SHE-DEVILED EGGS
I like biting into a deviled egg and it bites me back! These measurements are approximate. I actually use more cayenne pepper and horseradish than here, but I needed to get a handle on the amounts for sharing my recipe, and these proportions are good. I have not included the cooking time for boiling the eggs.

Steps:
- Cut eggs in half lengthwise, carefully removing yolks into a medium-sized bowl,(I use a Pyrex 2-qt glass bowl) and placing the whites onto a serving plate.
- Mash the yolks in the bowl with a fork until they look like coarse cornmeal.
- Mix in dry ingredients first: white pepper, cayenne, salt and ground mustard; next mix in wet ingredients: mayonnaise, relish, yellow mustard and horseradish.
- Stir until well blended. Adjust seasonings to taste; adjust amount of wet ingredients for texture, if necessary.
- Fill egg white halves with yolk mixture, using a teaspoon.
- Sprinkle with sweet paprika and press a single pimento-stuffed green olive into the yolk to make them festive!

KATIE'S DEVILED EGGS
Steps:
- Fill a large saucepan with water and bring to a boil. With a ladle, slowly lower the eggs into the water, one by one. Reduce the heat to a low boil and cook for 10 minutes. Drain. When the eggs are cool enough to handle, remove the shells.
- Slice each egg in half lengthwise. Remove the yolks and place them in a food processor. Arrange the whites cut-side up on a serving platter. To the food processor, add the mayo, mustard, salt and pepper. Process until well blended and smooth, then transfer to a resealable plastic bag. With scissors, snip off a bottom corner from the bag. Using the bag like a pastry bag, pipe the yolk mixture into the egg whites. Sprinkle with paprika. Cover loosely and chill until ready to serve.

- Slice eggs in half lengthwise and remove yolks. Place yolks in a medium bowl and set whites aside.
- Mash yolks with a fork. Add mayonnaise, relish, Dijon, yellow mustard, vinegar, salt, and pepper; stir until well combined and smooth. Transfer to a large zip-top bag.
- Arrange egg whites on a tray. Snip off the bottom corner of the zip-top bag. Fill each white with about 1 1/2 to 2 teaspoons filling. Sprinkle with paprika.

- Prepare a grill for medium-high heat.
- Slice each hard-boiled egg in half lengthwise. Scoop the egg yolks into a medium bowl and mash with a fork. Add the mayonnaise, mustard, adobo sauce and paprika and stir together until completely combined; season with salt and pepper. Transfer the mixture to a piping bag and refrigerate until ready to use.
- Lightly brush the egg whites on the cut sides with mayonnaise. Put the eggs cut-side down in a grill basket; close and secure the basket. Place the basket directly over the hot coals and cook until grill marks appear on the egg whites, 30 seconds to a minute. Transfer the whites to a serving plate and refrigerate until ready to serve.
- When ready to serve, pipe some of the yolk mixture into each egg white and dust with a little paprika.

Inspired by my hubby's latest diet. His own personal idea of blending south Beach and low fat. Thus I was tasked with developing a deviled egg recipe that didn't overdo it on the mayo and was still low-carb. These are really yummy!

- Peel hard-boiled eggs, halve and remove yolks to a bowl.
- Add remaining ingredients except for paprika.
- Blend thoroughly. I use an immersion stick blender. You could use that or hand-held electric mixer. But you want something to make it creamy and take away texture of cottage cheese.
- Fill egg halves and dust with paprika. Enjoy!
