MOM'S BEST MEAT LOAF
This is no ordinary meat loaf - the recipe is so good it's been passed down in our family for three generations. The zesty seasoning gives the flavor a spark. I remember Mom's delicious meals. She loved to serve this meat loaf. -Linda Nilsen, Anoka, Minnesota

MOM'S FAMOUS MEATLOAF
Yeah, I know...there's tons of meatloaf recipes out there, but I bet this is one of the easiest ones with lots of taste out there! I got this from a Kraft recipe booklet I got in the mail that I've tweaked a bit and it's pretty simple yet yummy.

Steps:
- Heat oven to 375 degrees.
- In bowl, mix all ingredients except for 1/4 cup of the BBQ sauce. I use Sweet Baby Ray's.
- Line glass cake pan with tin foil.
- Put meat mixture into pan and shape into a loaf.
- Cover loaf with rest of BBQ sauce.
- Bake for 1.5 hours or until there's an internal temperature of 160 degrees.
- I usually make this and freeze it for members of my church who are sick and need help with cooking, so if it is frozen, it will need to be put in the oven (about the same temp.) for around 30-40 minute.

Season the mixture with salt and pepper. Shape the mixture into a loaf and place on the prepared pan. Pour the stock over the top and place in the oven. Place in the oven and bake for about 1 to 1 1/2 hours, basting occasionally. Remove the pan from the oven. Using a long spatula, remove the meat loaf from the pan. Place the roasting pan on the stove, over high heat. In a small bowl, whisk the flour with 2 tablespoons water. Whisk the slurry into the gravy. Bring the liquid to a boil and cook for few minutes, stirring constantly. Season the gravy with salt and pepper. Slice the meatloaf in to 8 pieces. Serve two slices of meat loaf per person with a spoonful of gravy.

Steps:
- 1. Preheat the oven to 350°F.
- 2. Put the beef, veal, and pork into a bowl and kneed them together.
- 3. Pour the milk into a bowl and soak the bread in it, squeezing it into a paste. Add the soaked bread to the bowl with the meat and work them together as though you were kneading dough. Add the cheese, garlic, onion, eggs, oregano, and parsley. Season with salt and pepper and knead again until well incorporated.
- 4. Oil a large roasting pan with the olive oil. Form the meat mixture into a large loaf in the center of a roasting pan.
- 5. Stir in the plum tomatoes, tomato paste, and 1 cup water together in a bowl and pour the mixture evenly over the meatloaf. Scatter the carrots and celery in the pan around the loaf.
- 6. Put the pan in the oven and bake until a skewer inserted in the center of the loaf comes out warm, about 1 1/2 hours. If the loaf begins to look dry while cooking, tent it with aluminum foil. Remove the pan from the oven and let it cool slightly.
- 7. Slice the meatloaf into servings, put 1 serving on each plate and spoon pan gravy and vegetables over and around the meatloaf.
- Your Nightly Specials
- You can make the loaf with beef and veal only, or with just beef.
- Lay some raw bacon strips over the loaf before baking. (This was one way my mother made her meatloaf extra special.)
- Add some sautéed mushrooms to the pan during the last 20 minutes of cooking.
