- In a 6-qt. stockpot, cook and crumble turkey with green pepper and onion over medium-high heat until no longer pink, 5-7 minutes. Stir in seasonings; cook 1 minute., Stir in tomato sauce, beans, corn, tomato and water; bring to a boil. Reduce heat; simmer, uncovered, to allow flavors to blend, about 10 minutes, stirring occasionally. If desired, serve with cheese. Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little water if necessary.

- Heat olive oil in a saucepan over medium-low heat.
- Add the onions, peppers, carrots, and garlic.
- Cook about 8-10 minutes, stirring frequently, until veggies are tender and onions are golden.
- Add the cumin and chili powder, then stir in the turkey, breaking up the meat.
- Once the turkey is cooked through, add the salsa, black beans, chicken broth, and tomato paste.
- Simmer about 45 minutes over medium heat.
- The chili should thicken as the liquid is reduced.

- Heat oil in heavy large pot over medium heat. Add onions; sauté until light brown and tender, about 10 minutes. Add oregano and cumin; stir 1 minute. Increase heat to medium-high. Add turkey; stir until no longer pink, breaking up with back of spoon. Stir in chili powder, bay leaves, cocoa powder, salt and cinnamon. Add tomatoes with their juices, breaking up with back of spoon. Mix in stock and tomato sauce. Bring to boil. Reduce heat; simmer 45 minutes, stirring occasionally.
- Add beans to chili and simmer until flavors blend, about 10 minutes longer. Discard bay leaves. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium-low heat before continuing.)
- Ladle chili into bowls. Pass red onion, cilantro and yogurt separately.

I know the ingredients sound like an odd combination, but it is delicious and healthy for you. You can make this big batch and freeze some for later.

- Brown the ground turkey and drain. Add the taco seasonings, garlic salt and stir until spices are fragrant.
- Add celery and onions and cook until they are softened.
- Add the remaining ingredients and bring to a boil then turn down to a simmer.
- Cook until the lentils and barley are tender, about an hour or so.
- You may want to add more water so that the chili is the consistency you like.
- This freezes very well.
- One serving is 1 cup.

- First make the meatballs. Tip the mince into a bowl, add the oats, spring onions, spices and the coriander stalks, then lightly knead the ingredients together until well mixed. Shape into 12 ping-pong- sized balls. Heat the oil in a non-stick frying pan, add the meatballs and cook, turning them frequently, until golden. Remove from the pan.
- Tip the onion and garlic into the pan with the pepper and stir-fry until softened. Stir in the cumin and chilli paste, then pour in the stock. Return the meatballs to the pan and cook, covered, over a low heat for 10 mins. Stir in the tomatoes and beans, and cook, uncovered, for a few mins more. Toss the avocado chunks in the lime juice and serve the meatballs topped with the avocado and coriander leaves.

TURKEY BLACK BEAN CHILI
A chef made this at a cooking class in the upstairs room at the supermarket in town. When I looked over the recipe, I thought "I'm not going to like this". When I watched the prep & the end result, I thought "I'm not going to like this". She served it over a combination of white & brown rice with a side salad. Was I ever wrong.
