QUICK AND HEALTHY VEGETABLE BEEF SOUP (LOW CARB AND WW FRIENDLY)
Easy, quick and good for you soup. This recipe is actually from a WW website; but for my low carb diet I added some lean ground beef and made some other adaptions. If you are on WW, skip the beef and it's 0 points per serving. If you are watching your sodium intake, use low sodium broth and no added salt tomatoes.

- In a medium to large pot, heat 1/2 tsp olive oil; brown ground beef, onion and garlic.
- Add broth, tomatoes, veggies and seasonings.

LOW CARB HAMBURGER GRAVY
This is a quick low carb dinner which my kids love! I generally serve the gravy over cooked cauliflower that I've semi-mashed up with a fork (to resemble rice) or over low carb noodles. For those who aren't counting their carbs, I serve this over rice or mashed potatoes. I love that it is easy, quick and well received!

- Brown the hamburger over medium high, until there is no pink remaining and then add the celery and mushrooms, stirring and continuing to cook for 2 more minutes. Stir in the flour and let it simmer on low for a couple of minutes, allowing the flour to turn a light golden brown.
- Add the soup mix and beef broth to the ground beef mixture. Stirring continually as it thickens. Once it has thickened remove from heat and add the sour cream, stirring until the sour cream is well blended and the mixture re-thickens.
- Serve over cooked (slightly mashed cauliflower or low carb noodles) or, if you are not counting carbs over rice or mashed potatoes.

- Brown the hamburger in a Dutch Oven, then drain the meat and set aside.
- Brown the bacon, in the same Dutch Oven, drain it, and then return both the bacon and hamburger to the pot. Add the celery, onions, and carrots. Saute until the vegetables are just tender.
- Add basil, broth, broccoli, cauliflower and cook until vegetable are just tender.
- Then add the cheese, heavy cream, pepper, and salt and stir until the cheese melts.
- Turn off heat and add the sour cream.
