Steps:

  • Cook 2 bunches jumbo asparagus (trimmed and peeled) in salted boiling water until crisp-tender, about 3 minutes; drain. Combine 2 egg yolks and 1 tablespoon each lemon juice and hot water in a heatproof bowl set over a saucepan of simmering water. Cook, whisking constantly, until thickened, 1 to 3 minutes (remove from the heat if the eggs start to scramble). Gradually whisk in 1 1/2 sticks cut-up butter until thickened, 3 to 5 minutes. Whisk in 4 teaspoons whole-grain mustard; season with salt and cayenne. Thin with lemon juice as needed. Serve over the asparagus.

Steps:

  • Put a large platter in the oven to warm up. Gently melt the butter in a small saucepan over a low heat, then stir in the sea salt, spices and peppercorns. Remove from the heat.
  • To cook the asparagus, bring a little salted water (about 5cm deep) to the boil in a saucepan, making sure the saucepan is wide enough to fit the asparagus laying flat without crowding it. Add the asparagus and poach for 2-3 mins, or until a knife inserted into the thickest part of a spear can be pulled out with no resistance.
  • Meanwhile, return the spiced butter pan to the heat, then add the shrimp, wild garlic or herbs and lemon juice, basting the shrimps well. Taste and season, if necessary. Drain the asparagus and pile onto the warm platter, then pour over the shrimps and spiced butter. Garnish with the flowers, if using, then serve with chunks of crusty bread.

  • Pour cream into a large saucepan, and bring to a simmer over low heat. Pull saucepan almost off burner, and reduce cream until thickened and measures about 2 1/2 cups, whisking frequently, 30 minutes. Pour hot cream into 4-cup glass measurer, and set aside.
  • In the same saucepan, melt butter over low heat until foamy. Add sugars and corn syrup, and stir with wooden spoon until melted and bubbly, about 1 minute. Pour cream into saucepan, whisking constantly, until sugars have dissolved completely and sauce is smooth, about 1 minute. Remove pan from heat. Add salt, vanilla and rum. Serve warm. To reheat sauce, warm in a saucepan over low heat, stirring constantly. Do not boil.

  • Snap off and discard the tough bottoms of the asparagus spears. If using large, thick asparagus, peel the lower ends with a vegetable peeler.
  • Put butter in a wide skillet over medium-high heat. Add asparagus in one layer and season with salt and pepper. Add 1/2 cup water, cover, and bring to a simmer. Cook until the asparagus is firm-tender, about 3 minutes. Take care not to overcook them; they should still be bright green. (They will continue to cook a bit once the heat is off.) Remove the asparagus from the pan and place on a serving platter.
  • Turn heat to high and simmer briskly until most of the liquid has evaporated, a minute or so. Add lemon juice and zest to the buttery juices. Mustard And Chive Butter Garnish With Asparagus image

Steps:

  • Fill a medium bowl with ice water, and set aside. Bring 5 cups water to boil in medium saucepan. Add 2 teaspoons kosher salt and asparagus. Cook until tender, 30 to 45 seconds. Using slotted spoon, transfer asparagus to ice water very briefly, remove, and dry on paper towels. Set aside.
  • Combine butter, mustard, chives, pepper and a pinch of kosher salt in small bowl, and mix with fork until light and fluffy. Scrape butter onto 6-inch square of plastic wrap, roll tightly into log about 1 inch in diameter, and refrigerate until firm. Thirty minutes before serving, remove butter from refrigerator, slice into four medallions, cover lightly, and set aside.
  • Warm blanched asparagus pieces briefly in hot water. Place hot torn toast in 4 small bowls. Drain asparagus, and sprinkle over toast or place in 4 cocktail glasses.
  • To assemble, place 2 eggs on top of toast in bowls or in glasses (with toast on the side). Splash with Cognac. Drop butter medallions onto each portion, and serve.

  • First, a note on beets: they'll stain anything! Make sure you wear gloves as you're peeling the beets unless you want your hands to be an attractive magenta color!
  • Place the quartered beets in a large saucepan and cover with cold water. Place over medium high heat and bring to a boil. Immediately lower the heat to medium and let the beets cook for about 20 minutes or just until fork tender. Drain the beets and run them under cold water. Drain and set aside. As you're doing this, get another pot of water boiling and drop the prepped asparagus into it for just 2 minutes. Drain the asparagus and run it under cold water immediately. This is called blanching. Drain and add to the beets.
  • In yet another saucepan, add the water, orange blossom water, sugar and lemon juice. Bring to a boil, reduce the heat to medium and simmer until the glaze has reduced by half and has thickened slightly. Toss with the vegetables, and add the roughly chopped garlic chives. Top with the chive blossoms and crumbled goat cheese and serve as a first course on a bed of mixed greens.

  • Mix mayonnaise, chives and Dijon mustard in small bowl. Season with generous amount of pepper. Spread 1 side of each bread slice with mayonnaise mixture. Divide cheddar cheese among 4 bread slices, then top with remaining bread, mayonnaise side down.
  • Preheat oven to 250°F. Melt 2 tablespoons butter in griddle or heavy large skillet over medium heat. Add 2 sandwiches; turn to coat with butter. Cook until golden on each side and cheese melts, about 5 minutes per side. Transfer to baking sheet. Keep warm in oven. Repeat with remaining 2 tablespoons butter and remaining sandwiches.

Steps:

  • Heat oven to 425 degrees. Place bacon in a 12-inch sauté pan over medium heat and cook about 2 minutes. Add onion and sauté, stirring frequently, until bacon is crisp and onion is golden, about 5 minutes. Add potatoes, bay leaf, salt and pepper and sauté, stirring, for 2 minutes. Add cabbage and sauté, stirring frequently until cabbage wilts a bit, about 5 minutes.
  • Turn cabbage mixture into a shallow 1 1/2 or 2-quart casserole dish. Pour cream into sauté pan and reduce over high heat, stirring constantly with a wooden spoon until cream is reduced by half, about 2 minutes. Pour cream over cabbage and stir to mix. Cover casserole with foil. Bake 10 minutes.
  • Meanwhile, melt butter in a 10-inch skillet over low heat. When it is foamy, add bread crumbs and sauté, stirring constantly with a wooden spoon, until crisp and golden, 5 to 7 minutes. Remove from heat, add garlic, salt, cayenne pepper, mustard and parsley, stirring well to combine. Sprinkle casserole with cheese, then with bread crumbs, and return to oven uncovered. Bake until fragrant and bubbling slightly around edges, about 5 minutes. Serve as a side dish to roast fowl, pork or meaty fish like monk or halibut.
