RED CHARD AND CARAMELIZED ONIONS
This dish is good hot or at room temperature. I serve it as a side when the kids want mac and cheese for dinner. They do not eat it, but it makes me feel grown-up. It is very tasty.

- In a cast iron skillet, cook onions in olive oil over medium-high heat until they begin to brown. Stir in brown sugar, and continue cooking for a few minutes.
- When onions are brown and tender, stir in chard and olives. Cook until chard is slightly wilted. Stir in capers and salt, and continue cooking until chard is completely wilted, about 3 minutes. Season with black pepper and squeeze lemon over the top.

SEARED RED CHARD

- Make sure your greens are very dry before preparing recipe. Also, wash and chop them when you come in from market, then they are ready for you to cook up even quicker.
- Heat the oil in a large nonstick skillet over medium-high heat. Add onions and toss 2 minutes, then add chard in bunches and keep it moving as it wilts up a bit - you are just searing it up. The greens should remain crisp and crunchy. Wilting them all and searing them up should take no more than 3 to 4 minutes. Season the greens with nutmeg and salt and pepper, to taste. Douse the pan with a little vinegar and remove from heat. Toss to cook off vinegar and serve the greens hot.
SAUTEED SWISS CHARD WITH ONIONS

- Cut stems and center ribs from chard, discarding any tough portions, then cut stems and ribs crosswise into 2-inch pieces. Stack chard leaves and roll up lengthwise into cylinders. Cut cylinders crosswise to make 1-inch-wide strips.
- Heat oil and butter in a large heavy pot over medium heat until foam subsides, then cook onions and garlic with 1/2 teaspoon salt and 1/4 teaspoon pepper, covered, stirring occasionally, until onions begin to soften, about 8 minutes. Add chard stems and ribs, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook, covered, stirring occasionally, until stems are just tender, about 10 minutes. Add chard leaves in batches, stirring until wilted before adding next batch, and cook, covered, stirring occasionally, until tender, 4 to 6 minutes. Transfer with a slotted spoon to a serving bowl.
GARLICKY (OR NOT) CHARD AND WHITE BEANS WITH CARAMELIZED ONIONS
Caramelized onions are rich and flavourful, then stirred with white beans, letting the flavours meld. Garlic is sauteed with chard, then it is all tossed together. If you are making a few dishes, this is a great one to add because as it sits at room temperature, the flavours come together more and more, and it tastes great warm, hot, or cold.

- 1. Heat 1 tablespoon olive oil in a large saucepan, and cook onions on medium-high heat, until caramelized. This can take a couple hours if you have the time. You can sprinkle a bit of sugar or brown sugar on the onions to speed up the process. - 2. Once onions are caramelized, or to your liking, stir in the white beans. Let cook on low for about 5 minutes, stirring to coat beans with onions. Season with salt and pepper. Set aside.
- 3. In a large saucepan, heat remaining oil over medium heat. Add garlic (as much as you like) and stir for about 30 to 45 seconds, until fragrant. Add chard, and cook until wilted and stalks are soft, about 5 minutes.
- 4. Add beans into chard mixture and stir to combine all ingredients together. Season with salt and pepper. Serve immediately if you choose, but I like to let it rest about 10 minutes, or cover it for a bit if I am still preparing other dishes.

R-RATED ONIONS
It takes the better part of an hour to coax an onion's sugars from blonde to nutty brown. Make a big batch of caramelized onions once and save them to pull out when you want all that complex flavor without having spent all that time.

- Peel your onions and cut them in half through their stem ends-longways, if you will. Slice them thinly with the grain, following the line from root to stem rather than cutting the onion across its belly. This is actually important because slicing it the other way makes the path to silky onions a longer one.
- Once your onions are sliced, heat your skillet over medium-high heat and add the oil, then the onions and the salt. Let the onions sizzle for a couple minutes. Stir with a wooden spoon or a heatproof spatula and watch as they wilt for about 3 more minutes. At this point, reduce the heat to medium low. Put a lid on and step away for a few minutes. Give the onions a stir every now and then. You don't have to stand over it like risotto, but don't go for a walk around the block either. Caramelized bits will accumulate at the bottom and sides of the pan, and that's good. Just scrape them up and stir them in. A little color building as you go is okay, but don't rush to brown them. The point is to cook the onions gently, coaxing them through stages of raw, wilted, sweaty, soft, light brown, and finally deeply caramelized
- About 45 minutes in, remove the lid for the last time. They should be a light caramel color. Now, with the lid off, you will need to watch more closely and stir more frequently. At some point you may find that despite your best efforts some of the caramelized bits, verging on burnt, cling to the pan and threaten over all onion ruin. Do not fret! Just add a ½ cup or so of water and use its energy to help scrape up the stubborn but tasty film. Let the water cook out of course. When you're smiling over a soft, creamy, fragrant pile of mahogany onions, you're done.
- Note: R-Rated Onions will keep in the fridge for a week and in the freezer for 3 months.
SWISS CHARD AND CARAMELIZED ONION LASAGNA
This is not a traditional lasagna, but it's good! The sweetness of the onions is offset by the chard.

- Cook noodles just until tender. Cover with plastic wrap and set aside.
- In a large skillet, heat 1 tablespoon oil over medium heat.
- Add garlic and cook, stirring often, about 30 seconds.
- Add chard and cook, stirring often, until tender, 5 minutes.
- Transfer to a medium bowl and stir in ricotta. Season with salt and pepper and set aside.
- Wipe out skillet, heat remaining oil over medium heat.
- Add onions, cook and stir, until onions begin to brown all over.
- Sprinkle with sugar, cook and stir until deep amber in color, about 20 minutes.
- Remove from heat and splash with vinegar.
- In a medium saucepan, heat 2 1/2 cups milk over medium heat until steaming.
- Put flour in a small bowl and whisk in 1/2 cup milk until smooth; whisk into hot milk and continue to whisk until until sauce simmers and thickens. Cook and stir 1 minute longer.
- Stir in parmesan or Asiago cheese until melted and smooth. Season with salt and pepper.
- Preheat oven to 400 degrees.
- Lightly oil a 9x13-inch baking dish.
- Coat bottom of dish with 1/2 cup sauce.
- Line bottom with a single layer of noodles.
- Spread half the chard over noodles.
- Add another layer of noodles, arrange onions on top and season with salt and pepper.
- Spread another 1/2 cup of sauce over all.
- Add another layer of noodles, followed by remaining chard.
- Finish with remaining noodles and sauce. Sprinkle with remaining Parmesan.
- Tightly cover with foil sprayed with cooking spray.
- Bake 30 minutes.
- Uncover and bake 10-15 minutes, until light brown and bubbly.
- Let stand 10 minutes before serving.
