PEPPERMINT ICE CREAM POPS
These festive red and white minty pops are the perfect ending to a Christmas in July party...or any summer meal.

Steps:
- Microwave the chocolate in a microwave-safe bowl in 30-second intervals, stirring in between each, until melted, about 90 seconds. Stir in the coconut oil.
- Transfer 3 tablespoons of the melted chocolate to a small bowl and mix in the food coloring. With a fork or spoon, drizzle a pattern of red chocolate into each of six 3-ounce paper cups. Place in the freezer to harden, about 10 minutes.
- Add 1 tablespoon of the white chocolate to each cup. Swirl the chocolate around in the cups until evenly coated, spreading the chocolate with a spoon or small offset spatula if necessary to completely coat the cups. Return to the freezer to harden, about 10 minutes.
- Divide the ice cream among the 6 cups. Place an ice-pop stick into the middle of each cup, then cover the ice cream with the remaining white chocolate. Freeze until very firm and the chocolate is set, at least 2 hours and up to overnight.
- Peel the cups away from the pops and let stand on a plate for 5 minutes to soften slightly. Dip into the crushed peppermint candies.
PEPPERMINT ICE CREAM (ICE CREAM MAKER)
This ice cream would be great in the summer as well as dessert for a winter holiday. Cooking time is the approximate time it takes in my ice cream machine -- yours may differ.

- In a bowl, stir the cream and sugar together until the sugar dissolves. Add the vanilla and stir to combine.
- Set aside for about 15 minutes, stirring occasionally, to allow the flavors to blend.
- Cover and refrigerate until chilled, at least 3 hours or up to 8 hours.
- In a food processor, grind the peppermint candies by pulsing 2 or 3 times. Some of the candies will be more finely ground than others; small chunks of candy will add texture and interest to the final ice cream.
- Pour the cream mixture into an ice cream maker and freeze according to the manufacturer's instructions.
- When nearly frozen and the consistency of thick whipped cream, add the ground peppermint candies. Churn or stir just until mixed.
- Transfer the ice cream to a freezer-safe container.
- Cover and freeze until firm, at least 3 hours or up to 3 days, before serving.
LAVENDER (OR PEPPERMINT) ICE CREAM
Steps:
- In a small, heavy saucepan, combine cream, milk, sugar, and lavender. Place over medium-high heat and, with a wooden spoon, bruise and crush the herbs against the bottom and sides of pan while bringing mixture just to a boil. Remove from heat. Set aside for 15 minutes to allow the lavender flavor to infuse the cream mixture. Strain through a fine sieve into a bowl, pressing on solids. Discard the lavender flowers.
- Whisk the eggs in a small bowl. Gradually whisk a ladleful of the cream mixture into the eggs, then pour the eggs back into the cream mixture, whisking.
- Cook over medium heat, stirring gently, for about 8 to 10 minutes or until the mixture thickens enough to coat the back of a wooden spoon. Do not boil. Transfer this mixture to a bowl, cover, and refrigerate until cold.
- Pour into ice cream maker and freeze according to manufacturer's directions.
- Peppermint Ice Cream: Substitute 1/2 cup firmly packed clean, fresh peppermint leaves (1/4 cup dried) for the lavender. Proceed as above.
- Optional: The leaves won't give up much of their green color, so you can add 1 or 2 drops of red or green food coloring. Also, you can add a handful of crushed peppermint candies just 1 second, not 2, before turning off the ice cream maker.
PEPPERMINT CANDY ICE CREAM CAKE
Design a mint-lover's dream: vanilla ice cream cake loaded with crushed peppermint candies and topped with chocolate ganache and more crushed peppermints.

- Preheat the oven to 350 degrees F. Butter a 9-inch springform pan and line the bottom with parchment.
- Combine the melted butter and crushed wafer cookies in a medium bowl. Press the mixture into the bottom and almost up the entire side of the prepared pan. Bake for 10 minutes. Let cool completely before using.
- Fold the peppermint candies into the ice cream. Scoop the peppermint candy ice cream onto the cookie crust, packing it in tightly. Spread with an offset spatula to make a smooth top. Cover with plastic wrap and freeze until firm, 2 to 2 1/2 hours.
- Unmold the cake by running a knife around the edge, then unhinge the springform and remove. Invert the cake onto a sheet of plastic wrap and remove the bottom of the pan and the parchment. Place a serving plate on the bottom and invert once more. Keep in the freezer until ready to frost.
- Put the chocolate in a medium heatsafe bowl. Bring the heavy cream to a simmer in a small saucepan. Pour the cream over the chocolate and stir until smooth. Allow to cool 10 minutes before using.
- Frost the top and sides of the cake with the ganache and top with the crushed peppermint candies. If the cake begins to get too soft, put it back into the freezer for a few minutes.
- Freeze another 1 1/2 to 2 hours or up to overnight. Let the cake sit at room temperature for about 20 minutes before slicing and serving.
PEPPERMINT ICE CREAM LOAF

- LINE 9 x 5-inch loaf pan with aluminum foil, extending foil over sides of pan. Combine cookie crumbs and butter; press firmly into bottom and halfway up sides of prepared pan.
- BLEND 1/4 cup peppermint candy and water in blender until candy dissolves.
- COMBINE sweetened condensed milk, food coloring, if desired, 1/2 cup crushed candy and peppermint liquid; mix well. Fold in whipped cream and remaining 1/4 cup crushed candy. Pour into prepared pan. Cover.
- FREEZE 6 hours or overnight. To serve, remove from pan; peel off foil and slice. Garnish as desired.

- In a large saucepan, heat half-and-half cream to 175°; stir in sugar and salt until dissolved. Whisk a small amount of the hot mixture into the eggs. Return all to the pan, whisking constantly. - Sieve the icing sugar into a large bowl. Add a little of the egg white and a few drops of the peppermint essence and mix really well. You want the mixture to come together as a soft dough, so keep adding a little egg white until this starts to happen (you might not need to use all of it). Taste the mixture and add more peppermint essence if desired.
- Divide the mixture into 20 small balls, then flatten them gently with your fingertips into discs.
- Place baking parchment on a large board or tray and space out the discs. Meanwhile, tip the chocolate into a microwavable bowl and heat in 30 second intervals in the microwave until melted, stirring after each blast. Once melted, leave the chocolate to cool for 5-10 mins then carefully dip the peppermint creams in the melted chocolate until they are half coated. Lay them back on the baking parchment to set for 3-4 hours or overnight.

- Combine the half-and-half, vanilla bean, vanilla seeds and salt in a nonreactive saucepan over medium heat. Bring just to a boil, then immediately remove the saucepan from the heat.
- In a large bowl add the sugar and egg yolks and whisk to combine. Add the half-and-half mixture, about 1/4 cup at a time, to the beaten eggs and sugar, whisking after each addition. Pour the mixture back into the saucepan and add the mint leaves. Cook over medium-low heat until mixture is thick enough to coat the back of a spoon, 5 to 6 minutes. Remove from the heat and strain through a fine mesh sieve into a clean bowl. Transfer the bowl to an ice bath and stir frequently until custard is completely cool. Refrigerate until thoroughly chilled.
- Pour the custard into an ice cream machine and follow the manufacturer's instructions for churning time. As the ice cream begins to set, sprinkle in the crushed peppermint candies. Transfer the ice cream to a freezer-safe container and freeze until firm, about 8 hours.
PEPPERMINT CRUNCH ICE CREAM

- Peppermint Crunch Ice Cream
- In a medium bowl, whisk together milk, heavy whipping cream, granulated sugar, salt, and McCormick Vanilla and Peppermint Extracts until sugar has dissolved.
- Pour in crushed candy cane, mixing until mostly dissolved. It's okay if the candy clumps - the ice cream maker will slowly separate them.
- Remove ice cream bowl/attachment from freezer and attach/place it per your ice cream maker's instructions. Pour prepared ice cream mixture into the chilled bowl/attachment.
- Churn ice cream for 30-35 minutes or until desired consistency is reached.
- If you'd like soft ice cream, serve peppermint crunch ice cream immediately with additional crushed peppermint candy on top. If you'd like firmer ice cream, transfer the ice cream to a storage container, sprinkle the top with additional crushed peppermint candy, and let it freeze for 2-4 hours.

- Coat 2 8-inch round cake pans with cooking spray.
- Line bottom of each pan with waxed paper.
- Combine cocoa, ¾ cup boiling water, and butter, stirring with a whisk until blended. Cool.
- Combine brown sugar and granulated sugar in a large bowl, stirring well until blended.
- Add egg substitute; beat with a mixer 2 minutes or until light and creamy.
- Add the cocoa mixture, and beat 1 minute.
- Lightly spoon flour into dry measuring cups; level with a knife.
- Combine flour, baking powder, baking soda, and salt.
- Gradually add the flour mixture to the sugar mixture; beat 1 minute or until blended. Stir in vanilla extract.
- Pour batter into prepared pans.
- Bake for 28 minutes or until a toothpick inserted in the center comes out clean.
- Cool in pans 10 minutes on a wire rack.
- Remove from pans.
- Wrap in plastic wrap, and freeze for 2 hours or until slightly frozen.
- Spread ice cream in an 8-inch round cake pan lined with plastic wrap.
- Cover and freeze 4 hours or until firm.
- To assemble cake, place one cake layer, bottom side up, on a cake pedestal.
- Remove ice cream layer from freezer; remove plastic wrap.
- Place ice cream layer, bottom side up, on top of cake layer.
- Top with remaining cake layer.
- Combine whipped topping and peppermint extract, and stir until blended.
- Spread frosting over top and sides of cake.
- Sprinkle with crushed peppermints.
- Freeze until ready to serve.
- Let cake stand at room temperature 10 minutes before slicing.

- For crust, melt butter with chocolate in heavy small saucepan over low heat.
- Finely grind cookies in processor.
- Add warm chocolate mixture; blend until crumbs are just moistened.
- Reserve 1 cup crumb mixture in small bowl.
- Press remaining crumb mixture onto sides, then bottom of 9 inch springform pan with 2 3/4 inch sides.

- Stir remaining glaze over low heat just until pourable, but not warm.
- Pour over ice cream.
- Spread evenly.
- Freeze overnight.
- Run sharp knife between crust and pan sides to loosen cake.
- Release pan sides.
- Transfer cake to platter.
- Garnish with peppermint candies and serve.
