FROZEN YOGHURT PEACH POPS
These simple, frozen fruity yoghurt pops are the perfect after-school snack.

Steps:
- In blender, add all ingredients. Cover and blend on medium speed until smooth. If necessary, stop blender and scrape down sides.
- Divide mixture among 6 (5-oz) paper cups. Cover cups with foil; insert craft sticks into center of each pop. (Or fill ice pop molds according to manufacturer's directions.) Freeze about 6 hours or until frozen.

Steps:
- Peel and chop peaches. Put peaches, blackberries and lemon into a pot, stir to coat the fruit with the lemon juice and bring to a boil over medium high heat.
- Add the powdered fruit pectin and bring to a boil again. Add the sugar and cinnamon and bring to a hard, rolling boil. Boil for 15 minutes, stirring often.
- Ladle into hot, sterilized 8 oz. jars and seal. Process in water-bath canner for 10 minutes.

- Combine peaches and blackberries in the bowl of a food processor; pulse until pureed. Mix pureed fruit, yogurt, and honey together in a bowl. Pour mixture into popsicle molds.
- Freeze for 6 hours to overnight. Run warm water over molds to loosen the yogurt pops. Remove and wrap individually for freezer storage.

- Place the peaches in a blender; cover and process until pureed. Set aside. , In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Stir in sugar. Cook and stir over low heat until gelatin and sugar are dissolved., In a large bowl, combine the yogurt, peach puree and gelatin mixture until blended. Pour into an ungreased 9-in. square dish. Cover and freeze for 3-4 hours or until partially set. , Cut into pieces and place in a large bowl; beat on medium speed until smooth. Transfer to a freezer container. Cover and freeze until firm, about 2 hours.

- Preheat oven to 350 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper. Transfer sliced peaches to the baking sheet and gently toss with 2 tablespoons honey and a dash of salt. Arrange the peaches in a single layer. Roast for 30 to 40 minutes, stirring halfway, or until the peaches are soft and juicy (watch the edges in particular).
- While the fruit is roasting, blend together the yogurt, 1/4 cup honey, lemon juice and vanilla extract in a medium bowl. Feel free to add more honey or vanilla extract to suit your taste buds. Place the mixture in the refrigerator so it stays cool.
- Let the peaches cool, then scrape the peaches and all of their juices into the bowl of yogurt. Use a big spoon to gently fold the mixture together.
- Use the spoon to transfer the yogurt blend into the popsicle mould. You might have to push the peaches down into the molds, but they shouldn’t put up too much of a fight. Insert popsicle sticks and freeze for at least four hours.

- Core peaches and then dice the fruit into small pieces and pour onto yogurt mixture. Do not stir. Using a small food processor (or a knife and cutting board), lightly pulverize blackberries but leave small chunks.
