A very simple stir-fry dish. The reason for using only soya sauce for stir-frying cabbage is that it brings out the natural sweetness in the cabbage itself.

Steps:
- Heat the vegetable oil in a wok or large skillet over medium heat. Stir in the garlic, and cook for a few seconds until it begins to brown. Stir in the cabbage until it is coated in oil; cover the wok, and cook for 1 minute. Pour in the soy sauce, and cook and stir for another minute. Increase the heat to high, and stir in the Chinese cooking wine. Cook and stir until the cabbage is tender, about 2 minutes more.

- Heat the oil and butter in a large wok or frying pan on medium heat.
- Add the garlic. Stir fry for about 1-2 minutes, stirring constantly until garlic is fragrant. DO NOT burn!
- Increase heat to high. Once the heat is to temperature, add the cabbage, carrots, green onions, cider vinegar, and brown sugar. Stir fry for about 3 minutes or until the cabbage is tender-crisp.
- Season with salt and pepper to taste.

- I'm adding a note to this recipe. The cabbage leaves need to be soft enough to roll for this recipe to work. One way to achieve this, is to wash the cabbage, freeze while still damp, then thaw and steam slightly. I like to defrost them in the microwave.
- Combine pork,beef, rice, garlic,onion, soy sauce, ketchup, brown sugar, ginger, salt and pepper; mix well.
- Spoon about 1/2 cup meat mixture onto each cabbage leaf.
- Fold in sides; then starting at an unfolded edge, roll up completely to enclose filling.
- Place rolls seam side down, in a greased 13 inch x 9 inch baking dish.
- In a saucepan over medium heat, combine sauce ingredients; heat and stir until sugar is melted and sauce is hot.
- Pour over rolls.
- Cover and bake at 3oo degrees for 2 - 21/2 hours.
ORIENTAL HAMBURGER CASSEROLE
I have yet to try this, but based on the ingredients, I know I'm going to like it! (What can I say, I grew up with hot dishes and casseroles!) I think I'd actually top the dish with the chow mein noodles and then bake it. I like them better that way!

Steps:
- Bring broth to simmer in heavy large skillet over medium heat. Add chicken and simmer until just cooked through, about 7 minutes. Transfer to work surface to cool. Add snow peas to broth and cook until tender, about 3 minutes. Using slotted spoon, transfer peas to bowl of cold water. Drain. Set aside.
- Boil broth until reduced to 1/3 cup, about 7 minutes. Transfer to bowl; cool.
- Combine vinegar, cilantro, soy sauce, ginger, garlic, chili, sesame oil and sugar substitute in medium bowl. Whisk in reserved broth.
- Place cabbages, mushrooms, carrots and onions in large bowl. Pour dressing over and toss to combine.(Can be made 6 hours ahead. Cover; chill.)
ORIENTAL CABBAGE
This is a crowd pleaser, family favorite receipe that was shared with me by a friend who's sister in law was Chinese. It didn't have a name and I changed a few things but it is a crowd pleaser that is often requested. It is easy to prepare and stores refrigerated for at least a week. It is an all in one meal with a vegetable, starch and protein. Add a side salad and enjoy.

- Slice bacon cross ways to make approximately 1 inch pieces.
- Brown in large deep skillet until crispy.
- Remove from grease and drain on paper towel, set aside for later.

- Combine soy sauce, vinegar, sugar and oil in a small saucepan and cook over medium heat until sugar dissolves.
- Remove from heat and cool.
- (Can be made a day in advance,) Refrigerate until ready to use.
- Break up Ramen noodles (discard seasoning packets or save them for another use).
- Saute noodles, almonds and sesame seeds in oil until they brown.
- Stir often.
- Remove from heat.
- Combine cabbage, onions and noodle mixture.
- Toss with the dressing about 20 minutes before serving (this allows the noodles to soften).

Steps:
- Brown onion in margarine until soft.
- Add ground beef, salt, pepper and brown.
- Drain any fat off mixture.
- Put chopped cabbage on top of meat mixture.
- Cover and steam 10 minutes.
- Mix together, stirring, and add water chestnuts, celery soup, cheddar cheese.
- Add sour cream last, careful not to heat mixture too high.
- Put in greased casserole dish.
- Bake at 325 degrees for 30 minutes.
- Just before it's done, sprinkle chow mein noodles on top.
- Let stand about 5-10 minutes before serving.
- Serve soy sauce along side to be added to each serving according to each person's taste.
