RED LENTIL AND BULGUR KUFTEH

I adapted this from an Armenian recipe that I found on the back of my packet of red lentils. Kufteh (Persian), köfte (Turkish), and kibbeh (Arabic) are round walnut size patties usually made from pounded meat (the word means "pounded") but sometimes made with fish or vegetable pulp, mixed with fine bulgur, herbs, and spices. Serve this vegetarian version as an appetizer or a side dish.

Steps:

  • Combine the lentils and water in a large saucepan, bring to a boil, skim off any foam, reduce the heat, add salt to taste and simmer 30 minutes, or until the lentils are soft and most but not all of the water is absorbed.
  • Place the bulgur in a bowl, mix with 1/4 teaspoon salt, and pour in the lentils with their liquid. Stir together, then cover and let sit for 30 minutes, until the bulgur is tender and has absorbed all the liquid.
  • Meanwhile, heat 2 tablespoons of the olive oil over medium-low heat and add the onion. Cook gently for 10 to 15 minutes, until golden and very tender. Stir often. Add the ground cumin and stir together for about 30 seconds, then stir into the lentils and bulgur.
  • Moisten your hands with water and knead the mixture in the bowl for 3 to 5 minutes. Each time it begins to stick to your hands, moisten them again, and this will moisten the mixture. If it seems very dry and crumbly, add a tablespoon of water. Stir in the remaining tablespoon of olive oil, 1/4 cup of the minced parsley, and for a spicier mixture add 1/4 to 1/2 teaspoon Aleppo pepper. Taste and adjust salt.
  • Moisten your hands and shape the mixture into walnut-size balls (about 1 inch). You'll have to moisten your hands again whenever the mixture begins to stick to them. Place on a platter and sprinkle with the remaining parsley. Garnish with scallions, romaine lettuce leaves and lemon wedges, and serve, or chill for several hours. Serve cold or at room temperature.

TURKISH RED LENTIL SOUP WITH MINT

This soup is divine and much like you will get at any authentic Turkish restaurant. It has dynamic flavors and a lovely mild heat. I make a big batch and eat it for lunch with crusty bread and salad the entire week. Optional: Serve with additional mint and lemon wedges.

Steps:

  • Heat the olive oil in a large pot over high heat. Cook and stir the onion in the hot oil until it begins to soften, about 2 minutes. Stir the garlic into the onion and cook another 2 minutes. Add the diced tomatoes to the onion mixture; continue to cook and stir another 10 minutes.
  • Pour in the chicken stock, red lentils, bulgur, rice, tomato paste, paprika, cayenne pepper, and mint to the tomato mixture; season with salt and black pepper. Bring the soup to a boil, reduce heat to medium-low, and cook at a simmer until the the lentils and rice are cooked through, about 30 minutes.
  • Pour the soup into a blender to no more than half full. Firmly hold the lid in place and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth; pour into your serving dish. Alternately, you can use a stick blender and puree the soup in cooking pot.

Steps:

  • In a medium saucepan, combine lentils and 5 cups water. Bring to a boil over high heat. Reduce to a simmer and cook, until lentils are soft, 15 to 20 minutes. Stir in bulghur and 1/2 cup oil. Season with herbamare. Cover and remove from heat. Let stand for 10 minutes.
  • Meanwhile, In a large skillet, heat 5 tablespoons oil over medium-high heat. Add onions, and cook, stirring occasionally, until brown, 15 to 20 minutes.
  • Place red pepper in a food processor and puree. In a small nonstick skillet, heat remaining tablespoon oil over medium heat. Add red pepper, and cook, stirring frequently, until puree becomes dry, 10 to 15 minutes.
  • Add onions and red-pepper puree to lentils, and stir to combine. Taste and adjust for seasoning. Transfer to serving dish. In a small bowl, stir together tomato, parsley, and scallion. Serve lentils garnished with tomato mixture.

  • Wash the lentils well and place them in a large pot along with 3 cups of water. I started with about 2 ½ cups of water and when the lentils were cooked and appeared a little on the drier side, I added about ½ more cup of hot water.
  • Cook the lentils in medium heat until they are soft and cooked. At this stage the lentils should still have a little water left in them that would allow the bulgur to cook.
  • Add the fine bulgur to the pot and mix well. Turn off the flame and cover the pot and let it sit for about 30 minutes until the bulgur cooks up in the leftover heat and absorbs the extra water. I did not have fine bulgur and had quick cooking bulgur in my pantry. So, I just ground it a bit in the blender and then used it in the recipe.
  • After 30 minutes, you will notice that the bulgur has soaked up all the liquids and also has cooked. Let this mixture cool down a bit.

  • For the salad, mix together all the ingredients and set aside until ready to serve. The salad should be very juicy.
  • In a large pot combine the lentils and the water. Bring to a boil over high heat. Reduce heat and simmer partially covered for about 15 to 20 minutes or until the lentils are very tender. The mixture will still have a lot of liquid. Season with 1 ½ teaspoons kosher salt.
  • Meanwhile, heat the olive oil in a skillet over medium heat and add the onion. Cook until soft and translucent, about 7 minutes, and remove from heat.
  • To the pot of lentils, add the bulgur and give it a stir. Then add the cooked onions. Mix, cover, and set aside for about 20 to 25 minutes or more until the bulgur wheat has absorbed the excess liquid and is nice and tender. If the mixture still has a crunch, cover it and let it continue to absorb until it is completely soft.
