOES: Pour the tomatoes into a large bowl and using your hands, kitchen shears, or an immersion blender, break the tomatoes down so that they’re chunky but not completely liquid.
- AROMATICS: In a medium saucepan placed over medium heat, heat the olive oil, grated onions, oregano, basil, and red pepper flakes. Allow them to cook for 3-4 minutes, stirring frequently so nothing sticks or burns. Add garlic and continue to cook for another 30 seconds to a minute.
- SIMMER: Add the prepared tomatoes along with the sugar and salt. Let the sauce reach a simmer, then lower the heat to medium-low and allow the sauce to simmer for 30 minutes. Taste and adjust with additional seasonings as desired. If you like a more concentrated tomato flavor you can continue to simmer the sauce for up to 15 more minutes. Ue the sauce for pizzas immediately or allow to come to room temperature before storing in containers.
