EASY APPLESAUCE MUFFINS
These are the best. Both my kids, ages 4 and two love them. I will double the batch and freeze them. They are great for on the go breakfasts.

Steps:
- Heat the oven to 375 degrees. Line a 12-cup muffin tin with bake cups and set aside.
- In a small microwave-safe bowl, melt the butter on high for about 30 to 60 seconds; set aside to cool slightly.
- Sift together the flour, baking powder, baking soda, cinnamon, and salt into a large mixing bowl. When mixing dry and wet ingredients for muffins, gently stir just until the flour disappears. This will produce muffins with a nice crumbly texture.
- In another large bowl, whisk together the eggs and brown sugar. Stir in the applesauce and melted butter until the mixture is smooth. For mess-free muffins, use an ice-cream scoop to spoon the batter into the bake cups.
- Pour the apple mixture over the flour mixture. Mix with a wooden spoon until combined (it's ready when you can't see any traces of flour).
- Fill the bake cups about two-thirds full with batter. Bake for 20 minutes or until light brown.

- Heat oven to 400°F. Spray bottoms only of 12 regular-size muffin cups with cooking spray.
- Crush cereal. In large bowl, stir together cereal, flour, brown sugar, cinnamon, baking powder and baking soda. Stir in remaining ingredients just until moistened. Divide batter evenly among muffin cups.
- Bake 18 to 22 minutes or until golden brown. Stir in raisins, if desired.

Unfortunately I cannot take credit for these delicious muffins. This came from an old TOH magazine where someone had written in for this muffin recipe that they had tried at a restaurant called Curly Maple Resturaunt. These are perfectly moist and the kids gobble them up.

- Preheat oven to 350 degrees F (175 degrees C). Line 12 muffin cups with paper liners.
- Mix flour, baking soda, allspice, nutmeg, cinnamon, cloves, ginger, and salt together in a bowl.
- Beat shortening with an electric mixer in a separate large bowl until smooth; add honey and mix for 2 minutes. Stir flour mixture into shortening mixture, alternating with applesauce, until batter is smooth. Fold in raisins and walnuts. Spoon about 2 1/2 tablespoons batter into each muffin cup.
- Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, 20 to 25 minutes.

- In a small bowl, combine all the struesel ingredients and stir until well combined and crumbly.
- Muffin-Tops:.
- Soak the oats in milk for about 30 minutes.
- Preheat the oven to 400 degrees.
- Spray muffin pan with cooking spray.
- Combine the applesauce with the egg.
- Mix the oat mixture with the applesauce mixture, and stir until combined.
- In a separate bowl measure and whisk the dry ingredients together.
- Add wet ingredients to dry and mix until just combined.
- Stir in raisins or craisins.
- Do not over mix the batter or the muffins will be tough.
- Spoon approximately 1/2 cup of muffin mixture into muffin-top pan.
- Sprinkle streusel on top.
- Bake until golden brown and the top springs back, approximately 15-20 minutes.
- Remove pan from the oven and allow to cool for 5 minutes before removing muffin-tops to wire rack to cool.
- Best served fresh from the oven.
QUICK APPLESAUCE MUFFINS

- Combine Bisquick, 1/4 cup sugar, and 1 teaspoon cinnamon.
- Add applesauce, milk, egg and oil, and beat vigorously for 30 seconds.
- Fill greased muffin pans 2/3 full and bake 12-15 minutes.
- Cool slightly and remove from pans.
- Mix remaining sugar and cinnamon.
- Dip tops of muffins in melted butter, then in sugar-cinnamon mixture.
