PINEAPPLE AU GRATIN
This recipe originally came from my mom's baby sister, Aunt Clara. They both would be so proud that I have shared it with you. In my opinion, this dish compliments either ham or a pork roast very well. But it's good with any meal to me. LOL

Steps:
- 1. *Drain pinapple but BE SURE TO SAVE 6 to 8 TBSP OF PINEAPPLE JUICE.
- 2. Preheat oven to 350. Spray casserole or baking dish with Pam and set aside.
- 3. In a bowl combine flour and sugar. Fold in pineapple, cheese and juice. Pour into prepared dish and sprinkle with crumbled ritz crackers. Pour melted butter somewhat evenly on top and bake at 350 for approximately 30 minutes.
- 4. *You can use either 2 cans of crushed pineapple or 2 cans of pineapple chunks. I normally use 1 can of each.

- Add juice to flour mixture; mix well.
- Stir in the pineapple and cheese.

- Uncover and stir; bake 10 minutes longer.
- Combine melted butter and cracker crumbs; sprinkle over the pineapple mixture.
- Return to the oven for 10-15 minutes or until tests clean.

- Preheat oven to 350 degrees. Stir together coconut, cookie crumbs, and nuts; set aside. Whisk together sweetened condensed milk and rum; set aside.
- Cut core from each pineapple quarter; discard. Cut between skin and flesh of each quarter to separate. Arrange, skin sides down, on a rimmed baking sheet. Drizzle with half of the sweetened-condensed-milk mixture. Sprinkle with coconut mixture; drizzle with the remaining sweetened-condensed-milk mixture.
