Steps:

  • Put the fruit in the bottom of a cocktail shaker and bruise it with a muddler or the end of a bar spoon to release some of the juice. Add the sherry and sugar syrup if using.
  • Fill the shaker with ice and shake hard. This will extract more juices from the fruit and dilute the drink.
  • Strain into a highball glass, filled with fresh ice and garnish with a slice of orange or lemon and a piece of pineapple.

Steps:

  • Put 750g frozen summer fruit in a pan with 200g caster sugar and 1 litre water and bring to a gentle simmer.
  • Cook for 2 mins, then scoop out 6 tbsp fruit and 150ml juice. Now carry on cooking the fruit in the pan for 5 mins.
  • Meanwhile, soak 9 sheets leaf gelatine in cold water to soften it. If you have a hand blender, blitz the cooked fruit or mash with a potato masher, then strain through a sieve into a large bowl and push through the pulp so just the skins and seeds are left.
  • Squeeze excess water from the gelatine, add to the hot fruit syrup and stir to dissolve. Cool, then chill until on the point of almost setting.
  • Make the custard according to pack instructions with 75g custard powder, 1.2l milk and 50g caster sugar to create a really thick custard. Cover the surface with baking paper while it cools a little.
  • Pile 1½ - 2 cubed madeira cakes into a trifle bowl, spoon over the reserved juice and berries, then 4 tbsp sherry or cassis.
  • Pour over a thick layer of custard, pushing it against the side of the dish to seal in the cake below. Leave to cool and set with a skin - this makes a barrier for the jelly.
  • When the custard is cold and set, and the jelly is on the point of setting, spoon the jelly over the custard and chill until ready to complete.
  • Whip 300 - 450ml double cream with 1 tsp vanilla extract and 2 tbsp icing sugar until just holding its shape, then spoon round the bowl over the set jelly. Scatter with 2 crushed amaretti biscuits and chill until ready to serve.

Steps:

  • Spiced Syrup:
  • Bring raw sugar, allspice, cloves, cinnamon, and 1 1/3 cups water to a simmer in a small saucepan over medium heat. Remove from heat and let spices steep 10 minutes. Strain through a fine-mesh sieve into a small measuring glass or bowl (you'll have 1 1/2-1 3/4 cups syrup); let syrup cool. Cover and chill until cold, at least 30 minutes.
  • Assembly:
  • Stir spiced syrup, sherry, vermouth, cranberry juice, and lemon juice in a large pot or bowl.
  • If serving from a dispenser with a spigot, line sides at the bottom with a row of orange wheels and fill one-quarter full with crushed ice to hold orange wheels against sides. Create another layer of orange wheels and add just enough ice to hold them against sides. Repeat until dispenser is full. Pour punch over ice and top with fir sprigs, if desired. Serve punch in ice-filled glasses garnished with cranberries, cinnamon sticks, and orange wheels.
  • If serving in a punch bowl, add 4 cups ice cubes to punch and stir until very cold, about 1 minute. Remove ice with a slotted spoon. Ladle into ice-filled glasses garnished with cranberries, cinnamon sticks, and orange wheels.
  • Do Ahead
  • Syrup can be made 1 month ahead. Keep chilled. Punch (stirring in ice if serving in a punch bowl) can be made 8 hours ahead. Cover and chill.

Spiced Syrup:
1 1/3 cups raw sugar
3 tablespoons allspice berries, cracked
2 tablespoons whole cloves
2 (3-inch) cinnamon sticks
Assembly:
1 (750 ml) bottle amontillado sherry (preferably Lustau)
1 (750 ml) bottle dry vermouth (preferably Dolin)
1 1/2 cups plus 1 tablespoon cranberry juice cocktail
1 1/2 cups plus 1 tablespoon fresh lemon juice
Blood orange or navel orange wheels, fir sprigs (optional), cranberries, and cinnamon sticks (for serving)

13 SHERRY COCKTAILS (CLASSIC DRINKS) - INSANELY GOOD

From insanelygoodrecipes.com
5/5 (1)
Published Jan 6, 2023
Category Beverages, Recipe Roundup
  • Sherry Cobbler. The sherry cobbler is an old cocktail that originated in the early 1800s and popularized the idea of drinking through a straw. With a heavy pour of amaretto sherry, a dash of simple syrup, and a few orange slices, it’s sweet and a little citrusy.
  • Rebujito. Move over, Sangria. While sangria is a popular Spanish drink across the globe, the rebujito is picking up steam. It’s a festival drink popular at the running of the bulls.
  • Fun and Fruity Sherry Cobbler Cocktail. The sherry cobbler cocktail is a classic, and this fun and fruity version of the classic is lighter than the original.
  • Sherry Old-Fashioned. Old-fashioneds incorporate rich bourbon, and this twist on a classic earns a nutty and fruity finish with sherry. This cocktail recipe adds a dash of sherry to boost sweetness.
  • Flor de Jerez. The flor de jerez is a tart cocktail perfect for sipping slowly from a fancy glass. It’s a complex cocktail that is potent (hence the slow sipping), tart, and slightly sweet.
  • Sherry Sour. I love this sherry sour because it’s light and refreshing and goes down easy. (Maybe a little too easy.) This classic sour cocktail recipe incorporates an egg white for that signature frothy finish, so get those cocktail shakers ready!
  • Pedrino Sherry & Tonic Spritz. Are you looking for something light and refreshing? This Pedrino sherry and tonic spritz is the perfect cocktail to sip poolside.
  • Adonis. Yes, this cocktail is named after that super handsome Greek god, and for a very good reason. This dark and brooding cocktail has all the characteristics of a charismatic Greek god.
  • Sherry and Rum Cocktail. If rum cocktails are your absolute favorite, you must try this sherry and rum cocktail. Rum is a dark and flavorful spirit that pairs well with bright, fruity notes of sherry wine.
  • Coronation Cocktail. The coronation cocktail is a classic for a very good reason. It’s nutty, fruity, tart, and just a little sweet. It’s the perfect cocktail for happy hour and so delicious that it demands dusting off those fancy cocktail glasses.
