MY MOM'S LASAGNA

Steps:
- Preheat the oven to 375 degrees F.
- Place a large saute pan over medium-high heat and add the beef and sausage. Cook, stirring occasionally, until it begins to brown, about 2 minutes. Add the onions, garlic and dried oregano and cook until they are softened and the meat is cooked through, 3 to 4 minutes. Stir in the tomato paste and toast for 30 seconds, then add the tomatoes and cook until the sauce has thickened slightly, about 5 minutes. Remove from the heat and set aside.
- Beat the eggs in a large bowl. Add the ricotta, 1 cup mozzarella, 1/3 cup Parmesan, fresh basil and oregano, salt and pepper and stir to combine.
- Spread a thin layer of sauce on the bottom of a 9-by-13-inch baking dish. Arrange a layer of noodles over the sauce and top with a third of the ricotta filling. Spoon over a layer of sauce and top with another layer of noodles. Continue with 2 more layers of ricotta, sauce and noodles, ending with a top layer of noodles. Spoon a thin layer of the remaining sauce over the top, sprinkle the remaining mozzarella and Parmesan over the noodles and cover with aluminum foil.
- Bake for 45 minutes, then uncover and cook until the cheese is golden and the lasagna is bubbling, another 15 to 20 minutes. Let stand for 10 to 15 minutes before serving.
EASY LASAGNA - NO RICOTTA
My husband refuses to eat anything with Ricotta Cheese. I tried several different versions and this was his favorite. Now, it's the only lasagna I fix.

- Preheat oven to 400. Cook lasagna noodles according to package directions. Meanwhile, cook ground beef, onion, garlic, and pepper in skillet until beef is browned; drain.
- Return beef to skillet and add the spaghetti sauce, water, parmesan cheese, and 1 cup of the mozzarella. Stir to mix.
- Lightly spray 9x13 glass baking dish with cooking spray. Place 3 lasagna noodles in bottom. Add 1/3 of the meat mixture. Repeat layers twice, ending with a layer of the meat mixture on the top.
- Sprinkle remaining 1/2 cup mozzarella on top. Bake uncovered for 30 minutes.

- Heat oven to 350.
- Cook and drain beef. Add spaghetti sauce and, simmer about 10 minutes.
- Mix together cottage cheese, ½ of the mixed shredded cheese, eggs, salt and pepper.
- Pour about a cup of sauce of bottom of a 13x9 inch baking dish. Arrange 3 UNCOOKED lasagna noodles lengthwise over sauce and cover with another cup of sauce. Spread ½ cheese filling over sauce. Repeat with layer of lasagna, sauce and cheese mix. Top with layer of lasagna and remaining sauce, sprinkle with mixed cheese.
- Cover with foil. Bake 45 minutes. Remove foil; bake additional 10 minutes or until hot and bubbly. Let stand 10 minutes before cutting.

LASAGNA - NO BOIL

Steps:
- 1. Preheat oven to 350°F. In a large skillet, brown both types of meat. Drain.
- 2. Add back to the skillet. Add sauce and bring to a boil. Set aside.
- 3. In a bowl, mix together cottage cheese, half of the mozzarella (I use 2 cups here), Parmesan, eggs, salt, and pepper.
- 4. Spread 1 cup sauce over the bottom of 13X9X2" baking dish.
- 5. Arrange 3 uncooked lasagna noodles lengthwise over sauce.
- 6. Spread one-half of the cheese filling over lasagna.
- 7. Then another cup of sauce.
- 8. Then sprinkle mozzarella over the sauce.
- 9. Repeat layers of lasagna, cheese filling, sauce, and mozzarella.
- 10. Place last 3 pieces of lasagna noodles.
- 11. Then remaining sauce.
- 12. Cover tightly with foil and bake 45 minutes.
- 13. Remove foil. Sprinkle on enough mozzarella to cover the top layer. Bake an additional 15 minutes, uncovered.
- 14. Remove from oven. Let stand 10 minutes before cutting.
MY MOM'S LASAGNA (NO RICOTTA)
Mom worked and had a house full of picky eaters, so most of what she cooked was low fuss and no frills. You can add fennel seed or red pepper flakes to the sauce if you like.

- Meanwhile, brown ground beef in a large skillet; drain fat.
- Sprinkle meat with onion powder.
- Add spaghetti sauce, tomato sauce and Italian seasoning.
- Mix well. Set aside.
- Drain noodles.
- Spray a 13 x 9 inch baking pan with cooking spray.
- Add a layer of sauce to pan.
- Top sauce with 3 lasagna noodles.
- Top noodles with more sauce.
- Top sauce with enough mozzarella cheese slices to cover in a single layer (6 slices).
- Top cheese with 3 more noodles, sauce, 6 more cheese slices.
- Top cheese with remaining 3 noodles and sauce.
- Sprinkle with Parmesan cheese. Top Parmesan with the shredded mozzarella cheese.
- Bake 35 to 45 minutes (watch closely after 30 minutes to make sure cheese does not over brown).
- Let sit 10-15 minutes before serving.

BARILLA NO-BOIL LASAGNA
This is the best lasagna ever!! The noodles are so nice and thin and there is NO PREBOILING!! I will never purchase any other lasagna other than Barilla. I've been making this now for 3 years and everyone agrees--the recipe makes the very best! The instructions are right on the back of the lasagna box. I usually make multiple batches and freeze them. Its a great housewarming or "new baby" meal for a friend!

- Preheat oven to 375.
- In bowl, combine beaten eggs, ricotta cheese and TWO cups of the mozzarella cheese and parmesan.
- If you choose not to use the parmesan, just add more mozzarella.
- Set aside.
- In a 13X9X3 pan, spread 1 cup of sauce on bottom of pan.
- Layer in the order, 4 uncooked lasagna noodles (they will overlap), then 1/3 part of the ricotta cheese mixture, half the browned meat, 1 cup mozzarella cheese, and 1 cup of spaghetti sauce.
- Next layer, 4 uncooked lasagna noodles, 1/3 part of the ricotta cheese mixture, and 1 1/2 Cups sauce.
- Next layer, 4 uncooked lasagna noodles, remaining ricotta mixture and remained meat, 1 cup of sauce.
- For top layer, 4 uncooked lasagna noodles, remaining sauce, and remaining 1 cup mozzarella.
- Bake covered with foil for 50-60 minutes.
- Uncover and continue cooking until all the cheese is melted on the top (about 5 minutes).
- Let stand 15 minutes before serving.
- If you are using a 13X9X2 pan---just make 3 layers to avoid boiling over.

- In a large kettle or Dutch oven, cook beef, sausage and onion until meat is no longer pink and onion is tender; drain. Stir in the next 10 ingredients. Bring to a boil. - Prepare vegetables: Peel skin off onion and dice. Cut off stem of garlic clove and finely mince. Leave skin on carrots (for flavor and nutrients). Cut off stem, slice lengthwise, and cut into 1-inch thick "sticks". Clean mushrooms with paper towel if needed, then roughly chopped in small pieces.
- Roast peppers and carrots: Preheat oven to 425F. Lay mini bell peppers and carrots on sheet pan, drizzle with 2 teaspoons oil and pinch of salt. Toss in oil, and bake for 20 minutes - flip halfway through. Lower oven to 325F and roast additional 10 minutes.
