DAVID TANIS'S ONION CONFIT

The French word "confit" usually refers to food that is slowly cooked in some kind of fat. Originally, confit was a method used for preserving meat, typically duck, goose or pork. When stored and cooled in earthenware crocks, a layer of fat on top kept the food from spoiling by sealing out air. Onion confit, on the other hand, is a savory preparation of sliced onions, cooked to a soft, almost melting consistency, often seasoned with salt, herbs, sugar and vinegar for a somewhat sweet-and-sour effect. Sometimes called onion marmalade, a spoonful or two makes a perfect accompaniment to roasted meats. It may also be used to make onion tarts or pizzas, or as a "bed" for baked fish. The mixture will last for a week or so, refrigerated. To use, reheat gently over low heat.

Steps:

  • Cut onions in half from top to bottom (not crosswise). With a paring knife, peel each onion half. Lay each onion half flat side down. Holding the knife at a slight angle, cut away and discard the hard root end. Using a sharp knife, cut into 1/4-inch half-moons.
  • Put a large heavy-bottomed pot, preferably enameled cast iron, over medium-high heat. Melt butter, then add all the sliced onions and stir to coat. Sprinkle with sugar and season generously with salt and pepper. Continue stirring until onions begin to wilt and soften, without browning, about 5 to 8 minutes.
  • Add bay leaves, thyme, cayenne, vinegar and wine. Reduce heat to medium and continue to cook, stirring occasionally, until onion mixture is quite soft and most of the liquid has evaporated, about 30 minutes. Taste and adjust seasoning. Remove and discard bay leaves and thyme. Serve warm.

ONION AND SHALLOT CONFIT

Slow-cooking onions in olive oil brings out their sweetness, which is offset by the acidity of the tomatoes and vinegar. This confit is wonderful with grilled meats. You'll want to keep some on hand all summer.

Onion and Shallot Confit image

Steps:

  • Preheat oven to 275 degrees. Heat oil in a small Dutch oven or other heavy 3-quart pot over medium-high heat. Add shallots and onions, tossing to coat, then bring to a simmer. Add tomatoes, oregano, rosemary, 1 tablespoon salt, and a pinch of red-pepper flakes. Cover, and transfer to oven.
  • Bake until onions are very tender, about 2 1/4 hours. Uncover, and bake until onions are slightly golden around edges, about 15 minutes more. Stir in vinegar, and let shallots and onions cool slightly in oil. Before serving, discard herb sprigs. Serve warm or at room temperature.

1/2 cup extra-virgin olive oil
2 1/4 pounds mixed fresh shallots and cipollini onions (preferably a combination of red and white), peeled and halved if large
3/4 pound cherry tomatoes
4 large sprigs oregano
2 small sprigs rosemary

CONFIT D' OIGNON - FRENCH ONION MARMALADE

I always have at least several jars of Confit d'Oignon in my pantry; it is excellent with so many different types of dishes & recipes. Serve it with charcuterie, terrines & cheeses; it is wonderful added to vegetables, soups, stews, daubes or as a sauce for steaks. I also use it for tarts, quiches & grilled cheese sandwiches. It is well worth making a few jars - it is expensive to buy, even in France; make up several jars when onions are cheap or you have a glut in your garden. You can make it with red or yellow onions, red onions gives the finished confit a fantastic colour! This what I use when I make my Recipe #205353.

Confit D' Oignon - French Onion Marmalade image

Steps:

  • In a heavy frying pan, heat up the olive oil and add the finely sliced onions - toss around to make sure they all have a coating of oil.
  • Cover & cook over a gentle heat until they start to colour.
  • Add the salt, pepper, bay leaves & rosemary sprigs & cook for a further 20 to 30 minutes, until the herbs have wilted.
  • Take off the lid and add the sugar, wine & vinegars.
  • Bring them to the boil and keep stirring al the time; then lower the heat & simmer for about 20 to 30 minutes until the liquid is all dissolved and the onions are soft & sticky.
  • You will need to be very vigilant towards the end of the cooking - stirring all the time so the onions do not stick and become burnt and scorched.
  • Pick out the rosemary & bay leaves and spoon the confit into a clean, dry & sterilised jar & seal straight away.
  • Ready to eat after 2 weeks, but better if kept for at least 1-2 months.
  • Makes one x 300ml jar - the recipe can easily be increased - use a large preserving pan if necessary.

  • Melt the butter in a medium heavy-based saucepan.
  • Add sugar.
  • Stir over low heat until dissolved.
  • Add onions and cook.
  • Cover and continue to cook on low heat for 30 minutes.

  • Cut onions into 2, then dice thinly. Sweat onions in a little sunflower oil until translucent and tender. Medium heat Add the sugar and balsamic vinegar and caramelize until onions are brown. Monitor simmering and turning occasionally for about 10 minutes. Medium-low heat. Add to Porto, cloves, nutmeg, thyme. Season with salt. Continue cooking over Medium-low heat, stirring occasionally until there is no more liquid (35A about 45 min). Remove the cloves and either put in the fridge to enjoy it quickly, or can them. Canned confit can be preserved for several months.

Steps:

  • Combine the olive oil and butter in a large heavy-bottomed saucepan over medium heat.
  • When the butter foams, add half of the sliced onions and 2 of the bay leaves.
  • Sprinkle with half of the sugar and half of the salt.
  • Add remaining onions, bay leaves, sugar and salt.
  • Cover, reduce heat to low, and cook for 20 minutes.
  • Uncover, stir, and increase heat to medium.

  • Heat the olive oil in a large pan over medium heat.
  • Add the red onions. Do not stir. Let the onions turn light brown, then turn and brown on the other side.

Steps:

  • Preheat oven to 325° F. On a large baking sheet arrange bread slices in one layer and lightly brush both sides of each slice with about 2 tablespoons olive oil. Toast slices in middle of oven 15 minutes and turn over. Toast an additional 15 minutes, or until golden. Transfer toasts to a rack and rub one side of each toast with cut side of halved garlic. Let cool. Toasts may be made 2 days ahead and kept in a sealable plastic bag at room temperature.
  • Heat the butter and remaining 2 tablespoons olive oil in a large skillet over medium heat. Add onions and sugar. Season with salt and pepper. Cook, stirring occasionally, until onions are soft, 15 to 20 minutes.
  • Increase heat to medium-high. Add red wine and cook, stirring occasionally, until wine is reduced and onions are deep golden brown, 15 to 20 minutes more. Add thyme; taste and adjust for seasoning. Transfer onions to a bowl and serve immediately with toasts.

CROCK POT ONION CONFIT

I've found that a crock pot is the perfect vehicle for creating the perfect onion confit. Don't use fresh, sweet onions for this, due to the lengthy cooking time. Please realize that this recipe is only a basic framework; your mileage may vary, so adjust accordingly! Length of crock pot cooking time is roughly 18 hours. Don't take them out until they are very dark and reduced, almost gelatinous in texture. Onion confit is fantastic on pizzas, as a sandwich spread, as an appetizer with thinly-sliced baguettes, etc. It makes a killer, quickie-base for French onion soup, too.

Steps:

  • If you don't have demi-glace, take 2 cups good-quality stock and reduce to 1/2 cup.
  • Place everything in crock pot and thoroughly combine.
  • Turn to high, until just before going to bed (about eight hours).
  • Stir.
  • Turn to low for overnight.
  • Upon waking, stir, and turn back to high until finished.
  • Water content will vary from onion to onion, so if your confit is still quite watery towards the end, remove lid and allow excess water to cook off.
  • This will keep for at least two weeks, covered, in the refrigerator.
