  • Preheat oven to 350°. In a large skillet, cook and crumble sausage over medium heat until no longer pink, 4-6 minutes. Stir in tomatoes., Coat a 9-in. deep-dish pie plate with cooking spray. Line pie plate with half the tortillas. Sprinkle with half of each of the following: sausage mixture, cheeses and green onions. Steps:

  • Brown sausage in a skillet, using a wooden spoon to break the meat apart while cooking. Turn off the heat and stir in the salsa. Combine and set aside. In a bowl, whisk together the eggs, milk, salt, pepper and mustard powder, set aside. Slice the tortillas in half. Spray a casserole dish with cooking spray, place the straight end of the tortilla (4 pieces) towards the outside of the dish. Sprinkle with some cheese, then half of the sausage mixture, a little more cheese and repeat with an additional layer beginning with the tortillas and the end with a final layer of tortillas on top (make sure to save a little cheese for the top). Pour the egg mixture over the entire thing. Using your hands press the top layer down. Bake in a 350˚F oven for 35 minutes. Remove and top with remaining cheese and bake an additional 5-10 minutes or until cheese is bubbly.

  • Cut the bread into 1-inch cubes and spread in the bottom of a greased 9- by 13- by 2- inch casserole dish.
  • In a medium skillet, brown the sausage over medium heat until fully cooked and no longer pink. Remove the sausage with a slotted spoon to drain the fat. Spread the cooked sausage over the bread and top with the cheese. Then stir together the, half-and-half, dry mustard, salt and eggs. Pour this mixture over the cheese.   • Spray ovenproof 10-or 12-inch cast-iron skillet with cooking spray.
  • In large bowl, beat eggs, milk and taco seasoning (from dinner kit) with whisk until well blended.
  • In a medium bowl, mix smoked sausage, ripe olives, chopped green chiles and 3/4 cup of the cheese.
