JACK AND JILL'S ICED JASMINE TEA
Jack and Jill should have gone up the hill to fetch a pail of this iced tea. The light floral notes of jasmine and the sweetness of the simple syrup make a refreshing combination.

Steps:
- Bring 10 cups water to a boil in a large saucepan. Place tea bags in a large heatproof container. Add boiling water, and steep for 3 minutes. Remove tea bags. Let cool completely.
- Meanwhile, bring sugar and remaining 1/2 cup water to a boil in a small saucepan, stirring, until sugar dissolves. Let cool completely.
- Stir together tea and 3/4 cup simple syrup, plus more if needed, depending on desired sweetness. Refrigerate for at least 1 hour. Divide among ice-filled glasses.
JASMINE-TEA TANGERINEADE
The clink-clink of ice in an Arnold Palmer -- the drink that joins our two national summer refreshments, lemonade and iced tea -- can be heard anywhere from backyard barbecues to beach picnics. This not-so-standard rendition includes Jasmine-tea pearls, which bestow floral notes on sweet tangerine juice.

Steps:
- Bring water to a simmer in a small saucepan. Remove from heat, add jasmine pearls, and infuse for 2 1/2 minutes. Strain through a small sieve into a pitcher. Discard pearls. Let cool.
- Add syrup and tangerine juice to pitcher. Divide tangerineade among ice-filled glasses. (Or cover, and refrigerate for up to 3 days.)
COLD BREWED JASMINE ICED TEA
Rather than using hot water then throwing a bunch of ice over it, I prefer to make iced tea using the easy and effective method of cold brewing.

- In a large pitcher combine the tea and water. Mix the sugar or honey with about a cup of hot water so that it dissolves and will mix with the room temperature water. Add the sugar/ hot water mixture to the pitcher. Put the pitcher in the refrigerator (preferably before you go to sleep) and let the tea leaves soak until morning (9-12 hours). Add lemon to taste and then pour the tea through a strainer so as to catch the tea leaves before serving.

SPARKLING JASMINE ICED TEA
A sparkling iced tea, a change from the ordinary, with a sweet and floral flavour. Prep time includes cooling time.

Steps:
- Dissolve sugar in 3/4 cup of water, and boil gently until a syrup has formed. Set aside and let cool.
- Steep the jasmine tea in the remaining 3 1/4 cups of hot water for around 6 minutes.
- Strain out tea, and let cool.
- In a pitcher, combine syrup and tea.
- Stir or whisk until fully blended.
- Add sparkling water and cool thoroughly.
- Serve over ice at once.
- Can be served with cinnamon sticks, lemon slices or mint sprigs.
- Makes 1 quart of iced tea.
GREEN JASMINE AND ROSE TEA, ICED
This is another result of my tea experimentation's. With this one I really think that less is more and stopping while I was ahead. It's very light tasting with a bit of flower and an essence of cinnamon. If you have not used rose water before start with a 1/2 teaspoon and add more if you like.

Steps:
- Heat pure filtered water (for clear tea) with the tea bags and cinnamon just to boiling.
- Put a lid on the pan and remove from the heat and allow to steep for 20 minutes.
- Discard the tea bags.
- You may leave the cinnamon in the tea if you like, it will add more flavor if it remains in the tea.
- Add the Rose Water and stir.
- Cool to room temp or chill.
- Sweeten to your taste.
- Serve over ice (you can certainly drink it hot if you wish).
