Steps:
- Cut beef into thin bite-sized slices.
- Combine marinade ingredients in a bowl, add beef and marinade for 20 minutes.
- Set wok over a high heat.
- Add oil and wait until it's almost smoking, then reduce heat to moderate.
- Add beef and ginger and stir-fry for 1-2 minutes and remove with slotted spoon.
- Toss the mango slices in the hot oil then return the beef and ginger to wok along with the spring onions.
- Stir over the heat about 1 minute.
- Serve over rice.

BEEF TOSTADAS WITH MANGO SALSA

Steps:
- Combine the mango, red onion, cilantro, lime juice, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl; set aside.
- Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the ground beef and cook, stirring occasionally, until it starts browning, about 2 minutes. Stir in the tomatoes, chile powder and 3/4 teaspoon salt. Continue to cook until the beef is cooked through and the sauce is slightly reduced, about 2 minutes.
- Divide the beef among the tostadas; top with lettuce, the mango salsa, sour cream and cilantro. Sprinkle with chile powder, if desired. Serve with lime wedges.

This Ken Hom recipe is an example of the "New Hong Kong Cuisine," and fast to prepare too. Hong Kong chefs have adapted mango to new uses, as in this recipe. The soft texture and sweetness of the fruit offer wonderful contrasts to the taste of beef. Delicious to serve as a main course for either a family or a formal meal. Undercook the beef, as it continues to cook enough after it is removed from the wok.

Steps:
- Cut the beef into thick 1/4 in x 2 in slices and put them into a bowl.
- Add the light soy sauce, rice wine or dry sherry, and cornstarch and mix well.
- Peel and cut the mangoes into thick slices.
- Heat a wok or large frying pan until it is very hot, then pour in the oil.
- Add the beef and stir-fry for 2 minutes to brown.
- Add the soy sauces and rice wine and stir-fry for 30 seconds. Then add the mangoes and heat through.
- Give the mixture a final turn and serve at once.

- In a Dutch oven, heat peanut oil over low heat. Add curry paste; cook and stir 3-5 minutes. Add coconut milk; cook and stir 3-5 minutes longer. , Stir in beef, mango, salt and pepper. Increase heat to medium-high; bring to a boil. Reduce heat; simmer, uncovered, stirring occasionally, until meat is tender, about 2 hours. MONGOLIAN BEEF
This is another American-born Chinese dish that is part of our wok vocabulary. I will always firmly believe that dishes, like Mongolian beef and California roll, that were born in the States are authentic dishes. The secret to tender meat in the wok is the marinade. You will see this in many of my recipes. Baking soda tenderizes the meat, cornstarch and water create a slurry that brings in the baking soda and oil pre-lubricates the meat and keeps us from using too much oil in the wok.

- For the beef: Slice the flank steak across the grain into 3/4-inch (19 millimeters)-thick slices on an angle to make planks then cut the planks into 3/4-inch (19 millimeters) cubes. Combine the cornstarch, baking soda and salt with 2 tablespoons of water in a small bowl and set aside. Place the steak in a shallow bowl and add the water, vegetable, and cornstarch mixture. Massage all the ingredients into the meat. Cover and refrigerate for 2 to 12 hours.
- For the sauce: Combine the oyster sauce, hoisin sauce, soy sauce, cornstarch, vinegar, garlic and half the ginger in a small bowl and set aside.
- For the stir-fry: Heat the oil to medium-high in a wok or medium saute pan. Stir in the beef and cook to medium-rare, stirring constantly, about 3 minutes. Drain off excess oil. Add the garlic and remaining ginger and saute 20 to 30 seconds. Stir in the bell peppers and onions and let them cook until the edges of the onion and bell peppers begin to brown, about 2 minutes. Add the scallion whites, dried chilies and sauce, stir constantly and let it cook for about 2 minutes, until the sauce thickens.
- Transfer to a platter and garnish with the scallion greens.
BEEF AND MANGO FAJITAS

Steps:
- Place steak in a ziploc bag.
- Stir together oil, lime juice, fajita seasoning and oregano, reserving 2 tablespoons.
- Pour remaining mixture into bag with meat.
- Refrigerate for 4-24 hours, turning bag occasionally.
- Preheat grill to medium.
- Place onions on an 18-inch square of aluminum foil.
- Drizzle with reserved lime mixture.
- Bring up two opposite sides of the foil and seal with a double fold.
- Fold remaining ends to completely enclose, leaving space for steam to expand.
- Wrap tortillas tightly in aluminum foil.
- Drain steaks and discard marinade.
- Grill steak for 14-18 minutes for medium-rare (or longer to desired doneness).
- Add package of onions to grill during the last 10 minutes of grilling.
- Add wrapped tortillas to grill during the last 5 minutes of grilling.
- Thinly slice meat and serve with onions and sliced mango in warm tortillas.

- In a large bowl, whisk together mustard, lime juice, and oil; season with salt and pepper. Add onion, bell pepper, and mango; toss to combine. Set aside.
- Lay tortillas on a work surface; dividing evenly, line each with spinach, leaving a 1-inch border all around. Arrange beef slices down center of each wrap. Top beef with mango mixture and any juices from bowl.
- Fold in 2 opposite sides, and roll up wraps tightly; cut in half.
- For Black Bean Relish: In a medium bowl, combine 1/2 medium red onion, finely chopped, one can (15.5 ounces) black beans, rinsed and drained 1 cup chopped fresh cilantro, 2 tablespoons fresh lime juice, and 1 tablespoon olive oil. Season with salt and pepper.

CHINESE BEEF AND MANGO STIR FRY
This is a pretty well known Chinese recipe. I saw it on TV, but I've made a couple changes. For instance, the recipe originally called for grated orange peel, but when I first made the recipe I didn't have any oranges, so instead of using orange peels I added just a splash of triple sec. It came out very good and now I use it all the time.

- Combine sugar, soy sauce, garlic, and triple sec in a large bowl an mix well.
- Add meat, combine and coat. Cover and refrigerate 1 to 4 hours.
- Drain meat, reserving marinade. Add cornstarch to reserved marinated and mix until blended; set aside.
- Add oil to a large wok or skillet and bring to medium heat.
- Stir fry steak for 3 minutes or until almost cooked through.
- Add broccoli and stir fry for another 3 minutes, or until tender.
- Add reserved marinade and mango and bring to a boil.
- Stir constantly for two minutes or until sauce thickens and coats the meat.
- Add chili powder. Season to taste with pepper.
- Serve over cooked rice.
