HOT FRUIT CASSEROLE

Very tasty fruit dish, especially around the fall and winter holidays. Will keep well in refrigerator for several days. Looks really attractive when served with baked ham on a buffet table. Another one of my mother's recipes for which I have no origin.

Hot Fruit Casserole image

Steps:

  • Arrange drained fruit layers in large buttered casserole dish in the following order: pineapple, peach slices.
  • pear halves, apricot halves and spiced apple rings.
  • Combine flour and brown sugar and mix well with the melted butter and creme sherry in a sauce pan.
  • Cook over medium heat, stirring constantly until thickened.
  • Pour over fruit, cover and refrigerate overnight.
  • Remove from refrigerator and allow to come to room temperature before baking for about 30 minutes at 350 degrees, or until hot and bubbly.
  • NOTE: Cooking time refers to both cooking and chilling time.

Steps:

  • In medium saucepan, heat fruit, 2/3 cup sugar, the cinnamon sticks, water and wine to boiling over medium-high heat, stirring occasionally. Reduce heat; simmer uncovered 10 to 15 minutes, stirring occasionally, until fruit is tender. Remove cinnamon sticks; discard.
  • Heat oven to 400°F. In medium bowl, stir cake meal, 1/3 cup sugar, the almonds, cinnamon, ginger and nutmeg until well mixed. Cut in butter, using pastry blender or fork, until mixture looks like fine crumbs. Pour hot fruit mixture into ungreased 1 1/2-quart casserole. Sprinkle evenly with topping.
  • Bake 15 to 20 minutes or until topping is light golden brown. Cool slightly; top with whipped cream.

SPECIAL NOTE: The author commented that "I first came across this recipe as a low-cholesterol concept for Pesach cooking. My family loved it, but I found it horribly sweet. Because dried fruits are themselves so sweet, I think the sugar can be cut to 3/4 cup (even 1/2 cup). My guess is the oil could also be cut to 3/4 or 2/3 cup. Other fruits can be substituted. I used dried pears (for example) when I couldn't find pineapple." (Times do not include soaking time for fruit)

Steps:

  • Put apricots, prunes & pineapple in a bowl. Pour boiling water over them to cover. Let stand for at least 1 hour & drain.
  • Add raisins & sliced apples.
  • Beat egg whites (adding sugar gradually) to a stiff meringue. Add oil & matza meal. Mix thoroughly, but gently. Fold batter into the fruit.
  • Transfer to an oiled, glass baking dish (about 12"x15"). Sprinkle w/cinnamon & bake 45 minutes at 350 F or 160°C.
  • NOTE: The RZ system apparently doesn't accept matza as a correct spelling & chgs the word to matzo -- despite my efforts.

Linda's Macaroon Fruit Casserole image

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 13 x 9 baking pan with cooking spray.
  • In a large bowl gently mix peaches, pears, pineapple, cherries and apricots.
  • Set aside.
  • Place macaroons in food processor and crush coarsely(may need to do this in 2 batches).
  • Spread 1/3 crumbs evenly over the bottom of the baking dish.
  • Top with 1/2 of the fruit.
  • Repeat layers ending with macaroon crumbs.
  • Scatter slivered almonds and brown sugar over the top.
  • Cover loosely with aluminum foil.
  • Bake for 30 minutes.
  • Remove from oven.
  • Drizzle melted margarine on top.
  • Bake uncovered for 45 minutes or until top is bubbly and lightly brown.
  • Serve warm.

Steps:

  • Preheat the oven to 350 degrees.
  • Drain the pineapple chunks, peaches, pears, and cherries.
  • slice the bananas and sprinkle with lemon juice.
  • Add the bananas to the fruit.
  • Transfer half of the fruit mixture to a 3 quart casserole dish.
  • Sprinkle half the brown sugar, half the vanilla crumbs, half the margarine, and half the creme de banana.
  • Cover with the remaining fruit and the remaining sugar, vanilla crumbs, margarine, and creme de banana.
  • Bake for 30 to 40 minutes, or until fruit is bubbly.
  • Stir to combine before serving.

2 (16 ounce) cans sliced peaches in light syrup

1 (16 ounce) can pitted tart red cherries
4 bananas, peeled and sliced
