Steps:

  • Heat a large saucepan over medium heat and add the oil. When hot, add the meat and cook, without stirring, until browned, 3 to 5 minutes. Break it up with a wooden spoon, then add the onion and garlic and cook, stirring, until starting to soften, about 2 minutes. Add the tomato paste and cook for 2 to 3 minutes. Add the wine and bring to a simmer. Add the crushed tomatoes and oregano and season with salt and pepper. Simmer until thickened and the flavors come together, about 1 hour.
  • About 20 minutes before the sauce is done, bring a large pot of water to a boil and salt liberally. Drop in the pasta, give it a stir and cook until al dente according to the package instructions. Drain the pasta and add it to the sauce. Remove from the heat, toss in the cheese and serve.

2 tablespoons oil (I'm using olive oil)
2 pounds ground meat of your choice, such as beef, pork, turkey, chicken, lamb (I'm using beef)
1 onion, diced (I'm using yellow onion)
2 cloves garlic, minced
1/4 cup tomato paste
3/4 cup liquid of your choice, such as beef stock, chicken stock, water or wine (I'm using red wine)
One 28-ounce can tomato product (I'm using crushed tomatoes)
2 tablespoons oregano (if you have it)
Salt and pepper
1 pound dry pasta (I'm using rigatoni)
3 tablespoons grated hard cheese (I'm using Parmesan)

LEFTOVER MEATLOAF PASTA

Since there are only two of us in the house, whenever I make something like meatloaf we have at least half of it leftover and usually don't eat it. I came up with this solution using things I had on hand to try and make it a little more interesting and appetizing the next day.

Steps:

  • Heat oven to 180C/160 fan/gas 4 and grease an ovenproof dish. Heat the oil in a large frying pan over a medium heat, add the onions, sizzle for 5 mins, then remove half and put in a large bowl with the mince, egg, breadcrumbs, sage, feta and chopped bay. Season well and mix. Shape into a long sausage shape and transfer to the greased dish. Put the remaining bay leaves on top, drizzle with a little more oil and put in the oven for 40-45 mins until cooked through.
  • Meanwhile, keep the remaining onions on a low heat in the pan. Cook for 2 mins, then increase the heat and pour in the passata with 70ml water. Bubble for 30 mins on a low heat, stirring often, or until the meatloaf is ready to come out of the oven. Season to taste.
  • Cook the spaghetti following pack instructions. When everything is ready, toss the spaghetti in the tomato sauce, slice the meatloaf and let everyone help themselves.

PASTA LOAF WITH MEAT SAUCE

This is really good basic recipe. Sometimes, I like to add in some garlic and chopped green chilies to the loaf or use Pepper Jack cheese. You can pretty much spice this up to your taste.

  • Make Homemade Pizza. This makes sense because pizza is already one of the best things in life—but if you don’t want to make your own dough, there are several options for getting premade dough at most grocery stores these days (just look at their refrigerated section).
  • Freeze It and Use It Later in The Week. You can also simply freeze it for future use. When you’re ready for a quick meal, just thaw out the frozen block of sauce in the fridge overnight and heat it up with a bit of water or milk over low heat until melted—and then serve over pasta or rice!
  • Make Meatball Subs. These are a great way to use up any leftover meatballs in your fridge too, but if that sounds too complicated for you then just grab some leftover spaghetti and toss it with some cooked meatballs and mozzarella cheese (or whatever other toppings strike your fancy).
  • Spoon over Pasta. If you’re not feeling like pizza but still have some leftover meat sauce, try mixing it with some pasta instead! You can use penne or any other shape of pasta that you prefer—and if you want to add some veggies into the mix, try adding some mushrooms or broccoli florets.
  • Make Soup. We love soup, but homemade soups can be tricky because they usually require some kind of cooking time that makes it hard to cook while you’re at work or school.
  • Add it to rice. If you’ve got some extra rice left over from dinner last night, why not stir in some meat sauce? It’ll give the rice some extra flavor while still letting the rice shine through as its own distinct ingredient.
  • Use It as A Dip for Veggies. If you’re not into making your own pizza but still want to get creative with that leftover sauce, try using it as a dip for veggies like carrots, celery sticks or cucumbers!
  • Add It to A Salad as A Dressing. Mix some up with olive oil, vinegar, lemon juice and herbs like basil or rosemary and use it as a dressing on salad greens with tomatoes and cucumbers—it’ll give that salad some serious flavor while also adding extra protein!
  • Make Lasagna. Lasagna is a great way to use up leftover meat sauce because it’s basically just layers of pasta with meat sauce—so if you have both of those things sitting around, this dish is pretty simple to make
  • Use It in Tacos or Quesadillas. Once again, this one is pretty easy—just add some salsa, cheese and maybe some lettuce if you want, wrap it up and cook until crispy on both sides.
