OLD FASHIONED BOILED SALAD DRESSING
This is my grandmother's recipe for the salad dressing she used instead of mayonaise. (I never tasted mayo until I was a teenager). We used it in pasta salads, egg and tuna salads and sandwiches. I still don't eat BLTs without the tang of this dressing. Grandma made hers on the stovetop and had to stir constantly to avoid scorching. I now do mine in the microwave and no longer have to worry about that.

Steps:
- In microwave safe bowl mix sugar, cornstarch and salt.
- Whisk in the egg, vinegar, water and mustard.
- Microwave on high for 3 minutes then stir.
- Microwave again on high for 1 minute then stir and repeat in 1 minute increments until dressing comes to a boil and thickens - about 5 - 6 minutes total cook time. (It will continue to thicken as it cools).
- Add butter.
- Store in refrigerator.
OLD FASHIONED SALAD DRESSING

- Mix ingredients well and set aside for a few days.
- The longer this sits the better because as the dressing ages it gets thicker and thicker.
- This is a sweet and sour dressing and may be used on fruit salads, especially Waldorf, cabbage slaw, carrot and raisin, or even poured over head lettuce.

OLD FASHIONED APPLE SALAD WITH COOKED DRESSING
This was my grandmother's recipe, passed down from her mother. The cooked dressing is so fantastic that it is hard to save some for the apple salad once you taste it. It is similar to a lightly sweetened lemon curd. Scrumptious! Grapes or raisins can be added also.

Steps:
- Combine all the dressing ingredients in a saucepan (sometimes I add the raisins in also, so they plump up before they go into the salad).
- Cook over low/medium low heat, while stirring constantly, until thickened and somewhat gloppy.
- Allow to cool (I put it in a bowl and stick it in the freezer for about 15 minutes, stirring occasionally).
- Mix together the salad ingredients (don't forget to toss in some extra lemon juice to keep the apples from browning).
- Pour the dressing over the salad and stir together (the dressing is a little gluey, so you will have to work it into the salad).
OLD FASHIONED POTATO SALAD
I'm not a fan of red pepper in my potato salad but if you are, by all means add it. I prefer to add the carrot mainly for the colour. You can use white or red potatoes for this recipe.

- In large pot, cook potatoes over high heat using 1 tablespoon of salt added to just enough water to cover the potatoes. Boil until tender when pierced with a knife. Drain. Half or quarter potatoes as desired and set aside.
- Hard boil eggs and cool. Peel and dice 2 of the eggs into 1/4 inch cubes. Slice the 3rd egg into 1/4 inch rounds and set aside for the garnish.
- Combine diced egg, mayonnaise, celery seed, mustard, 2 teaspoons of salt and black pepper in a large bowl and whisk to combine.
- Add reserved potatoes to mayonnaise mixture. Add celery, red pepper, carrot, pickle, green onions and chopped parsley. Stir to combine.
- Chill for 30 minutes or longer. Garnish with paprika and reserved hardboiled egg slices.

OLD FASHIONED SEAFOOD SALAD
My husband's grandmother made a salad like this - and the whole family loved it. I was pretty skeptical but... I like it.

Steps:
- Melt butter in a frypan.
- Place fish in frypan and pour hot water over fish.
- Bring to a simmer, cover, lower heat and cook gently for 10 minutes.
- Meanwhile slice the 4 hard cooked eggs and the pickles.
- Drain fish, cool and cut into cubes.
- Prepare salad sauce by blending mayonnaise, sour cream, lemon juice, mustard, salt, and pepper.
- In a separate bowl gently mix fish, egg and pickle slices and capers.
- Arrange fish mixture in individual dishes and spoon salad sauce over tops.
- Chill for 30 minutes.
- To garnish, cut remaining egg into eight pieces and chop beet slices.
- Arrange garnish on each serving. Serve immediately.

- In the bottom of a double boiler (medium saucepan) add 1” of water and turn the heat to medium.
- In the top bowl of the double boiler (glass bowl that can rest slightly in the saucepan but not touch the water) add the mustard powder, sugar, salt, flour and water. Whisk to combine.
- In a small bowl whisk together the egg yolks and vinegar. Pour that into the water mixture and whisk.
