Ginger-Peach Beer Cooler image

Steps:

Combine the beer, peach nectar, peaches and syrup in a large pitcher; stir to blend. Serve immediately.
Place 1/2 cup water, the sugar and ginger in a small saucepan. Bring the syrup to a boil over high heat. Reduce the heat and simmer until the sugar dissolves, about 5 minutes. Let the syrup cool completely, about 20 minutes. Strain before using.

Three 12-ounce bottles chilled beer, light or mild, such as Modelo Especial (not dark beer)
3 cups (24 ounces) chilled peach nectar, such as bottled R.W. Knudsen brand or canned peach nectar

Steps:

Drain pineapple, reserving juice. Mix cornstarch, soy sauce, honey, cinnamon and reserved juice until smooth. In a skillet, heat 1 tablespoon oil over medium-high heat; saute chicken until lightly browned, 4-6 minutes. Remove from pan., In same pan, saute onion, ginger and garlic in remaining oil until crisp-tender, about 2 minutes. Stir cornstarch mixture; add to pan with chicken and pineapple chunks. Bring to a boil, stirring constantly; cook and stir until sauce is thickened and chicken is cooked through, 5-7 minutes., Serve with rice. If desired, sprinkle with cilantro.

Make ginger syrup:
Bring water, sugar, and ginger to a boil in a 1- to 1 1/2-quart saucepan, stirring until sugar is dissolved. Simmer, uncovered, stirring occasionally, 10 minutes, then remove from heat and steep, uncovered, 15 minutes. Pour syrup through a sieve into a bowl, discarding ginger. Chill, covered, until cold, about 2 hours.
Make punch:
Stir together ginger syrup and fruit juices in a punch bowl or pitcher. Stir in sparkling water and ice.

After having made her Natilla De Pina (Pineapple Custard) Recipe #170308 for the 2nd time at DH's request, I used my excess pineapple juice for this new effort & now I'm really hooked on both of them. Refresco De Pina - Pineapple Cooler image

Steps:

Chop pineapple into small bits or cut into chunks and blend for a moment in a blender.
In a glass container, add the pineapple to one quart of water in which half of the sugar has been dissolved.
Allow to steep for 2 to 3 hours.
Strain and add additional sugar to personal taste.
Chill and serve.
Makes 4 to 5 cups.
