LEMON CAKE WITH FRUIT
Steps:
- Place a rack in middle of oven and preheat to 350°F. Butter and flour a 13x9" baking pan. Whisk baking powder, salt, and 2 cups flour in a medium bowl. Finely grate lemon zest into another medium bowl. Slice lemon in half; set aside. Add 1 2/3 cups granulated sugar to zest and work with your fingers until mixture is fragrant and looks like wet sand, about 1 minute.
- Using an electric mixer on medium speed, beat 1 cup butter in a large bowl until smooth, about 20 seconds. Add sugar mixture, increase speed to medium-high, and beat until very light and fluffy, about 5 minutes. Reduce speed to medium and add eggs one at a time, beating well between additions; mix in egg yolk. Reduce speed to low and gradually add dry ingredients. Beat just until incorporated, then add brandy and beat just until smooth. Fold batter a few times with a rubber spatula; scrape into prepared pan and smooth top. Scatter fruit over (do not press down). Squeeze a reserved lemon half over fruit (save other half for another use) and sprinkle with remaining 3 Tbsp. granulated sugar.
- Bake cake until sides are golden brown and top is golden, 55-65 minutes. Let cool; cut into squares. Serve dusted with powdered sugar.
- Do Ahead
- Cake can be baked 2 days ahead. Store tightly wrapped at room temperature.
RICH LEMON CAKE
This cake is supposed to be freeze-able, although it never lasts long enough in our house to get to the freezer. This is one of my most requested items when I ask "what can I bring?"

Steps:
- Preheat the oven to 325 degrees and grease and flour a 9-inch tube pan or Bundt cake pan.
- Beat the butter and sugar in a large bowl until light and fluffy.
- Beat in the eggs one at a time, mixing well until they are incorporated.
- Mix in the lemon zest, baking powder, and almond extract.
- Add the milk and flour in alternating doses, starting and ending with the milk, and mixing very well after each addition.
- Pour the batter into the prepared pan.
- Bake for 1 hour, or until the cake is browned and the sides of the cake have pulled away slightly from the sides of the pan.
- While the cake is baking, mix together the lemon juice and powdered sugar until smooth.
- Set aside.
- Remove the cake from the oven and poke small holes into the top of the cake using a wooden or metal skewer or cake tester.
- Pour about 3/4 of the glaze over the top of the cake.
- Cool the cake completely in the pan.
- Remove the cake from the pan, invert, and place on a serving plate or waxed paper if freezing.
- Pour the remaining glaze over the top of the unglazed part of the cake.
- Let sit at room temperature until the glaze dries.
- Cover and store at room temperature for up to 48 hours, or tightly seal in a freezer proof container for up to 3 months.
- Serve at room temperature or chilled.
- Thawing Directions: Simply thaw overnight at room temperature.

LEMON AND BERRY ICEBOX CAKE

Steps:
- Place the cream, powdered sugar and vanilla in a large bowl and, using a hand mixer, whip until stiff.
- Spoon one-third of the whipped cream mixture into a 10-inch round springform pan, smoothing evenly with a spatula. Top with half of the lemon cookies. Stir the raspberry preserves and disperse as evenly as possible over the cookies. Sprinkle over half of the raspberries, then top with another third of the whipped cream, followed by the remaining cookies. Stir the blueberry preserves and distribute as evenly as possible over the cookies. Sprinkle over half of the blueberries, then top with the remaining whipped cream and spread evenly. Garnish with the remaining fresh berries. Cover and refrigerate for 6 hours.
- Run a paring knife around the springform pan and release the wall of the pan from around the cake, leaving the cake on the bottom of the pan. Transfer to a serving platter, top with the mint leaves and slice.
JO'S FRESH LEMON CAKE
Light, fresh lemony cake. Not too sweet, perfect for Spring. You can add 1/4 c. finely chopped walnuts when you add the zest - we prefer it without.

- Preheat oven to 350 degrees F.
- Cream together the butter and 1 cup of sugar in a bowl until the mixtue is light and fluffy, then beat in the eggs 1 at a time, beating until the mixture is smooth. In another bowl, combine flour, baking powder and salt, mix. Stir the mixture into the egg mixture alternately with the milk. Stir until the mixture is just combined. Stir in 2 t. zest and if you are adding nuts mix them in now. Pour batter into 9X5 loaf pan that has been buttered. Bake in a 350 Degree F oven for 1 hour or until a tester comes out clean. When the cake has baked, transfer the cake to a wire rack and with a long toothpick poke it all over. In a small bowl stir together the ramaining 1/4 cup sugar and remaining zest, pour this mixture over the hot cake and let it cool.

- In a large bowl, combine the first five ingredients. In another bowl, whisk egg, oil and buttermilk. Add to the dry ingredients and stir well. Slowly add the coffee until combined (batter will be thin)., Pour into a greased 13x9-in. baking pan. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack., For frosting, melt butter in a small saucepan. Add the sugar and milk; bring to a boil. Reduce heat; cook and stir for 2-3 minutes. Remove from the heat. Add the melted chips and stir until blended. Pour over cake, spreading evenly. Drizzle with caramel topping and sprinkle with pecans.
