Fried Polenta image

Steps:

  • Lightly oil an 11 by 7-inch baking dish. Transfer the hot polenta to the prepared baking dish, spreading evenly to 3/4-inch thick. Refrigerate until cold and firm, about 2 hours.
  • Preheat the oven to 250 degrees F.
  • Cut the polenta into 2 by 1-inch pieces. Heat the oil in a heavy large skillet over medium-high heat. Working in batches, fry the polenta pieces until golden brown on all sides, about 3 minutes per side. Using tongs, transfer the polenta pieces to paper towels and drain. Place the polenta pieces on a baking sheet and keep warm in the oven while cooking the remaining batches.
  • Transfer the polenta pieces to a serving platter. Sprinkle the polenta with the Parmesan cheese and salt. Serve, passing the marinara sauce alongside.
  • Bring 6 cups of water to a boil in a heavy large saucepan. Add 2 teaspoons of salt. Gradually whisk in the cornmeal. Reduce the heat to low and cook until the mixture thickens and the cornmeal is tender, stirring often, about 15 minutes. Turn off the heat. Add the butter, and stir until melted.

Steps:

  • Gradually add the polenta to the lightly salted, hot water by allowing it to fall from your hand from above the pot like sand through your fingers.
  • If the water is not boiling, you will be able to stir in all the polenta without lumps forming.
  • As the temperature rises, the flour will integrate with the water and thicken.
  • Stir all the time, and if you have used too much of the flour and the mixture is too thick, add a little water.
  • I taste for salt and perhaps add a little parmesan cheese.
  • When the polenta is smooth and does not taste of raw maize, it is ready.
  • You can use this sloppy polenta with anything that has been braising for a while.
  • Alternatively, pour the polenta into a flat baking dish where it will cool and become firm.
  • At that point, it can be grilled or oven baked for 20 minutes.
  • As a grilled slice, polenta can be used as a base for eggplant slices, goats cheese, rocket, prosciutto and so on.
  • For me, grilled polenta is good with either baked or fried fish and lumps of parmesan cheese.
  • Baked polenta can be dressed with cheese, roasted capsicum and fine pancetta.
  • After you have poured the polenta into a tray, some will remain stuck to the sides of the pot.
  • Let it dry even for a day, and peel these skins off.
  • They are delicious with parmesan cheese.

Steps:

  • preheat oven to 375°F.
  • In a skillet cook onion, sweet pepper,and garlic in 1 tablespoon hot oil until tender.
  • Add turkey, chili powder, cumin and cayenne.
  • Cook until turkey is no longer pink, stirring to break up meat.
  • Add beans, undrained tomatoes and salsa.
  • Bring to boiling; reduce heat.
  • Simmer gently 15 minutes.
  • Meanwhile, grease a 3-quart rectangular baking dish with the remaining 1 tablespoon oil.
  • Cut 1 tube polenta into 1/2-inch cubes; press evenly into prepared baking dish.
  • Halve remaining polenta lengthwise and cut into 1/2-inch thick slices; set aside.
  • Sprinkle 1 cup of cheese over polenta in dish.
  • Top with meat mixture.
  • Arrange sliced polenta over meat; sprinkle with remaining cheese and fresh tomato.
  • Bake, uncovered, for 35 minutes or until bubbly.
  • Sprinkle with cilantro.
  • Let stand 15 to 20 minutes before serving.
  • Makes 12 servings.

Steps:

  • Combine mushrooms and 1/2 cup hot water in a small bowl; set aside.
  • Lightly coat bottom and sides of a 10-inch deep-dish pie pan with cooking spray.
  • Place broccoli in colander and squeeze out excess water; set aside.
  • Heat oven to 400F.
  • In a large heavy-bottomed pot, combine remaining 1 1/2 cups hot water, milk and salt; bring to a boil.
  • Reduce heat to medium-low and slowly drizzle in cornmeal, whisking constantly.
  • Continue to cook, stirring frequently, until polenta is as thick as mashed potatoes, about 6 to 8 minutes.

Steps:

  • Preheat oven to 350 degrees F.
  • Grease an 11 by 17-inch baking sheet pan with oil. Line pan with waxed paper. The oil will secure the waxed paper onto the pan.
  • In a large pot bring to a boil 2 quarts of salted water. Stir in extra-virgin olive oil. When water has reached a boil, reduce heat to medium high and slowly add the polenta, whisking constantly for 3 minutes. When polenta is thick and smooth, pour it into the prepared pan. Spread the polenta evenly.
  • Bake in oven for 15 to 20 minutes. Remove from oven and allow to cool in pan. Note: the polenta will not brown or change in color. When cool enough to handle, cut into any shape you desire. I like to cut out 2-inch circles.

  • Pour chicken stock, fat free milk and coarse ground corn into a cold pot.
  • Turn burner on Medium/Medium-High.
  • Bring contents of pot to a simmer.
  • Simmer until contents are no longer "wet" - corn has absorbed most of the liquid.
  • Turn burner off and add cheddar cheese, cream cheese, salt and pepper; whisk to combine.
  • Serve warm.

  • In a 3-quart saucepan, heat broth and water to boiling; slowly stir in the cornmeal, 1/4 cup at a time.

How to Make Perfect Polenta image

Steps:

  • Bring water and salt to a boil in a large saucepan; pour polenta slowly into boiling water, whisking constantly until all polenta is stirred in and there are no lumps.
  • Reduce heat to low and simmer, whisking often, until polenta starts to thicken, about 5 minutes. Polenta mixture should still be slightly loose. Cover and cook for 30 minutes, whisking every 5 to 6 minutes. When polenta is too thick to whisk, stir with a wooden spoon. Polenta is done when texture is creamy and the individual grains are tender.
  • Turn off heat and gently stir 2 tablespoons butter into polenta until butter partially melts; mix 1/2 cup Parmigiano-Reggiano cheese into polenta until cheese has melted. Cover and let stand 5 minutes to thicken; stir and taste for salt before transferring to a serving bowl.
