QUESADILLAS I
A delicious, cheesy pre-dinner treat. I like to make quesadillas without butter, but you could put butter in the frying pan before placing the tortilla in. Serve with sour cream and salsa.

Steps:
- Heat a large frying pan or griddle over a medium heat. Place one tortilla flat on the frying pan. After 1 minute flip the tortilla over. Sprinkle a little more than 1/4 cup cheese on the tortilla, followed by some olives, avocado, and hot pepper sauce. Place another tortilla on top to make a sandwich. Cover the quesadilla with a lid. After one minute, flip the quesadilla. When the cheese has melted on the inside, remove the quesadilla. Repeat with remaining ingredients.
- Cut the quesadillas into triangles and serve.

Steps:
- Heat a skillet and spray with cooking spray over medium heat.
- In a bowl, combine chicken and hot sauce.
- Place 1 tortilla on your skillet, sprinkle cheese all over the tortilla, add the chicken and cover with another tortilla.
- Cook on each side for about 1 minutes or until golden brown.
- Repeat with the last 2 tortillas.
- Cut the quesadillas into fourths and serve!
- Enjoy with your amigos, you will always want to make more!

- Place the tortillas on a flat clean surface. Spread a layer of refried beans and smashed avocado on half of the tortilla. Sprinkle with salt and pepper, to taste. Sprinkle a small handful of shredded cheese over the beans and avocado. Add cooked veggies and a little chopped cilantro. Sprinkle with a little exrta cheese, this will help glue the tortilla together. Fold half of the tortilla over the filling and gently press.
- Heat a non-stick pan, cast iron pan, or griddle over medium-low heat. Cook one side of the quesadilla for 3 to 4 minutes or until golden brown. Use a spatula to remove the quesadilla from the pan. Sprinkle 2 to 3 tablespoons of shredded cheese in the hot pan. Place the uncooked side of the tortilla directly onto the cheese and cook for an additional 3 to 4 minutes or until the quesadilla is golden brown with a cheesy crust.
- Remove from the heat and let cool for 2 minutes. Cut into triangles, if desired. Serve warm with your favorite toppings.
