Steps:
- Stir together yeast and warm water in mixer bowl and let stand until foamy, about 5 minutes. (If mixture doesn't foam, start over with new yeast.)
- Add 2 cups flour, 2/3 cup sugar, salt, yogurt, egg, zest, and vanilla to yeast mixture and mix at medium-low speed 1 minute. Beat in 1 stick butter, 1 Tbsp at a time, until incorporated. Beat at medium speed until dough is smooth and shiny, about 5 minutes. (Dough will be very sticky.) Scrape down side of bowl and sprinkle dough with remaining 2 tablespoons flour. Cover bowl with a kitchen towel (not terry cloth) and let dough rise in a draft-free place at warm room temperature until doubled, 1 1/2 to 2 hours.
- Spread remaining 2 tablespoons butter in bottom of a 9-inch square baking pan and sprinkle with remaining 1/3 cup sugar. Cut each plum half into 5 or 6 slices and arrange in 1 layer pan.
- Stir dough until flour is incorporated, then spread evenly over plums. Loosely cover with buttered plastic wrap, then kitchen towel. Let rise in a draft-free place at warm room temperature until almost doubled, about 1 1/2 hours.
- Preheat oven to 375°F with rack in middle.
- Bake until kuchen is golden-brown and a wooden pick inserted into center comes out clean, 30 to 35 minutes. Cool in pan 5 minutes, then invert and unmold onto a rack to cool completely.
NANA'S FASTNACHTS
These are similar to doughnuts but much tastier! They are usually made on Shrove Tuesday (Fat Tuesday).

- Warm the milk in a small saucepan until it bubbles, then remove from heat. Let cool until lukewarm. In a small bowl, proof the yeast by adding the warm water to the yeast. Let stand 10 minutes.
- In a large bowl mix together the teaspoon of sugar and 3 cups of the flour. Stir in milk until smooth. Add proofed yeast and mix well. Cover and let rise until doubled in size.
- Stir in beaten eggs, melted butter or margarine, one cup of sugar, salt, and enough of the remaining flour to make a stiff dough. Cover and let rise for a second time until doubled.
- Punch down dough and divide into 2 portions. On a lightly floured surface, roll out dough to 1/2 inch thickness. Cut dough with a biscuit cutter. Make 2 slits with a sharp knife in the middle of each doughnut. Cover and let rise a third time until doubled in size.
- Deep fat fry in oil or lard for 3 to 4 minutes on each side until lightly browned. Rotate to ensure even cooking. Drain on brown paper bags. Toss in confectioners sugar while still warm.

- 1. Soak the yeast in the 2/3 cup water with the one tablespoon sugar. Let set 10 minutes. In a large bowl, mix the shortening, sugar and eggs with a mixer. Add in the salt and scalded milk. Add in the yeast mixture.
- 2. Mix in 3 cups flour. Add remaining flour a little at a time to make a soft dough. Grease a large bowl as you usually do for rising dough and place dough in bowl, flip the dough over to grease the top. Cover with a tea towel and let rise in a warm place until doubled--at least 1-2 hours.
- 3. While dough is rising, combine all ingredients for custard topping in 2 quart saucepan and cook over medium heat, stirring constantly until thick. Be sure to stir it constantly as it will burn. Remove from heat and let cool to room temperature.
- 4. Once dough has risen, punch down dough and make into kuchens. I divide the dough in half and then divide each half into fourths. Grease 8 9-inch pie pans. I use non-stick spray. Form each piece of dough into ball and then press dough out and up sides of greased pans.
- 5. Add fruit filling to each kuchen. I use any of the following: cherry pie filling, cooked prunes, fresh sliced peaches or peach pie filling as well as cottage cheese filling. Top each kuchen with a few spoons full of the now cooled custard filling and spread across fruit. Sprinkle with cinnamon. Let kuchen rise 10 minutes.
- 6. Bake about 20 minutes at 350 or until edges are a light golden brown. Remove from pan and let cool on wire rack. As soon as you remove the kuchen from the oven, brush the edges with melted butter to keep them soft. You can leave them in the pans to cool. If I bake these in foil pans, then I just let them cool in the pan. Cover and store in refrigerator or place in ziplock bag and freeze. These freeze well and will taste great reheated in the oven or microwave.
NAAN
This recipe makes the best naan I have tasted outside of an Indian restaurant. I can't make enough of it for my family. I serve it with shish kabobs, but I think they would eat it plain.

- In a large bowl, dissolve yeast in warm water. Let stand about 10 minutes, until frothy. Stir in sugar, milk, egg, salt, and enough flour to make a soft dough. Knead for 6 to 8 minutes on a lightly floured surface, or until smooth. Place dough in a well oiled bowl, cover with a damp cloth, and set aside to rise. Let it rise 1 hour, until the dough has doubled in volume.
- Punch down dough, and knead in garlic. Pinch off small handfuls of dough about the size of a golf ball. Roll into balls, and place on a tray. Cover with a towel, and allow to rise until doubled in size, about 30 minutes.
- During the second rising, preheat grill to high heat.
- At grill side, roll one ball of dough out into a thin circle. Lightly oil grill. Place dough on grill, and cook for 2 to 3 minutes, or until puffy and lightly browned. Brush uncooked side with butter, and turn over. Brush cooked side with butter, and cook until browned, another 2 to 4 minutes. Remove from grill, and continue the process until all the naan has been prepared.

- 1. Dough- Scald milk and add butter, sugar, and salt. Dissolve yeast in warm water in seperate bowl and then add to milk mixture. Beat in eggs and then flour. Cover and let rise until doubled. About an hour. Punch down and divide into 5 pieces. Roll out into desired shape and let rise 30 minutes. Then choose your topping. I used a 9" round cake pan for mine.
- 2. Cinnamon Topping: Use a pastry blender to mix butter and brown sugar and flour. Add cinnamon and sprinkle over dough after it rises the second time. Dot with Butter if desired. Bake at 375 for 20 minutes.
- 3. Cherry Topping: Heat can of dark cherry pie filling and spread on crust after it rises second time. Bake for 20 minutes at 375.
- 4. Cheese Topping; Mix cottage cheese, egg and sugar in blender intil creamy. Heat slowly until warm on stove. Pour on dough after rises second time. Bake at 375 for 25 minutes.
- 5. Butter Topping: Beat together sugar, eggs, and vanilla. Slowly beat in oil. Add oil too fast and it will curdle. Heat on top of stove until hot and pour on crust after second rising. Bake 25 minutes at 375.
- 6. Apple Topping: Peel and slice thinly 3 apples. Sprinkle with cinnamon and sugar and nutmeg to taste. Roll this dough out in a rectangle. Fill the center with apples and dot with butter. Bake 20 minutes at 375.
NANA'S YEAST DOUGH (KUCHEN)

- Yeast Dough: Combine flour, soda, salt and yeast in bowl. Cut in oleo. Stir in egg yolks and softened sour cream. Turn out on floured board and knead into dough. Refrigerate dough overnight in a covered bowl.
- Next Day - Prepare Filling: Melt oleo, add in remaining filling ingredients. Egg whites and additional milk are optional.
- Assemble Nut Roll: Grease Jelly Roll pans (3) Cut dough into 3 pieces. Roll each dough piece out flat on a powdered sugared cloth ~ 18". Spread melted Crisco on dough. Top dough with 1/3 nut filling mixture.
- Roll up lengthwise and seal ends and seam with the melted Crisco. Place roll on greased pan, seam side down. Let raise in a warm place (covered) for 30 minutes.
- Bake at 375 degrees for 30 minutes....check crust after 20 minutes. Freeze after baking.
