MACARONI SALAD FOR A CROWD
Basic and super easy macaroni salad that I make for family gatherings. I make mine with dill relish but you could change it if you prefer the sweet. Looks good and tastes even better the next day. The more you make it, the quicker you will get. Can be served right away, or make it ahead of time and keep it in the fridge.

- Bring a large pot of lightly salted water to a boil. Place macaroni in the pot, cook for 8 to 10 minutes, until al dente, and drain.
- In a large bowl, toss the cooked pasta, grated eggs, olives, onion, and relish with some of the liquid. Mix in mustard and mayonnaise, increasing the amount of mayonnaise as desired. Season with salt and pepper. Top with sliced eggs, and sprinkle with paprika to serve.

SOUTHERN TUNA MACARONI SALAD
Creamy from eggs and mayonnaise, tangy and acidic from mustard, pickles and chow chow, with a nice crunch from celery and onion. The Cajun spice just rounds it out with a blend of spices, the pimentos add a pop of color and sweetness, and tuna complements and ties all the flavors together in this Southern macaroni salad. Could top with some parsley for added color! Put this in a tortilla or melt some cheese on toast and make an open-faced sandwich!

- Place diced onion in a large bowl and cover with cold water. Let sit for 5 minutes. Drain into a colander.
- While onion soaks, bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain into the same colander as red onion and run under cold water to stop cooking and cool to room temperature.
- Place mayonnaise, pimentos, relish, chow-chow, mustard, Cajun seasoning, and salt in a large bowl and stir to combine. Add pasta, red onion, and celery and stir to combine. Gently fold in tuna and eggs to combine.

- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain. Rinse macaroni with cold water until chilled; drain.
- Mix mayonnaise, white vinegar, seasoned salt, sugar, garlic powder, and black pepper in a large bowl with a whisk until smooth. - Cook elbow macaroni per package directions; drain and rinse in cold water.
- While the macaroni is cooking, chop the onion and seed and chop the cucumber.
- In a large bowl, whisk together the mayonnaise, vinegar, sugar, seasoned salt, and black pepper. Stir in the drained chunk light tuna,baby shrimp,chopped onion and chopped cucumber and mix all ingredients thoroughly. Chop 4 of the hard boiled eggs and add to the mixture. Stir in the drained elbow macaroni. This may seem to be "runny" initially but it firms up nicely as it cools. Slice the remaining 2 hard boiled eggs and place on top; garnish the top of the salad by sprinkling with paprika. Cover and place in the refrigerator and allow it to cool for at least 1-2 hours prior to serving; ideally chilling it overnight is better so the flavors can mingle.

- Cook macaroni according to package directions to "al dente". Drain noodles saving 1-2 cups of the pasta water. Place in a bowl to cool. Toss noodles with peas, cider vinegar and salt and pepper.Allow to cool to room temperature. Toss with some of the pasta water a little at a time if noodles become too dry and sticky while cooling.
- In a small bowl, combine mayonnaise and sour cream. Add to cooled noodles. Stir until evenly coated. Add tuna and stir until well combined. Add additional salt and pepper to taste, if needed.
- Peel and chop (or slice) hard boiled eggs. Stir into the macaroni salad of place on top for presentation. Garnish with green onion (optional) and serve.
