LOUISIANA PECAN PIE

Simple, delicious and will win over those who have never liked pecan pie. One being me! Those of you that decide to try this, I hope you enjoy!

Louisiana Pecan Pie image

Steps:

  • Set oven to 350 degrees.
  • Put pecans inside of the pie shell, put on sheet pan and set aside.
  • Beat eggs well.
  • Mix the salt, butter, corn syrup, brown sugar, and vanilla extract well. Add this to the egg mixture.
  • Pour this entire mixture over top of the pecans in the pie shell.
  • Bake for about 45 minutes at 350 degrees.

4 eggs
1/2 teaspoon salt
1/4 cup butter, melted
1 1/4 cups corn syrup, light
1 1/4 cups brown sugar
1 teaspoon vanilla extract
1 cup pecans
1 deep dish pie shell

PAUL PRUDHOMME'S SWEET POTATO PECAN PIE

This recipe came to The Times in 1983 from Paul Prudhomme, the chef who helped put the cooking of Louisiana on the American culinary map. Like its traditional pecan pie cousin, this is very sweet, so serve it with a little Chantilly cream on top.

Paul Prudhomme's Sweet Potato Pecan Pie image

Steps:

  • Make the crust: Cream butter and sugar until light and fluffy. Add beaten egg and milk; beat about 2 minutes. Stir in flour to moisten ingredients. Turn out onto a lightly floured work surface and shape into a disk. Wrap with plastic wrap and refrigerate at least one hour.
  • Roll out dough into 14-inch circle on lightly floured wax paper, or on a lightly floured work surface. Transfer to a deep 9-inch pie plate; remove wax paper if using. Press pastry into plate and flute edges.
  • Heat oven to 300 degrees.
  • Make the sweet potato filling: In a large bowl, combine potato, butter, vanilla, brown sugar, cinnamon, nutmeg, allspice, salt, beaten egg, heavy cream and sugar. Beat at medium speed until mixture is smooth. Spread on bottom of pie crust.
  • Make the pecan filling: Sprinkle sweet potato filling with pecans. In another bowl, combine sugar, eggs, melted butter, corn syrup, salt, cinnamon and vanilla and beat well. Pour over pecans.
  • Transfer pie to oven and bake for 1 1/2 hours. Cool.
  • Make the chantilly cream: Whip heavy cream with sugar, orange liqueur and Cognac. Top each slice of pie with a dollop of cream.

La Louisiana Pecan Pie image

Steps:

  • Completely pave shell with nutmeats, crowding them in. Chill the shell for at least a half hour. Preheat the oven to 400 degrees.
  • Combine the sugar, syrup and butter in a heavy saucepan. Whisk over low heat just until the butter is melted and ingredients blended. Remove from heat.
  • Beat the eggs with the salt until completely mixed. Beat in lukewarm syrup mixture, then the vanilla and rum.
  • Brush the rim of the shell with cream. Pour in filling mixture. (Pecans will start floating.)
  • Cover the edges of the shell with aluminum foil. Set the pie on lower rack and bake 40 minutes. Cover center with another sheet of foil if it starts to brown too rapidly.
  • Remove foil from the edges and continue to bake 10 to 15 minutes, or until the crust is golden and the filling puffed up. Cool on a wire rack for at least 20 minutes and serve pie warm or at room temperature.

1 unbaked 9-inch pie shell, your favorite pate brisee or rich pastry for custard pies (see recipe)

Baked Yams with Pecan Crumble image

Steps:

  • Place yams into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain and mash; measure out 3 cups of mashed yams.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 2-quart ovenproof casserole dish.
  • Combine mashed yams, brown sugar, eggs, milk, and melted butter in a bowl. Transfer to the prepared casserole dish.
  • Combine pecans, brown sugar, flour, and melted butter in a bowl and mix well. Sprinkle topping over yams.
  • Cover and bake in the preheated oven until heated through, about 1 hour.
