Yield 2 (10-inch) crusts

Steps:
- Dice the butter and return it to the refrigerator while you prepare the flour mixture. Place the flour, salt, and sugar in the bowl of a food processor fitted with a steel blade and pulse a few times to mix. Add the butter and shortening. Pulse 8 to 12 times, until the butter is the size of peas. With the machine running, pour the ice water down the feed tube and pulse the machine until the dough begins to form a ball. Dump out on a floured board and roll into a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
- Cut the dough in half. Roll each piece on a well-floured board into a circle, rolling from the center to the edge, turning and flouring the dough to make sure it doesn't stick to the board. Fold the dough in half, place in a pie pan, and unfold to fit the pan. Repeat with the top crust.

Steps:
- In a food processor, briefly pulse flour, salt, and sugar. Add butter; pulse until mixture resembles coarse meal, with a few pea-size pieces of butter remaining. Sprinkle with 2 tablespoons ice water. Pulse until dough is crumbly but holds together when squeezed (if necessary, add up to 2 tablespoons water, 1 tablespoon at a time). Dont overmix.
- Turn dough out onto a large piece of plastic wrap. Fold plastic over dough; press to shape into a 1-inch-thick disk. Refrigerate until firm, at least 1 hour (or up to 3 days).
- On a floured piece of parchment paper, roll dough to a 14-inch round with a floured rolling pin. Wrap dough around rolling pin, discarding paper; unroll over a 9-inch pie plate (opposite). Gently fit into bottom and up sides of plate (do not stretch dough).
- Using kitchen shears, trim dough to a 1-inch overhang. Fold under itself to form a rim, and press to seal. Using thumb and forefinger, crimp rim of crust. Refrigerate until ready to use, up to 1 day.

Steps:
- Process the flour and salt in a food processor for 20 seconds.
- Distribute the butter evenly over the flour and process until the mixture resembles coarse meal, 15-20 seconds.
- With the food processor running, pour the ice water in a steady stream through the feed tube and process just until the dough comes together.
- Knead the dough for several turns on a lightly floured surface to bring it together.
- Shape the dough into a thick disks (or 2 for a double crust), wrap in plastic and refrigerate for at least an hour.
- To roll out the dough, place the chilled dough between 2 pieces of waxed paper (helps tremendously in rolling out!) and roll it out to a circle 2 inches bigger than the size of the pie pan.
- Fit the dough into a 9-inch (greased) pie plate and trim the edges.
- Keep the crust in the refrigerator until ready to fill.
- If prebaking the crust, refrigerate it for at least 30 minutes or stick in the freezer before baking (I always freeze it).

Steps:
- Divide the butter into two parts, about two thirds to one third.
- Cut the butter into small cubes, about 1/2 inch.
- Cover butter with plastic wrap.
- Refrigerate the larger amount and freeze the smaller for a minimum of 30 minutes.
- Place the flour, salt, and baking powder in a reclosable gallon-size freezer bag and freeze for a minimum of 30 minutes.
- Place the flour mixture in a food processor with the metal blade and process for a few seconds to combine.
- Set the bag aside.
- Add the larger amount of butter cubes to the flour and process for about 20 seconds or until the mixture resembles coarse meal.
- Add the remaining frozen butter cubes and pulse until all of the frozen butter is the size of peas.
- Add the lowest amount of the ice water and the vinegar and pulse 6 times.
- Pinch a small amount of the mixture together between your fingers.
- If it does not hold together, add half the remaining water and pulse 3 times.
- Try pinching the mixture again.
- If necessary, add the remaining water, pulsing 3 times to incorporate it.
- The mixture will be in particles and will not hold together without being pinched.
- Dump the mixture back into the bag and work it from the outside of the bag gently until it comes together into a ball.
- Refrigerate if the butter starts to melt (the heat from your hands will melt the butter) Wrap dough ball with plastic wrap and refrigerate for at least one hour before rolling (preferably overnight).
- Don't skip this step, the gluten must relax for proper rolling!
- You can refrigerate the dough up to 2 days, freeze up to 3 months (thaw in the refrigerator overnight).
- Allow the dough to sit at room temperature for 10 minutes then roll the dough to about 1/8" thickness on a cool, lightly floured surface.
- Work the dough from the center out, turning over occasionally.
- Add the minimum amount of flour as too much will produce a tough dough.
- Once again if the dough gets too warm allow it to rest in the fridge till cool.
- Fold the rolled out crust in quarters and gently place into pan, unfold and tuck gently into pan, trim excess (leave about 1 inch overhang to form edge).

BASIC CRUMB CRUST
Crumb crusts are even easier than press-in cookie crusts. You don't even have to bake them-see the variation at right. The crumbs can be made out of cookies, crackers, cereal, pretzels, even potato chips! Sometimes sugar or other flavorings are added to the crumbs (here the sugar is optional), and then fat (usually melted butter) is added to bind the mixture to form a crust. The crumbs can be coarse, for a crunchier texture, or finer, for a smoother texture. Different base ingredients will behave differently, so the first time I test a crumb crust with a new ingredient, I always have a little extra on hand in case I need more crumbs, or a little extra melted butter, should it be needed. Crumb crusts don't generally require chilling before baking, but you can refrigerate for up to 1 hour or freeze for 15 minutes, if desired, to firm them up before baking.

Yield One 9-inch / 23-cm pie
Number Of Ingredients 4
Steps:
- In a medium bowl, stir the crumbs, sugar, if using, and salt together to combine. Stir in the melted butter and mix to combine. The crust should easily hold together in clumps when you press it together between your fingers (if it doesn't, add a little more melted butter, 14 g / 1 tablespoon at a time, until it does).
- Press the crust evenly into the bottom and up the sides of an ungreased 9-inch / 23-cm pie plate: First make an even layer in the bottom of the pan, then press the rest of the crumbs up the sides. Sometimes I use the bottom of a small dry measuring cup to help press the crust in evenly; this is especially helpful in the corners of the pan.
- Preheat the oven to 350°F / 175°C (don't use a Baking Steel/stone when baking a crumb crust). To parbake the crust, bake (no docking or pie weights required) for 10 to 12 minutes, until it begins to lightly brown at the edges (or, for darker crumbs, smells lightly toasty). To blind-bake the crust, bake for 15 to 17 minutes, until it is deeply golden brown and/or smells toasty.
- Do Ahead: This crust is best used the day it's made but can be parbaked or blind-baked up to 1 day ahead and stored at room temperature.
- Variations:
- Mini (Two-Bite) Crumb Crusts: Grease the cavities of a mini muffin pan with nonstick spray. Crumble or spoon 15 g / 1 tablespoon of the prepared crust mixture into each of the cavities. Press each portion with your fingers to be flush against the base and up the sides, taking care to press evenly all the way around. Chill the pan in the refrigerator for 15 to 20 minutes, before baking at 350°F / 175°C for 10 to 12 minutes. Cool completely, then use a small offset spatula to unmold the shells before filling. Alternatively, the mini crusts can be frozen for 2 hours after assembling before using a small offset spatula to unmold the pie shells. Keep frozen until ready to fill.
- Unbaked Crumb Crust: For cream, chiffon, and cold-set pies, the crust doesn't need to be baked at all! After lining the pan with the crust, freeze it for at least 15 minutes before adding the filling.
- Pie Pep Talk
- What to do when a crumb crust shrinks: One of the most common problems I've seen with crumb crusts is that they can shrink or slump down the side of the pie plate when the crust is parbaked. Luckily, this is easily corrected. If you notice that your crust is starting to shrink, remove it from the oven and use a crust tamper or a small metal measuring cup to press the crust that slumped down back up the sides of the pie plate. If this happens consistently when you make crumb crusts, try tamping them down more aggressively and/or refrigerating for 30 minutes before baking.

Steps:
- Combine first 5 ingredients in the *magical* pie dough transformer (food processor).
- PULSE these ingredients together only slightly. Too much pulsing causes excess friction which melts the butter and creates a dense, yucky pie dough.
- Gradually add the ice cold water while pulsing. Dough should just start to come together but will still seem somewhat dry. Pea-sized butter chunks are what makes the world go 'round.
- Pour/dump dough out, combine and knead gently & slightly, just to bring dough together.
- Divide into two rounds & freeze/chill until ready to use.
- Whenever possible, thaw dough to room temp., but you can cut frozen dough into large chunks & microwave CAREFULLY.
- Remember to declare your love to the dough -- this always makes the best pies.

GRAHAM KERR'S BASIC PIE CRUST
While browsing a used bookstore with Twissis, I found a little gem called "Simply Splenda Cookbook" by Graham Kerr (AKA The Galloping Gourmet). This book is chock full of low calorie/low fat dishes that he devised to accomodate his wife's diabetic diet. His description " This pie crust is almost foolproof. It has a good flavor, is crisp yet tender and pairs beautifully with crusted dishes. This recipe makes two 9 inch crusts."
