- Preheat oven to 425°F.
- Combine ingredients thoroughly using whisk.
- Pour into pie shell.
- Bake at 425°F for 10 minutes, reduce heat to 325°F, and bake for 45-55 minutes more, wrapping edges of pie crust with foil, if necessary, to prevent excessive browning (pie will appear slightly soft in center when done).
- Cool and refrigerate completely before cutting (it will firm up a little more as it sits).

- Preheat oven to 375 degrees.
- In a medium bowl whisk together all of the dry ingredients (sugar through cornstarch) and set aside.
- In a medium saucepan combine the half-and-half, whipping cream, and butter and turn heat on medium-low. Whisk the mixture of dry ingredients into the half-and-half mixture, and keep on whisking it as the mixture cooks and thickens (about 5 minutes). Remove from the heat and stir in the vanilla extract.
- Pour the filling mixture into a 9" unbaked pie shell. Place the pie on a baking sheet and put both into the oven for 35 minutes, or until a knife inserted in the middle of the pie, comes out clean.
- Remove the pie from the oven and let cool for 15 minutes and then place it in the refrigerator to finish chilling. Once chilled, it is ready to serve, enjoy!

Steps:
- In sauce pan combine, white sugar, salt, half-and-half and whipping cream.
- Bring to a boil.
- In another sauce pan, combine Br.sugar & cornstarch.
- Gradually whisk in hot mixture into br.sugar mixture.
- Add margarine/or butter (to me this makes it even better.).
- Cook over med. heat, whisk constantly, 5 min or until thick.
- Simmer 1 minute and stir in van.
- Pour into uncooked pie shell and sprinkle w/cinnamon and nutmeg.
- Bake at 375°F for 25 minutes.
- I recommend recipe #126072 for this pie.

- Preheat oven to 450°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes., Line unpricked crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is light golden brown, 15-20 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. Reduce oven setting to 375°., Meanwhile, in a large saucepan, combine sugar and cornstarch; stir in milk until smooth. Bring to a boil. Reduce heat; cook and stir 2 minutes or until thickened and bubbly. Remove from heat; stir in butter and vanilla. Transfer to crust; sprinkle with cinnamon. Bake until golden brown, 15-20 minutes. DUTCH MILL SUGAR CREAM PIE
The Dutch Mill was a restaurant in Bluffton Indiana that was famous for it's pies. It burned down about 10 years ago, but we've still got the Sugar Cream Pie recipe to recreate at home! Sugar Cream Pie is unique, sweet, dense, and creamy ...additively yummy! The recipe is easy but there can be a "little" bit of trial and error since ovens vary. Stick with it though, because the reward is well worth it!

DUTCH APPLE PIE (OMA'S APPELTAART)
This recipe is for the traditional dutch apple pie, found on a Belgian website. It can be served both warm or cold, usually with whipped cream (but ice cream tastes great as well :D ). You will need a *springform* cake pan, or a lot of patience, or you will not be able to get the pie out! Because Dutch recipes generally use grams instead of cups for dry ingredients, I have included the measurements in grams as well. The dough is shortbread-like and may take a lot of time to get right. It took me ages to get it to form a ball, but it worked out fine in the end. If you're getting tired of it, add a little milk, but don't despair for with or without the milk, it *will* from a ball in the end. If you want, you can prepare the apple mixture the previous day and keep it in the fridge, the flavors will blend wonderfully. If you want to prepare the dough in advance, take it out of the fridge in time, because it's really hard to work with when it's just been in the fridge for a whole night. The preparation time is a rough estimate and assumes that you peel the apples while the dough is in the fridge. I'm quite slow at preparing so it could be anywhere between 1 and 2 hours for you. Last but not least, *do* make sure you have a bit of dough left over for the third to last step - you deserve a little something for all that hard work! :D

- For the dough:.
- Sieve the flour, brown sugar, vanilla and the salt into a bowl.
- Cut the butter or margarine into small cubes and add these to the flour mixture.
- Beat the egg and add 3/4 of it to the flour mixture (you will need the rest for the top).
- Using two knives, mix the butter/margarine and the flour mixture.
- Using one hand, kneed it to form the dough - you should be able to form it into a ball (this may take quite long).
- Put the ball of dough in the fridge for about an hour, in the meantime, make the filling.
- For the filling:.
- Peel the apples and cut them in cubes (allow the sizes to vary--it'll taste better).
- In a (large) bowl, combine apple, raisins, (granulated) sugar, cinnamon, the lemon juice and half of the semolina.
- Mix well and allow the flavors to blend, stirring occasionally.
- Then:.
- Butter a 9-inch round springform cake pan, or spray it with a non-stick spray.
- Line the pan (bottom and sides) with about 3/4 of the dough - as long as the pan is covered, the layer need not be very thick.
- Cover the bottom with the remaining semolina.
- Add the filling, but try to leave the juices out.
- On a lightly floured surface, roll out the remaining dough until it's less than 1/4 inch (1/2 cm) thick.
- Cut the dough into strips and layer them over the apple pie to form a raster, covering no more than one third of the surface--you should be able to see quite a bit of the apple pieces (see picture).
- If necessary, use (some of) the remaining dough to make the edges a bit higher.
- Use the remaining egg to coat the dough strips.
- Bake the pie at 175°C / 340°F, just below the middle of your oven, for about 75 minutes.
- If you have any dough left, roll it out, sprinkle with sugar and cinnamon (or left-over apple mixture) and bake it on baking paper for a few minutes.
- Remove the springform only *after* the pie has cooled.
- Serve warm (reheat in oven or microwave) or cold, with whipped or ice cream, or freeze.

MICROWAVE SUGAR CREAM PIE
This recipe was the grand prize winner a few years ago in a recipe contest held by an area newspaper. I love sugar cream pie, but didn't have an easy recipe until I found this one. I used a store bought pie shell, and ended up with more filling than the shell would hold so we ate the leftover filling like pudding.

- In a large bowl, combine sugar, flour and salt.
- Gradually stir in the half and half, then the melted butter.
- Place bowl in microwave.
- Cook mixture on high power, stopping to stir every 1 minute and 30 seconds, for a total of ten minutes cooking time.
- Note: It is very important to stop and stir the mixture.
- Finally, add vanilla and microwave for an additional 30 seconds or until mixture is bubbly.
- Pour filling into a 9- inch pie shell.
- Sprinkle with cinnamon, if desired.
- Allow pie to cool completely before cutting.
