Steps:
- Preheat oven to 350F degrees.
- Boil rice.
- Place 1/3 of rice in bottom of buttered baking dish.
- Cover with half of the pineapple, half the brown sugar, and half of the butter.
- Repeat with next 1/3 of rice and second half of pineapple, brown sugar and butter.
- cover with last 1/3 of rice and pour over pineapple juice.
- Bake covered for 30 minutes.

Steps:
- Open can of crushed pineapple and drain juice into a cup.
- In a medium saucepan, combine the liquid from the can of crushed pineapple with 3 cups water, bring to a boil. Add rice. Bring mixture to boil. Cover and reduce heat to simmer. Cook 25 to 30 minutes or until rice is tender.
- In a non-stick wok heat the 1 tablespoon walnut or peanut oil. Add the eggs and cook without stirring, until set. Slide eggs out of the wok to a plate - cut into short, narrow strips. In the same wok, heat the sesame oil and stir fry the tofu with the mushrooms, soy sauce, green onions, and carrots for about 4 minutes. Stir in cooked rice, pineapple, and egg strips. Heat until everything is heated through.

PINEAPPLE BAKED RICE (MAIN COURSE FOR CHINESE NEW YEAR)
Pineapple baked rice uses a pineapple skin as a bowl, stuffing it with fried rice. After you bake it for 15 minutes, the pineapple flavor will go into the rice and your whole house will be filled with pineapple aroma! This is great for kids. It has vegetables and a light, sweet taste. You may add cheese on top of the rice if you like. I personally don't like to add cheese, I want to keep the dish simple and original. I serve it as a main course for Chinese New Year.

Steps:
- Rinse jasmine rice and place in a rice cooker with water. Cook rice according to manufacturer's instructions, 15 to 20 minutes.
- Preheat the oven to 300 degrees F (150 degrees C).
- Cut pineapple in half lengthwise. Cut out flesh, leaving a thin layer on the skin. Chop 1/2 cup of the flesh; place in a bowl. Reserve remaining flesh for another use. Place pineapple 'bowls' on a baking sheet.
- Bake in the preheated oven until fragrant, about 5 minutes. Remove from the oven.
- Increase oven temperature to 350 degrees F (175 degrees C).
- Heat 2 tablespoons vegetable oil in a nonstick skillet over medium heat. Pour in beaten eggs; cook until set, about 5 minutes. Transfer to a plate and cut into small pieces. Use a paddle to fluff the cooked rice.
- Cook and stir Chinese sausage in a separate, dry skillet until fat renders, about 5 minutes. Transfer sausage to a bowl, reserving fat in the skillet.
- Stir remaining 2 tablespoons oil into the skillet used to cook the sausage. Heat it until you can feel the heat above the skillet. Stir in carrot for 1 minute. Add onion, peas, and corn; stir-fry until onion softens, 3 to 5 minutes. Add 1/2 of the rice; stir well to combine. Mix in remaining rice. Add egg pieces and sausage slices. Mix in pineapple cubes evenly.
- Transfer fried rice to the pineapple bowls. Cover with aluminum foil.
- Bake in the preheated oven until heated through, about 15 minutes.

- In a large saucepan, heat milk to 175°; stir in sugar until dissolved. Whisk a small amount of the hot mixture into the eggs. Return all to the pan, whisking constantly. - Dissolve Jello gelatin in boiling water; add pineapple juice and refrigerate 1 hour to cool. Also chill the condensed milk for 1 hour.
- Beat the condensed milk till thick (I use my kitchenaid mixer on high for 5 minutes.).
- Beat Jello till light and fluffy (about 3 minutes with a mixer), then add condensed milk.

- If serving rice in fresh pineapple, halve the pineapple lengthwise, leaving the leafy top intact and cutting through it. Hollow out each half, reserving 1 cup of the fruit for the rice and extra for garnishing. Save remaining pineapple for another use. Make a small slice on the outside of each half to create a flat base to hold the pineapple steady. Set aside.
- Crumble the cold rice between your fingers to separate the grains, and set aside.
- Heat 2 tablespoons of the oil in a wok or large skillet, swirling to coat the pan. Add the onion and toss until soft, 3 to 5 minutes. Add the garlic and toss until fragrant and soft, about 1 to 2 minutes. Add the ginger and toss for another minute.
- Add the remaining tablespoon of oil, then add the rice. Fry for 2 to 3 minutes over high heat, then add the beans, tomatoes, and pineapple, and fry 2 to 3 minutes more. Add the fish sauce and sugar, and toss until ingredients are well combined and rice is heated thoroughly, about 5 minutes. Add the green onions and toss to combine. Remove from the heat and transfer to a serving platter, or if using fresh pineapple, fill each half of prepared pineapple with warm rice and garnish with extra chunks of pineapple.
NO-CHURN PINEAPPLE ICE CREAM SLICES

- Cut off the top of the pineapple and discard. Use a pineapple corer to remove the flesh and core of the pineapple, making sure to go all the way to the bottom without piercing any holes; discard the core and save the flesh. Pat dry the inside of the hollowed-out pineapple with a couple of paper towels (this will ensure that the ice cream adheres), then place in the freezer to chill while you make the ice cream.
- Transfer half of the pineapple flesh (about 9 ounces) to a blender; save the other half for another use. Add the sweetened condensed coconut milk, vanilla and salt to the blender, then blend on high, scraping down the sides of the carafe with a rubber spatula as needed, until the mixture is very smooth, about 1 minute.
- Beat the heavy cream in a large bowl with an electric mixer on medium-high speed until it's fluffy and holds stiff peaks, 1 to 2 minutes. Gently fold half of the pineapple mixture into the whipped cream with a rubber spatula until combined. Fold in the remaining pineapple mixture until all is combined and no streaks remain.
- Spoon the pineapple mixture into the chilled, hollowed out pineapple. Cover loosely with plastic wrap and freeze until solid, at least 6 hours and up to overnight.
- If frozen overnight, let the pineapple thaw in the refrigerator for 15 minutes before serving. To serve, use a sharp long chef's knife to cut the pineapple lengthwise into quarters. Trim off the bottom, then slice each quarter crosswise into 1-inch-thick wedges (about 20 slices total). Serve immediately as is. Alternatively, dip the edges of each pineapple slice in the toasted coconut, then serve.

- Add the pineapple chunks and salt into a food processor; process until smooth, about 1 minute; set aside.
- In a medium saucepan, mix the sugar and milk together.
- Place pan over low heat and stir until the sugar is dissolved and the milk comes to a boil.
- Beat the hot milk into the egg yolks in a bowl.
- Pour the entire mixture back into the saucepan and place over low heat.

- Chill a metal mixing bowl.
- Drain canned fruit,reserve the juice.
- Add orange juice and or pineapple juice to make the required 2 cups of pineapple juice and 2 cups orange juice.
- Place rice in microwave cooker,add juice.
- Microwave 10 minutes 70% power. Set aside for 10 minutes. Then microwave 10 minutes 70% power again. The rice should be cooked and soft. Do not stir. Cool.
